Old-fashioned carrot salad made with lemon Jell-O and pineapple. Grandma didn't specify the amount of carrots. You probably can't use too much!

Ingredients

1 (6 ounce) package lemon flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
4 large carrots, shredded

Steps:

In a large bowl, prepare the lemon gelatin according to package directions using reserved pineapple juice in place of some of the water. Refrigerate until thickened, about 1 hour.
When the gelatin has thickened, stir in pineapple and shredded carrot. Cover and refrigerate until set, at least 4 hours.

4 carrots, washed,peeled and grated
2 cups cheddar cheese or 2 cups gruyere cheese, grated
1 cup sultana
salt and pepper

Steps:

Mix all ingredients together and season with salt and pepper.
(If raisins are dry, let them soak in water warm water for 15-20 minutes, and drain before using).

I like to serve a jelly salad at all my dinner parties and I,m always looking for new ones . I found this one in the Trinity South Womens Institute cookbook. This recipe served a large group and best of all it was liked by everyone. I;ll definitely make it again.

1 package orange Jell-O
1 package lemon Jell-O gelatin
3 cups water
1 cup grated cheese
1 cup grated carrot
1 cup well-drained crushed pineapple
1 package Dream Whip

Steps:

When jelly is partly set add cheese, carrot, pineapple and whipped cream.
Chill until set.

1 package (6 ounces) orange gelatin
2 cups boiling water
1 package (8 ounces) reduced-fat cream cheese, cubed
2 cans (8 ounces each) unsweetened crushed pineapple, drained
1 cup finely grated carrots
1 carton (8 ounces) reduced-fat whipped topping, thawed

Steps:

In a bowl, dissolve gelatin in boiling water. Place cream cheese in a food processor or blender; cover and process until smooth. While processing, gradually add dissolved gelatin; process until smooth. Pour into a large bowl. Stir in pineapple and carrots; fold in whipped topping. Pour into a serving bowl. Refrigerate for 2 hours or until firm.

I must confess that I am not fond of jellied salads but I do make them for a friend that loves them and I will say they look attractive on the table besides all that just look at the fat content and the calories in this salad. Preparation time does not include 3 hours to set.

Ingredients

1 (1 ounce) package sugar-free lemon gelatin
1 cup boiling water
1 cup cold water
2 cups finely shredded cabbage
1/2 cup finely shredded carrot
1 teaspoon dried parsley flakes
3 tablespoons fat-free French dressing
1/3 cup fat-free mayonnaise
lettuce leaf (to garnish)

Steps:

In an 8 x8" dish mix the gelatin with the cup of hot water, stir until the gelatine has completely dissolved.
Srir in the cup of cold water, add cabbage, parsley& carrots.
Stir to combine evenly.
Refrigerate covered until set about 3 hours Mix together the mayo& French dressing, spread over the top of the set jelly salad.
Refrigerate until you serve it.
Place individual servings of salad on lettuce leaves and serve.
