2 heads broccoli, cut into florets
1 large rotisserie chicken, meat pulled and shredded
1 cup mayonnaise
⅔ cup heavy whipping cream
1 tablespoon chicken soup base
1 tablespoon dried dill weed
1 teaspoon ground black pepper
2 cups shredded Cheddar cheese
cooking spray

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place broccoli florets in a 9x13-inch baking dish. Layer shredded chicken on top; press down onto broccoli.
  • Combine mayonnaise, heavy cream, chicken soup base, dill, and pepper in a bowl; mix well. Spread evenly over chicken and top with Cheddar cheese. Grease a piece of aluminum foil with cooking spray and cover baking dish with greased-side down.
  • Bake covered in the preheated oven, about 45 minutes. Remove aluminum foil and bake until golden brown, about 15 minutes. Remove from oven and let stand for 10 to 20 minutes before serving.

2 (10 ounce) packages chopped frozen broccoli
6 tablespoons butter
1/2 lb Velveeta cheese
1 (1 lb) package Ritz crackers or 35 Ritz crackers
2 drops Worcestershire sauce

Steps:

  • cook broccoli until it comes apart and color is nice and green, drain.
  • Arrange in a 9x9 or 8x8 greased pan.
  • Top with cubed cheese.
  • Melt the butter, add a couple drops of worcestershire sauce, crush the ritz crackers and add.
  • Sprinkle over the casserole.
  • Bake 325- 45min.

6 chicken breasts (grilled, sauteed, boiled, or microwaved)
3 cups broccoli florets (steamed)
3 cups cauliflower (riced and cooked)

Steps:

  • Cook the chicken breasts (we prefer to grill or saute ours, but we often boil or microwave them if we're running late), seasoned to taste (we like salt, garlic powder, onion powder, and pepper), and dice.
  • Steam broccoli florets.
  • Cook riced cauliflower.
  • Melt neufchatel cheese in a pot on medium heat with half of the chicken broth, chicken bouillon, onion powder, and garlic powder.
  • Boil the mushrooms in a saute pan in the rest of the chicken broth until cooked and strain the mushrooms, saving the liquid.
  • Whisk the Greek yogurt into the cream cheese mixture and warm.
  • Pour the mushroom flavored chicken broth into the cheese mixture and whisk until smooth (you may include the mushrooms in the casserole, but if your kids are picky like ours, you may opt to leave them out).
