CHEESY CHICKEN ENCHILADA DIP!

Cheesy Chicken Enchilada Dip! image

The taste of enchiladas in a creamy, cheesy dip! I'm still not quite sure how the bf and I came up with it, but it started with a craving and ended with us dragging everything out of the pantry to try to find something to appease us! Can be made in the microwave or crockpot. Great use for leftover chicken!

Provided by AnnieLynne

Categories     Lunch/Snacks

Time 16m

Yield 10 serving(s)

Number Of Ingredients 7

1 (14 ounce) can enchilada sauce (I use Old El Paso)
1 (10 1/2 ounce) can reduced-fat cream of chicken soup
8 ounces fat free cream cheese, softened
1 cup reduced-fat cheddar cheese, shredded
2 cups cooked chicken breasts, shredded
1 (4 ounce) can green chilies, diced
tortilla chips

Steps:

  • For the microwave:.
  • In a large microwave-safe bowl, blend together the cream of chicken soup and the cream cheese, breaking the cream cheese up with the back of the spoon, if necessary.
  • Carefully add enchilada sauce, chicken, chiles and cheddar cheese.
  • Heat in microwave for 2 minutes.
  • Remove with hot pads and stir.
  • Return to microwave and heat for 1 minute intervals, removing from microwave to stir, until the cheese is completely melted and the dip is heated all the way through.
  • Directions for Crock Pot:.
  • In a medium mixing bowl, blend together the cream of chicken soup and the cream cheese, breaking the cream cheese up with the back of the spoon, if necessary.
  • Add cream cheese/soup mixture to crockpot.
  • Carefully add enchilada sauce, chicken, chiles and cheddar cheese to the crock pot.
  • Heat on low for 1 hour, stirring occasionally. (Remember, this will differ by crockpot, so please take your own crockpot into account!).
  • This method is great for parties!

SUPER EASY CHEESY ENCHILADAS

Super Easy Cheesy Enchiladas image

When you don't have a lot of time or money. I made this for my family for around a dollar per serving. If the only Mexican food your kids will touch is cheese quesadillas (cheese melted on a tortilla), give this a try as a "step up". My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Now she has been known to eat spinach enchiladas and chicken enchiladas! :) She gave this recipe two thumbs up. :)

Categories     Cheese

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 cups shredded cheese (whatever floats your boat, I used a preshredded Colby or Monterey Jack blend)
3 ounces cream cheese, softened
1 -2 teaspoon garlic powder
1 -2 teaspoon instant minced onion (or a smidge of grated fresh)
12 corn tortillas
15 ounces enchilada sauce
1/2 cup more shredded cheese

Steps:

  • First, you want to mix the first four ingredients together until they are really well combined. Seriously, you will not see any little shreds of cheese and it will have the texture of stiff play dough (this is important).
  • Preheat your oven to 350 and grab a pan. I used an 11x7 inch oval baking dish, but you can also use an 8inch square.
  • Pour about 1/4 of the enchilada sauce into the bottom of the pan and swirl the pan until the bottom is coated.
  • Reach in with your clean hands and grab about 2 tablespoons of cheese mixture in your hands and shape into a log. Roll a tortilla around this log and place in the pan. Repeat for the rest of the cheese and tortillas.
  • Pour the rest of the sauce on top, spreading it to cover.
  • Sprinkle the last 1/2 cup of cheese on top, and place in the oven. Bake 20-30 minutes or until hot and bubbly.
  • For OAMC: Freeze before cooking, thaw in refrigerator and bake according to directions.

CHICKEN ENCHILADA DIP

Chicken Enchilada Dip image

I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken.

Provided by Ms B.

Categories     Chicken

Time 35m

Yield 25 serving(s)

Number Of Ingredients 6

1 lb boneless skinless chicken breast half, grilled and shredded
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1 (8 ounce) package shredded colby-monterey jack cheese or 1 (8 ounce) package Mexican blend cheese
1 (4 ounce) can diced green chili peppers
1 jalapeno pepper, finely diced

Steps:

  • Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, shredded cheese, green chile peppers and jalapeno pepper.
  • Transfer the chicken mixture to a medium baking dish.
  • Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown.
  • ***NOTE***I season the chicken with my favorite spices prior to grilling.
  • Fajita seasoning or Montreal seasoning work well.
  • The purchased grilled chicken would save a step, also.
  • I have added more or less jalapeno depending on the tastes of those I will be serving it to.
