BAKED POTATOES WITH TUNA AND CHEESE
I'm not a tuna salad lover so I wasn't sure about this recipe when I first ran across it but since there's no mayo, it's not anything like tuna salad -- at least not to me. Cooking and prep time does NOT include the time for baking the potatoes since the time varies greatly depending on whether you use the oven, microwave or crock pot for baking the potatoes initially.

Steps:
- Bake potatoes and then cut each in half lengthwise.
- Scoop out the inside of the potatoes keeping the skins in tact.
- In a separate bowl, mash the potato insides with milk and butter. Feel free to adjust the milk and butter to your liking.
- Add tuna, salt, onions and cheese to the potato mixture and mix well.
- Pile into the potato skins and add extra cheese on top if you'd like.
- Bake in a 400 degree oven for about 15 minutes or until warmed through.
CHEESY TUNA POTATO CASSEROLE
I started out making the tuna casserole I usually make. I thought I had all the needed ingredients. I realized I only had 1 can of cream of celery soup, but had a can of cream of potato, so I substituted and changed the recipe. My husband, and even my 18 year old son, raved about the changes. This is now my preferred recipe, all discovered by accident.

Steps:
- Boil egg noodles in water for approximately 7 minutes (I boil until slightly undercooked so they won't get soggy after being in oven.) Combine tuna, mayonnaise, Miracle Whip, onions and noodles in 2 quart ovenproof casserole dish.
- Melt cheese in microwave, stirring occasionally.
- Whisk both cans of soup with the milk until blended.
- Add melted cheese and whisk until well blended.
- Add to noodle mixture.
- Sprinkle liberally with bread crumbs to taste.
- Bake, uncovered, at 425 degrees for 30 minutes.

TUNA MELT POTATO WEDGES

- Heat oven to 220C/fan 200C/gas 6. Tip the potato wedges onto a large baking sheet, ensuring they sit in a single layer. Bake for 10 mins. Meanwhile, mix together the mayonnaise, shallot or onion, cheese, tuna and parsley.
- Tip the potato wedges into four individual or one large heatproof serving dish and spoon over the tuna mixture. Pop back in the oven for a further 12 mins, until bubbling.

Steps:
- Scrub potatoes, prick with fork, bake in 400 degree oven for 1 hour.
- When cool enough to handle, cut potatoes in half lengthwise, scoop out potato pulp into large bowl, leaving shells intact.
- Combine pulp with mayo, cheddar, green pepper, scallions and tuna. Mix well.
- Stuff potato shells.
- Bake at 400 for 10 minutes.
- (Can also drizzle a little melted butter over the top and pass under the broiler until sizzling and browned, but this is considered rather decadent. You decide.).

POTATOES & TUNA CASSEROLE-- NO PASTA ADDED
My SIL makes this quite often with a side dish of cooked rice and steamed broccoli. I kind of change it to suit my taste and believe it comes out perfect. Everyone finds it very tasty and without the usual pasta. I usually make it with side dish of green peas and spanish rice or simply a side salad.

Steps:
- Butter lightly an oven pan 9X13 size.
- Heat the oven at: 375°F.
- Layer the bottom of pan with first layer of raw, sliced potatoes.
- Add layer of sliced, raw onions and first tin of tuna, carefully spreading the tuna evenly all over.
- Add a second layer of sliced, raw potatoes, then add last of the onions.
- Salt & pepper in between.
- Add the rest of the second can of tuna evenly.
- Cover with last row of potatoes.
- In a separate bowl, mix together the celery soup with milk, mixing well.
- Pour the soup mixture evenly over dish; cover all potatoes.
- Cover tightly with foil or Dutch oven cover.
- Bake for 1 hour at 375°F in center of oven.
- Uncover, and bake 15 minutes more at 350°F and the sauce/gravy will become just the right thickness--not too thick and not too watery.

CHEESY TUNA CASSEROLE
I got this recipe from an old Pillsbury book. They had the lighter, healthier version vs the older higher fat version. I opted for the higher fat version....its comfort food, don't mess with it! (if you want to make the ligher version just substitue low fat milk, reduced fat cheese and 98% fat free soup)

- Cook macaroni to desired doneness, drain.
- Meanwhile, heat oven to 350°F Spray casserole with nonstick cooking spray. In large bowl, combine all remaining casserole ingredients; stir to combine.
- Add cooked macaroni, stir gently to mix. Pour mixture into casserole. Sprinkle with crushed potato chips.
- Bake at 350F for 25 to 35 minutes.
