CREAMY CHEESY CABBAGE CASSEROLE WITH RITZ CRACKERS



Creamy Cheesy Cabbage Casserole with Ritz Crackers image

Cabbage casserole with a creamy sauce and cheesy cracker topping. This cabbage casserole recipe is perfect for any large get together and is a great side dish. Goes great with ham and turkey!

1 head cabbage, chopped into 1-inch squares or strips (See Recipe Note)
1 stick butter, halved, melted
1 onion, finely chopped (about 1 cup) (See Recipe Note)
1 10.5 oz can cream of mushroom soup
1/2 cup mayonnaise
1/4 tsp salt
1/2 tsp pepper
dash of cayenne, optional
1 cup shredded cheddar
1 sleeve ritz crackers, roughly crushed (not too fine, you want bits and pieces of crackers)

Steps:

  • Preheat oven to 350F.
  • Rinse head of cabbage under cool water first. Chop the cabbage into 1-inch squares or strips. Discard the hard core and end piece. READ RECIPE NOTES (A & B) BELOW.
  • Place cabbage and chopped onion into a large casserole dish (9 x 13). Pour half a stick of melted butter over the cabbage. Mix well.
  • Mix the soup, mayonnaise, salt, pepper, and cayenne in a bowl. A whisk works well for this.
  • Pour into the casserole dish and mix well with the cabbage.
  • Mix the crushed crackers and cheese and pour on top of the soup mixture.
  • Drizzle the remaining 1/2 stick melted butter on top of the cracker and cheese mixture. Bake at 350F for 30-40 minutes or until the cracker topping is crispy browned.

1 pound ground beef or turkey, browned and drained
1 small onion, diced
1/2 head of cabbage chopped into medium chunks (roughly 3 cups)
1 (10 ounce) can tomatoes with green chilies (undrained)
1 (8 ounce) can of tomato sauce
1 teaspoon chili powder
1 teaspoon garlic powder
salt and pepper to taste
1 cup shredded cheese (cheddar or colby jack is our favorite)

Steps:

  • In a medium size skillet brown your beef or turkey over medium heat, drain off any grease. Add the diced onion and sauté 3-5 minutes. Add the cabbage, tomatoes with green chili, tomato sauce, spices and stir well. Cover and reduce heat to medium cooking for 15-18 minutes stirring occasionally. Top with cheese!

2 quarts chopped cabbage
1 (10 1/2 ounce) can cream of celery soup
1/4 cup milk
1 cup packed shredded American cheese or 1 Velveeta cheese
1/2 teaspoon salt, less if desired
1/8 teaspoon pepper
1 cup finely crushed butter flavored cracker
4 tablespoons melted butter, more if needed

Steps:

  • Cook cabbage 5-7 minutes in salted water, drain well.
  • Combine soup, milk, cheese, salt and pepper in large bowl.
  • Microwave til cheese melts and is creamy. Stir occasionally.
  • Fold in cabbage.
  • Pour into 1-1/2 quart casserole dish.
  • Mix cracker crumbs and melted butter.
  • Sprinkle evenly over top.
  • Bake in 350º over for 30-40 minutes til bubbly.

1/2 cup butter, melted
4-1/2 cups shredded cabbage
1/3 cup chopped onion
1/4 to 1/2 teaspoon salt
1/4 to 1/2 teaspoon pepper
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup whole milk
1/2 cup mayonnaise
2 cups shredded cheddar cheese

Steps:

  • In a small bowl, toss cornflakes with butter; sprinkle half into a greased 13x9-in. baking dish. Layer with cabbage, onion, salt and pepper. 1 large onion, thinly sliced
1 (10.75 ounce) can condensed cream of celery soup
2 tablespoons butter, melted
1 ½ cups Italian-seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cabbage, Cheddar cheese, onion, cream of celery soup, and butter in a large bowl. Mixture will be dry. Transfer to a large baking dish, spreading vegetables evenly; sprinkle with breadcrumbs. Cover baking dish with aluminum foil.

1 large head cabbage
2 teaspoons butter
1 small onion
3 garlic cloves
1 (10 1/2 ounce) can cream soup (your choice)
8 ounces bar cream cheese
2/3 cup water or 2/3 cup milk
1 1/2 teaspoons kosher salt
1/2 teaspoon pepper
8 tablespoons butter
1 sleeve crushed Ritz cracker

Steps:

  • Finely chop cabbage, press into a 13"x9" cake pan.
  • Finely chop garlic and onion.
  • In a saucepan heat butter (2tsp.) and saute onion, salt, and garlic.
  • Add soup, cream cheese, water or milk, and pepper.
  • Heat untill all ingredients are mixed well.
  • Pour over cabbage, cover and bake on 325 for 1 hours or until cabbage is soft.
  • Melt 8 tablespoons butter and toss in crackers.

Steps:

  • Boil sliced cabbage in a large saucepan of boiling salted water for 3 to 4 minutes.
  • Drain and add 2 tablespoons butter; set aside.
  • In a small saucepan, melt 6 tablespoons butter; stir in flour, salt, and pepper until smooth. Gradually add milk, stirring constantly. Continue cooking and stirring until thickened and bubbly.
  • In a greased 3-quart or 13 x 9 x 2-inch pan, layer half of drained cabbage, pour half of the cream sauce, then the rest of the cabbage and cream sauce on the top.
  • Sprinkle the top with the shredded cheese.
  • Melt remaining 2 tablespoons butter and toss with breadcrumbs; sprinkle over the cheese layer.
