CHEESY BROCCOLI-EGG BAKE FOR A BRUNCH CROWD
Brunch crowds are easy to figure out. They like egg bakes. They like cheese. And if there are fresh broccoli florets in there-even better!

Steps:
- Heat oven to 350ºF.
- Layer half each of the bread cubes, peppers and cheese in 13x9-inch baking dish sprayed with cooking spray.
- Top with broccoli, then layers of remaining bread cubes, peppers and cheese.
- Whisk eggs in large bowl until blended. Add milk, sour cream and butter; mix well.
- Pour over ingredients in baking dish.
- Bake 50 min. to 1 hour or until knife inserted in center comes out clean. Let stand 5 to 10 min. before cutting to serve.

AWESOME BROCCOLI-CHEESE CASSEROLE
My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
- Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
- Bake for 45 minutes to 1 hour.

A 10-ounce package frozen broccoli pieces can be used in place of the cooked fresh broccoli if desired, and old cheddar cheese can be used in place of the three-cheese blend. This makes a great weeknight meal also served with a side salad!

- Set oven to 350 degrees.
- Butter an 11 x 7-inch baking dish.
- In a skillet cook the turkey sausage or pork sausage meat with onion and garlic (if using) until the meat is no longer pink; drain fat and transfer to a large bowl.
- Toss together the sausage with cooked broccoli and about 1/2 cup three-cheese blend; spoon the mixture into the prepared baking dish.
- In a bowl whisk eggs, add in 1/2 cup shredded three-cheese blend, ricotta, half and half cream, salt, pepper and cayenne (if using) pour over the broccoli mixture in the baking dish.
- Sprinkle the remaining 1 cup cheddar (or to taste) cheese, then arrange the tomato slices on top.

- Arrange in a 9x9 or 8x8 greased pan.

- Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels.
