CHICKEN, BROCCOLI AND CHEESE CASSEROLE

Chicken, Broccoli and Cheese Casserole image

This casserole is super satisfying and creamy and uses a great trick to cut out extra butter and oil: Instead of making the traditional roux with butter, the cream sauce is thickened with a little flour.

Provided by Food Network Kitchen

Categories     main-dish

Time 2h

Yield 6 servings

Number Of Ingredients 9

1/4 cup all-purpose flour
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
3/4 cup shredded sharp Cheddar
4 cups medium broccoli florets
Cooking spray
3 cups frozen brown rice, thawed
1 rotisserie chicken, skinned, white and dark meat shredded (about 4 cups)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 10 to 12 minutes. Remove the saucepan from the heat and whisk in 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add the Cheddar and whisk until melted. Add the broccoli florets and stir to coat.
  • Spray a 3-quart flameproof casserole dish with cooking spray. Toss the brown rice and chicken in a large bowl. Pour the broccoli-cheese sauce on top and mix well. Spread the mixture in the casserole dish and top with the Parmesan. Cover with foil and bake until bubbling and hot, about 25 minutes. Remove the foil and broil until the top is nicely browned, 2 to 5 minutes Serve hot.
  • Make-Ahead Tip: Freeze the baked casserole for up to 2 weeks. Cover in foil and reheat at 350 degrees F until hot, 35 to 45 minutes.

CHEESY POTATO BROCCOLI CASSEROLE / SIDE DISH

Cheesy Potato Broccoli Casserole / Side Dish image

I came upon this casserole when I was looking for a side dish that was new and different for Thanksgiving. I wanted something that would have multiple flavors in every bite. This fit the bill. In each morsel you get the flavor of the cheesy potatoes, ham, brocolli and breadcrumbs. The flavor is great and went with turkey well but would be great with other meats as well. It would make a nice stand alone one dish meal too with a salad. It came from a small town site Fair Oaks Carmichael Patch. I will make it all year long now. Enjoy! ChefDLH

Categories     Vegetable

Time 40m

Yield 8-10 serving(s)

Number Of Ingredients 15

3 lbs red potatoes, sliced
1 lb broccoli, chopped (I use florets only)
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1/2 lb ham, sliced, cooked (I prefer cubed)
1 teaspoon paprika
1 teaspoon black pepper
1 tablespoon kosher salt
1 teaspoon garlic powder
1 teaspoon basil
1/2 cup cheddar cheese, grated
1/2 cup asiago cheese, grated
1/2 cup parmesan cheese, grated
1/2 cup breadcrumbs (for an extra kick use garlic and herb bread crumbs)
1/4 cup butter, melted

Steps:

  • Blanch the broccoli for about two minutes. Set aside.
  • Place the potatoes into a pot of salted boiling water. Cook until they are about ¾ cooked. (For us it is about 17 minutes) Stack them into a baking dish.
  • Preheat the oven to 350 degrees.
  • In a mixing bowl, combine the cream of chicken, sour cream, ham, broccoli, paprika, black pepper, kosher salt, garlic powder, and basil. Stir until fully combined.
  • Spread the cream of chicken mixture over the potatoes. Cover the casserole with the cheeses. Spread the bread crumbs over the cheese and evenly pour butter on top of that.
  • Place the dish into the preheated oven and cook for 20 minutes.
