1 (30 ounce) package frozen hash brown potatoes, thawed
1 (12 ounce) package pre-cooked ham steak, diced
2 cups shredded sharp Cheddar cheese, or more to taste
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Stir hash browns, ham, Cheddar cheese, onion, cream of chicken soup, sour cream, and butter in a large bowl; season with salt and black pepper. Transfer mixture to prepared baking dish and cover with aluminum foil.
  • Bake until bubbly and cheese is melted, 45 minutes to 1 hour. Remove foil and continue baking until brown, about 15 minutes more.

Steps:

  • Preheat oven to 350 degrees. Butter a baking dish.
  • In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
  • In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
  • Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese and another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.

4 tablespoons (1/2 stick) butter, plus extra for greasing dish
1/2 yellow onion, diced
1/3 cup all-purpose flour
1 1/2 cups half-and-half
1 1/2 cups milk
Freshly ground black pepper
2 pounds russet potatoes, washed thoroughly
3 cups diced cooked ham
2 cups grated Monterey Jack cheese
Chopped fresh parsley, for sprinkling, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.
  • Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.
  • Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.

1 teaspoon onion powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.

2 cups ham, cubed small
5 large potatoes, peeled and sliced (about 1/4 thick)
6 tablespoons butter
1 medium onion, chopped
1/2 cup flour
4 cups milk

1 pinch nutmeg
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350.
  • Cut ham into small cubes and set aside.
  • Peel and slice potatoes, put them in a bowl with enough water to cover them.
  • Heat the butter in a medium sized pan over medium heat.
  • Add the onions and cook until soft but not brown.
  • Add the flour and stir to make a roux.
  • Add the milk and stir constantly.
  • Once it comes to a gentle boil turn heat down and let the sauce cook for 2 minutes, stirring occasionaly.
  • Stir in the italian seasoning, salt, pepper, and nutmeg.
  • In a greased 2 quart baking dish put a layer of half the potatoes followed by half the ham.

1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

Steps:

  • Preheat the oven to 425 degrees.
  • In a 9x13 baking dish, spread the hash browns evenly on the bottom of the pan.

2 teaspoons salt (divided)

4 tablespoons butter
¼ cup flour
2 cups shredded cheddar cheese (divided)
2 ½ cups milk (2%)
1 1/2 teaspoon dried parsley (divided)
1 tablespoon fresh chives (divided or 1 teaspoon dried chives)

Steps:

  • Place sliced potatoes in a large bowl, pour ham over potatoes. Season with 1 teaspoon salt and 1/2 teaspoon pepper and mix well.
  • Melt butter in a medium saucepan over medium/high heat. Add flour and whisk well until well blended into a paste. Add 1 cup of milk and 1 1/2 cups of cheese, when cheese starts to melt, add the rest of the milk slowly whisking the entire time to make your cheese sauce. Allow mixture to come to a boil, add remaining salt, pepper, 1 teaspoon parsley, and half of the fresh chives. Remove from heat.
  • Preheat oven to 350 degrees.
  • Spray a 13x9 casserole dish with cooking spray. Layer half of the potatoes and ham in the bottom of the dish. Pour half of the cheese sauce over the potatoes, ensuring that all of the potatoes are covered with the sauce. Repeat with the remaining potatoes and ham and the rest of the cheese sauce.
  • Cover the baking dish with aluminum foil. Bake on middle rack of the oven for 75-80 minutes.
  • When baking is done, test potatoes to make sure they are fork tender. Add more time if needed. When they are finished remove the aluminum foil and sprinkle remaining 1/2 cup of cheese on top of the potatoes. Sprinkle remaining parsley and chives on top and place dish back into the oven. Cook for 15 more minutes until the cheese has melted and is golden brown on top.
  • Serve and enjoy!

I absolutely love this Crock Pot Cheesy Potato Ham Casserole recipe. It is super simple to prepare and has an amazing flavor! Comfort food at its best!

3 cups Ham (cubed)
3 cups Russet Potatoes (peeled and cut in large cubes)
10.75 oz Can Cream of Mushroom Soup ((plus half can of water))
2 cups Shredded Cheddar Cheese

Steps:

  • Place your potatoes in the bottom of a 4 quart slow cooker.
  • Add your cubed ham on top of the potatoes.
  • In a medium bowl, mix together your cream of mushroom soup and half a can of water until well blended.
  • Pour mixture over everything in crock pot.
  • Cover and cook on low for 5-6 hours or high for 2.5-3 hours, until your potatoes are fork tender.
  • Stir in shredded cheese until melted.
