EASY PIZZA CASSEROLE

Steps:
- Preheat your oven to 350 degrees F. Grease a deep 9x13 inch casserole dish with nonstick spray.
- Open the first can of biscuits and use scissors to cut them into sixths (cut each biscuit in half, then cut each half into 3.) Layer on the bottom of the dish.
- Use half the package of pepperoni now: use scissors to cut the pepperoni into quarters. Spread over the top of the biscuits.
- Add 1 and 1/2 cups mozzarella over the top.
- Spread 1 jar of pizza sauce over the top.
- Sprinkle with half a tablespoon of Italian seasoning.
- Add the other can of cut biscuits, the other half of the package of pepperoni (cut), and HALF of the other jar of pizza sauce. Sprinkle with the remaining half tablespoon Italian seasoning.
- Sprinkle with 1-2 cups of mozzarella. How cheesy you want it is up to you!
- Grate 3-4 tablespoons of Parmesan over the top.
- Spray a sheet of foil with nonstick spray and cover. Place the casserole dish on a large baking sheet (in case it bubbles over.)
- Bake at 350 for about 60 minutes. Uncover and continue baking for 10-15 minutes, until the top has browned. Use a toothpick or fork to test a biscuit in the middle. It should be cooked all the way through. If not cover and stick it back in.
- Serve with the leftover half jar pizza sauce! I like to warm it in the microwave.

Steps:
- Preheat oven to 350°F and spray a loaf pan with nonstick spray. Set aside.
- In a small bowl, combine oregano, marjoram, thyme, basil, rosemary, sage and red pepper flake. Stir to combine, then set aside.
- In a small bowl, add melted butter and garlic, then stir to combine. Set aside.
- On a clean work surface, split the dough of each biscuit in half and lay them all out side by side.
- Stretch out each round of dough so that it will be almost as wide as the short side of the loaf pan itself (approximately 4-5").
- Starting with one biscuit half, brush with a little of the garlic butter, add a few pepperoni slices (from the 6 ounce package I had, I could add three slices to each) and then top with a large pinch of cheese. Top with another biscuit, and repeat. You'll want to form stacks of 5 or 6 rounds at a time so they're still manageable enough for you to lift and place into the pan.
- Starting at one side of the pan, layer each stack tightly side by side until you've filled the entire length of the pan.
- Top with a light brush of garlic butter and your prepared spice mix.
- Cover with foil and bake for 30 minutes, then uncover and bake for another 10 minutes or until the top is golden brown.Note: After the first 30 minutes, use a knife or fork to pull out one of the more central pieces to test how well the middle of the biscuits are cooked. If they feel like they're still too doughy for your liking, cover and bake in 5 minutes increments until it's what you're looking for, and then uncover and bake the remaining 10 minutes.
- Serve immediately and enjoy! Can be served with a marinara dipping sauce, if desired.

CHEESY BISCUIT POT PIES
This meal is super simple. It involves a can of biscuits, a bag of frozen vegetables, seasoned and seared chicken and melted Cheddar cheese. And because they're mini pot pies, the cute meter is practically shattered. You don't even have to grease the ramekins. The biscuits have flecks of butter in them that'll keep them easy to pop out.

Steps:
- Preheat the oven according to the temperature on the biscuit tube.
- Heat the oil in a medium skillet over medium-high heat. Sprinkle the chicken with the Italian seasoning and a pinch of salt. Sear, covered, on one side for 5 minutes. Flip, cover and sear for 4 minutes. Transfer the chicken to a plate and let rest a few minutes, then give it a good chop.
- Combine the chicken with the vegetables, milk, flour and some salt in a large bowl.
- Roll out each biscuit on a lightly-floured surface until about 5 inches wide, then lightly press each one into a ramekin. Evenly fill each ramekin with the chicken and veggie mixture, then top with the cheese. Bake until the cheese starts to brown and bubble and the biscuit dough is cooked through, 25 to 30 minutes. Garnish with the parsley.

- Separate your biscuits into 10 biscuits from each pan. Flatten one out to about a 3-inch circle, and lay your cheese and/or pepperoni in the center. Wrap the biscuit dough around the filling and pinch the edges closed to seal the filling inside.
- Repeat for the remaining biscuits, setting each one seam-side down on your baking sheet in the shape of a wreath. You can either leave a 4-inch opening in the center for the pizza sauce bowl, or simply set an oven-safe ramekin in the center and build the wreath around it. Place 8 balls around the center, almost touching, followed by 12 balls around the outside.
