1 2lb. bag of uncooked large or jumbo shrimp
1/2 cup Monterey and Colby Jack Cheese
1-2 tsp. Extra Virgin Olive Oil
1/4 cup lemon juice
1 stick melted unsalted butter
2-4 tsp. crushed garlic
1/4 cup finely chopped spring/green onions
2-4 tsp. sea salt
1-2 tsp. ground black pepper

Steps:

  • Turn broiler on to high Rinse shrimp, peel and remove tails Add shrimp to a bowl and add extra virgin olive oil, melted butter, lemon juice, crushed garlic, spring/green onions, sea salt and ground black pepper, fold until incorporated Line a baking pan with Reynolds Wrap® Non-Stick Foil and add shrimp to pan (including all butter, seasoning and onions), make sure shrimp are spread out and not on top of each other Broil for 6 minutes Remove from broiler and sprinkle cheese all over shrimp, place back in broiler for 1-2 minutes or until cheese is melted ENJOY, INDULDGE AND BE HAPPY!

1.15 lbs raw shrimp shell-on (equals about 1 lb after it's cooked)
8 cups filtered water
1 Tbsp garlic salt (I use Lawry's brand)
1/2 tsp ground black pepper
1-2 bay leaves

Steps:

  • Depending on how you are serving your shrimp, you can leave the shells on or off. I peel and devein first and keep the shells for the shrimp boil.
  • Place the shells from the shrimp in a large sauce pan along with 1 Tbsp garlic salt, 1/2 tsp black pepper, and bay leaf. Add 8 cups water and bring to a boil over med/high heat.
  • Once water boils, add the peeled and deveined shrimp and simmer until pink, about 2-3 minutes depending on size of the shrimp. Drain and transfer cooked shrimp to a bowl of cold water to stop the cooking process and let cool.

4 teaspoons prepared horseradish
1 teaspoon Worcestershire sauce
2 or 3 drops red pepper sauce
1 lb uncooked medium shrimp in shells, thawed if frozen

Steps:

  • In small bowl, mix all ingredients except shrimp. Stir in 1 to 2 teaspoons additional horseradish, if desired, until sauce has desired flavor. Cover and refrigerate until serving.
  • In 3-quart saucepan, heat 4 cups water to boiling. Add shrimp. Cover and heat to boiling; reduce heat. Simmer uncovered 3 to 5 minutes or until shrimp are pink and firm; drain.
  • Peel shrimp, leaving tails on. Make a shallow cut lengthwise down back of each shrimp; wash out vein. Serve shrimp with sauce.

1/4 cup white vinegar
1/2 lemon, thinly sliced
2 cloves garlic, smashed
5 tablespoons Old Bay Seasoning
1/2 teaspoon peppercorn
1/2 teaspoon salt
1/4 teaspoon cayenne
4 bay leaves, crumbled
2 lbs raw shrimp in shells
1/2 lb butter
1 teaspoon salt
1 teaspoon cayenne, to taste
4 teaspoons Worcestershire sauce
2 teaspoons lemon juice

Steps:

  • In a large pot, combine water, vinegar, lemon, garlic, Old Bay,peppercorns, 1/2 tsp salt, 1/4 tsp cayenne and bay leaves.
  • Cover and bring to a boil, reduce heat and simmer 5 minutes.
  • Add shrimp, cover, return to a boil, cook 1-2 minutes and drain.
  • Melt butter in a smallpan, remove from heat and add remaining ingredients.
  • Serve shrimp with the butter sauce for dipping.

