CHEESY ENCHILADA DIP
This enchilada dip is a tasty way to enjoy taco night.

Steps:
- In 10-inch skillet, cook beef over medium-high heat, stirring frequently, until brown; drain.
- Add uncooked rice and contents of pouches (from Hamburger Helper box), hot water and milk to skillet. Stir until well combined. Heat to boiling. Reduce heat. Cover; simmer about 25 minutes, stirring occasionally, until rice is tender.
- Remove from heat. Top with shredded cheese and taco sauce. Serve with scoop-shaped corn chips.

CHEESY CHICKEN ENCHILADA DIP!
The taste of enchiladas in a creamy, cheesy dip! I'm still not quite sure how the bf and I came up with it, but it started with a craving and ended with us dragging everything out of the pantry to try to find something to appease us! Can be made in the microwave or crockpot. Great use for leftover chicken!

- For the microwave:.
- In a large microwave-safe bowl, blend together the cream of chicken soup and the cream cheese, breaking the cream cheese up with the back of the spoon, if necessary.
- Carefully add enchilada sauce, chicken, chiles and cheddar cheese.
- Heat in microwave for 2 minutes.
- Remove with hot pads and stir.
- Return to microwave and heat for 1 minute intervals, removing from microwave to stir, until the cheese is completely melted and the dip is heated all the way through.
- Directions for Crock Pot:.
- In a medium mixing bowl, blend together the cream of chicken soup and the cream cheese, breaking the cream cheese up with the back of the spoon, if necessary.
- Add cream cheese/soup mixture to crockpot.
- Carefully add enchilada sauce, chicken, chiles and cheddar cheese to the crock pot.
- Heat on low for 1 hour, stirring occasionally. (Remember, this will differ by crockpot, so please take your own crockpot into account!).
- This method is great for parties!

SUPER EASY CHEESY ENCHILADAS
When you don't have a lot of time or money. I made this for my family for around a dollar per serving. If the only Mexican food your kids will touch is cheese quesadillas (cheese melted on a tortilla), give this a try as a "step up". My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Now she has been known to eat spinach enchiladas and chicken enchiladas! :) She gave this recipe two thumbs up. :)

- First, you want to mix the first four ingredients together until they are really well combined. Seriously, you will not see any little shreds of cheese and it will have the texture of stiff play dough (this is important).
- Preheat your oven to 350 and grab a pan. I used an 11x7 inch oval baking dish, but you can also use an 8inch square.
- Pour about 1/4 of the enchilada sauce into the bottom of the pan and swirl the pan until the bottom is coated.
- Reach in with your clean hands and grab about 2 tablespoons of cheese mixture in your hands and shape into a log. Roll a tortilla around this log and place in the pan. Repeat for the rest of the cheese and tortillas.
- Pour the rest of the sauce on top, spreading it to cover.
- Sprinkle the last 1/2 cup of cheese on top, and place in the oven. Bake 20-30 minutes or until hot and bubbly.
- For OAMC: Freeze before cooking, thaw in refrigerator and bake according to directions.
CHICKEN ENCHILADA DIP
I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken.

- Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, shredded cheese, green chile peppers and jalapeno pepper.
- Transfer the chicken mixture to a medium baking dish.
- Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown.
- ***NOTE***I season the chicken with my favorite spices prior to grilling.
- Fajita seasoning or Montreal seasoning work well.
- The purchased grilled chicken would save a step, also.
- I have added more or less jalapeno depending on the tastes of those I will be serving it to.
