CHEESY CHICKEN SPAGHETTI CASSEROLE
This is such a yummily scrumptious cheesy casserole dish! Perfect for busy weeknight or weekend meals, and any leftovers freeze/reheat well for future meals. Take this casserole along for your next office or backyard get together, and be prepared for recipe requests. ENJOY!! :)

Steps:
- Generously butter a casserole dish; now place a few tablespoonfuls of spaghetti sauce into dish and spread evenly across base.
- In a saucepan over medium heat stir together the remaining spaghetti sauce, undrained tomatoes, red wine, Italian seasonings, and frozen baby spinach; cook until hot and bubbly.
- Add the shredded cooked chicken breast into the sauce mixture and heat through (add about 1/2 to 1 cup of water, if sauce mixture seems too thick).
- Turn off the heat; stir about half of the shredded cheddar cheese (1 cup) into the sauce mixture, stirring well to combine.
- Into the prepared casserole dish evenly spread the freshly cooked spaghetti noodles, and top with sauce mixture taking care to spread evenly over noodles to coat.
- Sprinkle evenly with Parmesan and remaining cheddar cheese.
- Bake in preheated 350F degree oven for 30 minutes, until casserole is hot and cheese is melted. Remove from oven and let cool for about 15 minutes before serving. Good served with a sprinkling of chopped fresh parsley.

CHEESY LAYERED BAKED SPAGHETTI CASSEROLE
I developed this recipe it's a great casserole, since I really don't bother to measure for this recipe, the exact amounts are not really required! The olives are only optional, I like to add them in, it brings out so much extra flavor! Of coarse you can make this recipe using your own favorite pasta sauce if desired! This can be made using all ground beef if desired. I strongly suggest to make the tomato/beef sauce a day or up to 2 days in advance and refrigerate to blend the flavors! For a smaller casserole reduce the spagetti amount and bake in a 13 x 9-inch baking dish, just make certain to cook enough spaghetti for two layers, use as much pasta as you want, a little or a lot! If you have any leftover sauce you can freeze it for the next time! Prep time does not include making the meat sauce.

- Grease a lasagna baking pan.
- Place the cooked spaghetti in a bowl and toss with salt, pepper, eggs and 3/4 cup grated Parmesan cheese; set aside.
- For the sauce (this sauce is better if made a day in advance!).
- Brown the ground beef and pork in a medium heavy pot along with the dried oregano, basil, chili flakes, onion, one green bell pepper, jalapeno pepper, garlic and mushrooms; cook until the beef and pork are browned and the veggies are tender (about 12-15 minutes) drain fat, then add in the olives and crushed tomatoes; simmer uncovered for about 45 minutes.
- Season sauce with salt and pepper to taste.
- At this point you can cool to room temperature then refrigerate for up to 2 days.
- Place half of the spaghetti in the bottom of the baking dish/pan.
- Top with the half of the meat sauce, then about 1-1/2 cups mozza cheese.
- Repeat layers once ending up with the mozza cheese on top.
- Sprinkle a chopped green bell pepper on top of the mozza cheese.
- In a bowl mix together the soup with milk or water, then drizzle on top of the casserole.
- Top/sprinkle with about 1/3 cup (or more or less) Parmesan cheese (the pan will be full so I advise you to place the pan on a baking sheet to catch spills).
- Bake in a 375 degree oven for 35-40 minutes or until bubbly (if desired sprinkle some mozza cheese on top the last 5 minutes of baking).

