- Cook the egg noodles in boiling water as directed on the package. Drain well and place in a large bowl. Add the Mozzarella, melted butter, Parmesan, parsley or chives, salt, garlic powder, and black pepper. Mix quickly to coat the noodles in the cheese and butter mixture. Serve immediately.

Steps:
- Bring water to a boil
- Add noodles and reduce heat to medium, stirring occasionally for 6-8 minutes
- Chop green onions, set aside
- Drain noodles and return to pan. On the lowest heat setting possible, add butter to noodles and stir
- Stir in green onions for about 3-4 minutes
- Remove from pan and place in serving dish. Stir in Parmesan cheese
- Serve

Steps:
- Cook noodles in a large pot of lightly salted water until al dente.
- While the pasta is cooking, place the eggs, grated cheese, parsley, salt and pepper into a mixing bowl and beat with a whisk until well combined.
- When the noodles are almost cooked, melt the butter in a large nonstick skillet over medium heat.
- Quickly drain the pasta and add it to the skillet.
- Toss briefly to coat it with the butter.
- Add the egg mixture to the skillet and using a flat wooden spoon, mix quickly together for less than a minute until the eggs and noodles become creamy and thick.
- Do not cook the eggs too long or they will scramble and ruin the dish.
- Serve immediately.

- Cook the noodles in a large saucepan of boiling, salted water with 1tsp cooking oil, until just soft (about 7-10 minutes).
- Grate the cheese, or chop it finely into very small cubes.
- Drain the noodles, return to the hot, dry pan and shake for a moment in the pan over the heat, to dry them and keep them hot. Remove from the heat and stir in the cheese and the butter. Season with the salt and pepper and pile onto a hot dish. Serve at once.

Steps:
- Bring 4 quarts of water to a boil in a large saucepan. Add 1/2-1 tbls. of the salt and the pasta. Cook until al dente, 5-7 minutes(until it still has a little bite to it-not too soft). Drain.
- In a large saute pan, melt butter over medium hight heat. Add the pasta and 3 tbls. grated cheese.
- Season with salt and pepper to taste and toss.
- Top with remaining cheeses and serve hot. Enjoy! Opa!