1 tablespoon butter
½ pound medium shrimp, peeled and deveined
8 ounces fresh mushrooms, sliced
1 celery, diced
½ green bell pepper, diced
½ medium onion, diced
1 ½ tablespoons all-purpose flour
1 teaspoon chicken bouillon base (such as Better Than Bouillon®)
1 teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon garlic powder
¼ teaspoon cayenne pepper, or more to taste
¾ cup milk
1 ½ cups cooked rice
1 cup shredded sharp Cheddar cheese
salt and freshly ground black pepper to taste

Steps:

  • Melt butter in a large skillet over medium heat. Saute shrimp until firm and pink, 3 to 4 minutes. Remove shrimp from skillet and set aside.
  • Add mushrooms, celery, bell pepper, and onions to the skillet. Saute until all vegetables are tender, 7 to 8 minutes.
  • Stir in flour, bouillon, seafood seasoning, garlic, and cayenne. Slowly add milk, stirring constantly. Bring to a boil and continue stirring until mixture starts to thicken. Add cooked rice, Cheddar cheese, and shrimp. Season with salt and pepper and stir to combine. Serve.

This is a favorite recipe around my house. I found it originally on foodtv.com as one of Emeril's recipes. It's definitely more of a winter dish as it's filling and comforting. You may use vegetable stock but if you can use shrimp stock or seafood base dissolved in water.

4 cups milk
2 tablespoons butter
salt
freshly ground white pepper
1/2 cup stone whole grain grits
2 ounces grated cheddar cheese
1 tablespoon olive oil
1/2 lb link smoked sausage, cut in half & sliced ½ inch thick
2 teaspoons chopped garlic
1 lb medium shrimp, peeled & deveined
fresh ground black pepper
1/4 cup dry sherry
2 cups shrimp stock or 2 cups vegetable stock
1 1/2 cups of cold butter, cubed
5 teaspoons finely chopped fresh parsley leaves

Steps:

  • In a saucepan, over medium heat, add the milk and butter.
  • Season with salt and white pepper.
  • Bring the liquid to a boil.
  • Slowly stir in the grits.
  • Reduce the heat to medium low and continue to cook for about 1 hour or until the grits are tender and creamy, stirring every 10 minutes to prevent the grits from sticking.
  • Add some water during the cooking process if the liquid evaporates too much.
  • Remove from the heat and stir in the cheese.
  • Re-season with salt and white pepper if needed.
  • Set aside and keep warm.
  • In a sauté pan, over medium heat, heat the oil.
  • Add the sausage and render for 2 minutes.
  • Add the garlic and sauté for 30 seconds.
  • Season the shrimp with salt and black pepper.
  • Add the shrimp and continue to sauté for 2 minutes.
  • Remove the pan from the heat and add the sherry.
  • Place the pan back over the heat and flame the sherry, (optional- I'm chicken so I just allow it to boil for a minute) shaking the pan back and forth several times until the flame dies out.
  • Remove the shrimp from the pan and set aside.
  • Add the stock and bring the liquid to a boil.
  • Reduce the heat to medium low and mound in the butter.
  • Add the shrimp back to the sauce and simmer for 2 minutes.
  • Remove from the heat and stir in 2 teaspoons of the parsley.
  • To serve, spoon the grits in the center of each shallow bowl.
  • Spoon the shrimp mixture over the grits.
  • **Note:For shrimp stock, when I fix boiled shrimp I save the liquid for this recipe.
  • I also use the quick cooking grits and adjust the quantities to those listed on the box.

  • In a large pot, combine the water, vinegar, lemon slices, garlic, Old Bay Seasoning, peppercorns, 1/2 teaspoon of the salt, 1/4 teaspoon of the cayenne, and the bay leaves. Cover and bring to a boil. Reduce the heat and simmer for 5 minutes.
  • Add the shrimp to the pot. Cover and bring back to a boil. Then continue boiling, partially covered, until the shrimp are just done, 1 to 2 minutes. Drain.
  • In a small stainless-steel saucepan, melt the butter. Remove the pan from the heat and add the Worcestershire sauce, the lemon juice, and the remaining 1 teaspoon salt and 1 teaspoon cayenne. Divide the sauce among four small bowls. Serve the shrimp with the butter dipping sauce.