- Cook spaghetti according to package directions. Drain and place in two greased 13x9-in. baking dishes; set aside. , In two Dutch ovens or stock pots, cook the beef, onions and green pepper over medium heat until meat is no longer pink; drain. To each pot, add 2 cups of milk, two cans of tomato soup, one can of mushroom soup and 1 cup of cheese. Bring to a boil. , Spoon over spaghetti (spaghetti will absorb liquid during baking). - Set oven to 350 degrees.
- Grease a 2-qt casserole dish.
- Brown ground beef with 2 tbsp Parmesan cheese, (and garlic, if using); drain off any fat.
- Add tomato sauce, salt and pepper, cook and simmer over med-low heat for 25-30 mins; remove from heat.
- In a separate bowl, combine cottage cheese, cream cheese, sour cream, onions and green pepper.
- Spread half of the cooked and drained spaghetti in prepared casserole dish.
- Cover with the cheese mixture.
- Add remaining spaghetti, and drizzle the melted butter on top.
- Spread the tomato/meat sauce over the top of the spaghetti.
- Chill in the fridge for 2 hours, or overnight, to blend the flavors.
- Remove from the fridge 20 mins before baking.
- Bake for 45 mins, or until hot and bubbly.
- If desired top with 1-2 cups grated mozzeralla cheese the last 15 mins of baking.
CHEESY SPAGHETTI SQUASH CASSEROLE (VEGETARIAN)
Proof that you don't need to add meat to spaghetti squash to make a great dish! This is easy to make and very flavorful; feel free to adjust seasonings to your taste. The crushed red pepper is optional, but if you have it on hand I think it adds to the flavor. Try to use REAL parmesan, not the stuff that comes in the green can! I'm unsure of the origin of this recipe, but it's a keeper!

- To cook the spaghetti squash: Cut in half lengthwise and remove seeds. Place squash cut sides up in microwave dish with 1/4 cup water. Cover with plastic wrap and cook on high for 10-12 minutes or til done. Let sit covered for 5 minutes. With fork, "comb" out the strands into a bowl.
- Preheat oven to 375 degrees. Mix the cheeses together and set aside. Heat olive oil in skillet and add onion, green pepper, red bell pepper and garlic. Saute over medium heat for about 5 minutes. Add crushed tomatoes and crushed red pepper (if using). Simmer uncovered for about 15 minutes, stirring occasionally.
- In large bowl, mix the cooked squash well with the cooked vegetables and place half of it in a 9x13 baking dish. Top with half the cheese mixture, followed by the other half of the squash mixture, then the rest of the cheese.
- Bake for 30 minutes or until cheese is bubbly and slightly browned. Let cook 10-15 minutes before serving.

I had a recipe for a 4-cheese baked spaghetti squash that I really liked, but it was hard to eat. It was baked in the shell of the squash, and then mixed together after baking. I wanted to try it as a casserole, and after a few tries, this is what I came up with.

- Preheat the oven to 350 degrees F (175 degrees C).
- Brush the squash flesh with 1 tablespoon olive oil and sprinkle 1/8 teaspoon garlic-pepper over top; rub the edges and insides to make sure it's distributed evenly. Place on a baking sheet.
- Bake in the preheated oven until tender when pierced with a fork, 45 to 60 minutes.
- Meanwhile, heat 1 tablespoon olive oil in a large cast iron pan over low heat. Add mushrooms, onion, and jalapeno and cook, stirring occasionally, for 30 minutes. Add garlic and cook for about 10 more minutes. Move everything to the outside edges of the pan; add sausage, fennel seeds, salt, and pepper to the center. Cook and stir until pork is browned, crumbly, and no longer pink, about 10 minutes. Fold in the broccoli and remove from the heat.
- Remove squash from the oven and set aside to cool a bit. Leave the oven on.
- Mix chicken base, oregano, thyme, and basil together in a large bowl. Add Parmesan cheese and mix thoroughly. Add Cheddar and mozzarella and mix until well combined; it may be a little clumpy, but as long as it's only small clumps, that's okay.
- Shred squash flesh onto a sheet pan; use an oven mitt to hold it if it's still too hot. Toss with remaining garlic-pepper and season with salt and pepper if you want to. (Just remember the chicken base has a fair amount of salt in it already.)
- Spray an 11x13-inch baking dish with nonstick spray. Spread 1/2 of the shredded squash evenly over the bottom of the dish and top with 1/2 of the pork-vegetable mixture. Repeat for a second layer. Pour cream over the entire dish.
- Bake, uncovered, in the preheated oven for 30 minutes.
