1 pound penne pasta
1/2 box Cheez-it crackers
1 bunch fresh chives, chopped
1 bunch fresh flat-leaf parsley, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
2 tablespoons grated aged Monterey Jack cheese
1/4 cup grated fontina cheese
2 tablespoons crumbled soft goat cheese
2 cups heavy cream
Freshly ground black pepper

Steps:

  • Set the oven to broil. Add the pasta to a pot of boiling salted water and cook until al dente, 8 to 10 minutes.
  • Pulse the crackers in a food processor to a coarse consistency. Mix with the chives and parsley.
  • Whisk the butter and flour in a medium saucepot over medium-high heat until fully incorporated and bubbly. Add the milk and bring to a simmer, whisking the entire time. Whisk in the cheeses, a little at a time, until thoroughly combined. Add the heavy cream and season with salt and pepper.
  • Strain the pasta and mix with the cheesy sauce. Spoon into oven-safe baking vessels and top with the crumb crust. Place under the broiler until lightly toasted and bubbling, 3 to 5 minutes. Watch carefully so the mac doesn't burn.

This is super cheesy and creamy. I started with the basic mac and cheese recipe from the back of the box and have over the years tweaked on it til it is just super!

2 cups dry elbow macaroni, cooked
2 tablespoons margarine, melted
2 tablespoons flour
1/4 teaspoon dry mustard
2 cups milk
8 ounces Velveeta cheese
1 (8 ounce) bag sharp cheddar cheese
2 slices American cheese

Steps:

  • melt margarine.
  • add flour and cook until pasty.
  • add dry mustard.
  • stir.
  • add milk and whisk til combined.
  • add velveeta and stir til melted.
  • Add 3/4 of bag of cheese and stir til melted.
  • add 2 slice of cheese and stir til melted.
  • Combine sauce with warm macaroni that has been drained but not rinsed.
  • Pour into casserole dish and let set for 5 minutes until macaroni absorbs cheese sauce and thickens.
  • Top with remaining1/4 bag of cheese.
  • Bake at 350 for 30-40 minutes til cheese bubbles.
  • Let set for 5 minutes before serving.

This is from Aunt Debbie who got it from someone else. It is about the easiest mac and cheese to be made. My 4 year old daughter loves this. This is about as easy as you can get. You can add other ingredients after about 45 minutes according to my sister in law. I like it just with cheese.

6 tablespoons butter
1 lb macaroni, uncooked
2 teaspoons salt
1 1/2 teaspoons pepper
4 cups cheddar cheese
1/2 gallon skim milk

Steps:

  • Heat oven to 350 degrees.
  • Put butter, salt, and pepper in 13x9 pan. Place in oven to melt butter.
  • When butter is melted, add uncooked macaroni. Toss to coat with butter.
  • Cover buttered, uncooked macaroni with all of the cheese.
  • Place pan on a cookie sheet and place on rack in middle of oven. DO THIS BEFORE ADDING MILK. THE PAN WILL BE VERY FULL AFTER NEXT STEP!
  • Pour milk over noodles/cheese.
  • Bake at 350 for 1 hour to 1 hour and 15 minutes. Cool for about 10-15 minutes until set.

1 lb elbow macaroni
4 tablespoons butter
1/3 cup flour
2 cups milk
2 cups half-and-half
1 teaspoon salt
fresh ground black pepper (I like lots)
1/2 teaspoon curry
1 -2 dash hot sauce
1/2 cup frozen peas (optional)
3 cups grated cheddar cheese (If you like spicy use a pepper cheese)
1/2 cup grated swiss cheese
1/4 cup grated parmesan cheese

Steps:

  • Cook pasta aldente, drain and set aside.
  • Heat oven to (350F) degrees.
  • In a microwave proof dish melt butter and stir in flour.
  • Whisk in milk and half and half.
  • Microwave stirring every minute, until sauce begins to thicken about 5 minutes.
  • Season with salt, pepper, curry and the hot sauce.
  • Remove from heat and stir in remaining ingredients except for Parmesan cheese.
  • Pour in a buttered casserole pan.
  • Sprinkle top with Parmesan.
  • Bake for 30 minutes until bubbly and golden.

  • In a medium-sized saucepan, melt the stick of butter over low heat. When the butter is melted, slowly whisk in the flour and whisk well until its evenly incorporated into the butter. Let the roux cook, while whisking, over low heat, until a buttery-baked smell permeates and the roux starts bubbling all over the surface. Slowly add the milk, whisking constantly, and then increase the heat to medium. Season the bechamel with salt and pepper to taste, and then add the nutmeg. Let the sauce cook over high heat until boiling, and then remove from heat and add the cheeses (except the Parmesan). Stir well so that they're all completely melted.
  • Pour the sauce over the pasta in the baking dish and, using tongs or a spoon, toss well so that each piece of pasta is coated well with the sauce. In a small bowl, melt the tablespoon of butter and add the breadcrumbs. Stir well, and then add the crushed Cheez-Its. Sprinkle the breadcrumb mixture evenly on top. Bake the mac and cheese in the oven until bubbling and golden brown on top, about 30-45 minutes.
