CHEESY TOMATO BRUSCHETTA
These are very simple and super delicious appetizers. Your guests will love them so make a double batch.

Steps:
- In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, onion powder, salt, and pepper. Allow the mixture to sit for at least 10 minutes.
- Preheat the oven on broiler setting.
- Cut the baguette into 3/4-inch diagonal slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.
- Divide the tomato mixture evenly over the baguette slices. Top the slices with Italian cheese blend.
- Broil for 3-4 minutes, or until the cheese is melted. Enjoy!
CHEESY TOMATO BRUSCHETTA
This easy to make cheesy tomato bruschetta is a hit at parties. Just use fresh basil, tomatoes, garlic, and olive oil plus some mozzarella cheese on top of toasted bread. Yum!

Steps:
- Rinse the tomatoes and basil.
- Pat dry the basil.
- Put the garlic through a garlic press and add it to a small dish with about two teaspoons of balsamic vinegar.
- Chop the fresh tomatoes and basil into small pieces.
- Put the chopped tomatoes, basil, garlic (with balsamic vinegar) and the olive oil into a bowl and stir everything together.
- Cut the mozzarella cheese into small pieces.
- Toast the bread.
- Spoon the bruschetta mix onto the toasted bread and top with the mozzarella cheese.
CHEESE TOMATO BRUSCHETTA चीज ब्रूसकेता
Steps:
- Combine tomato, salt, pepper, honey, olive oil in a bowl and mix. Keep aside.
- Now cut the French baguette in slices and toast them lightly.
- Portion out the tomato mixture on each bread.
- Roughly tear some basil leaves and place on each bread.
- Lastly top it off with cheddar cheese shavings.
- Serve immediately.
BLACK PEPPER-BASIL FARMER'S CHEESE BRUSCHETTA WITH TOMATO

- Place cheese, basil, and lemon zest in a food processor and process until smooth. Add 1 teaspoon salt and 1/2 teaspoon pepper and pulse 2 times to incorporate.
- Heat grill to high. Brush bread with olive oil, season with salt and pepper, and rub with garlic cloves. Grill bread on each side for 1 minute or until slightly charred. Spread each slice with some of the farmer's cheese mixture and top with tomato and more cracked black pepper.

Steps:
- Preheat broiler.
- Slice your bread, if you have not done so already; place them on a baking sheet which you have lined with aluminum foil (just in case something falls off and tries to burn).
- Place the bread under the broiler and toast until light golden; remove.
- Turn the bread over, place the bread under the broiler and toast just until the bread firms slightly but not golden yet; remove.
- Brush the lighter side with olive oil (you may decline this if you are using tomatoes packed in oil, but it's your choice).
- On top of that lay out some basil leaves to cover the top of the bread.
- Mince the sun-dried tomatoes and sprinkle on top of the basil; I use regular dried on mine that are still pliant like raisins; if yours are hard you may need to have soaked them in warm water in advance and squeezed dry then mince; but you can do that now, no biggie.
- On top of the tomatoes sprinkle a generous amount of goat cheese and tap down so it doesn't fall off.
- If you like you can add a pinch of sea salt but I didn't.
- Place the bruschettas under the broiler and toast just until the cheese starts to soften and the edges get nice and brown; serve.
