These are baked bread sticks laced with cheese and just a hint of cayenne. I got this recipe from a newspaper, which stated the recipe is from 5 Spoke Creamery. Plan ahead, the dough has to refrigerate for at least 2 hours, which is included in the preparation time.

- In food processor, combine the flour, salt, cayenne and baking powder.
- Pulse several times to mix.
- Add the butter and cheese, then pulse for about 30 seconds, or until the ingredients are well mixed (it should resemble slightly moist flour).
- Add the sour cream and pulse on and off for about 1 minute, or until the ingredients come together as a moist, doughy clump.
- Remove the dough from the food processor, form into a ball, then cover in plastic wrap and refrigerate for at least 2 hours.
- Preheat oven to 425 degrees.
- Line a baking sheet with parchment paper, or coat it with cooking spray.
- On a lightly floured counter, roll out the dough into a large rectangle about 1/8-inch thick.
- Trim the edges to create a neat rectangle.
- Using a knife or a pizza cutter, cut the dough into strips 6 inches long and about 1/2 inch wide.
- Combine the scraps and repeat with remaining dough to make about 18-24 sticks.
- Gently twist each strip to create a spiral, then arrange them on the prepared baking sheet.
- Bake for 8 minutes, or until lightly browned.

- Add ingredients into your bread machine in the order given, excluding the egg white and water (glaze ingredients).
- Start machine on dough cycle.
- When the dough is ready turn out onto your countertop. You shouldn't need much flour.
- Cut dough into pieces the size of an egg and roll and stretch with your hands into 6 to 8 inch ropes. Place on an ungreased baking sheet.
- Cover with a tea towel and let rise 20 minutes.
- Mix the egg white and Tbsp water to make a glaze and brush over the breadsticks after they are risen. Add kosher salt, sesame seeds, or other toppings if you like.
- Bake at 400 degrees for 12 to 15 minutes until golden brown.
- Time includes the 2 hour dough cycle.
GARLIC CHEESE BREAD

- Preheat the oven to 375 degrees F.
- Mix the cheeses with the mayonnaise, 1/4 stick of the softened butter and the green onions. Add the salt and pepper to taste and set aside or keep in the fridge until you need it.
- Melt the remaining 1 stick butter in a skillet over medium-low heat and add the garlic. Cook for a couple of minutes to release the garlic flavor.
- Cut the loaf of bread in half. Brush the garlic butter over each half, making sure it's evenly distributed. Spread the cheese mixture on the loaves and bake until the cheese is hot and bubbly, about 10 minutes.
- Once out of the oven, sprinkle over the chopped parsley. Slice and serve.

- Add warm water,oil,3/4tsp salt,to a 1 1/2lb to 2lb bread machine.
- Add 2c.bread flour, parmesan cheese, Italian seasoning,1/2tsp black pepper, Monterey Jack cheese than add the last 1cup of bread flour.
- Make a hole in dough and add the yeast.
- Set machine to the dough cycle.
- After cycle has finished, punch dough down and cover and let rest 10 minutes.
- Divide the dough into thirds after rising.
- On a lightly floured surface, roll each portion into a 14x10-inch rectangle. Using a pizza cutter or sharp knife, cut the dough lengthwise into 1/2-inch-wide strips.
- For each breadstick, pick up 2 strips together and twist several times; press ends together.
- Place breadsticks 1/2 inch apart on greased baking sheets.
- Stir together egg white and water; brush onto breadsticks.
- Sprinkle with pepper, salt, and/or cheese.
- Bake in a 400 degree oven for 10 to 12 minutes or until golden brown.

- Make the dough: Whisk the sugar and 3/4 cup warm water (about 105 degrees F) in a bowl. Sprinkle the yeast on top and set aside until foamy, about 10 minutes. Stir in the vegetable oil. Whisk the flour and salt in a large bowl. Make a well in the center, pour in the yeast mixture and stir with a wooden spoon to make a shaggy dough. Turn out onto a generously floured surface and knead until smooth and elastic, about 5 minutes, dusting with more flour as needed. Form into a ball. Brush a large bowl with vegetable oil; add the dough, turning to coat with the oil. Cover tightly with plastic wrap and set aside at room temperature until doubled in size, about 1 hour, 30 minutes.
- Make the filling and topping: Toss 1/2 cup mozzarella, the cheddar, pecorino, garlic salt, granulated garlic and dried parsley in a bowl. Preheat the oven to 450 degrees F. - Add the wet and dry ingredients in the bread machine pan in the order recommended by your bread machine manufacturer.
- Close the lid and start the "Dough" cycle.
- Once "Dough" cycle completes, remove the dough on a lightly floured surface and knead for a few seconds.
- Roll the dough into about a 12 by 12 inch square.
- Cut it into 16 strips using a pizza cutter.
- Lift each strip and pinch it along the length from the bottom side and then roll with your palms into a smooth and even stick.

- In a large mixing bowl or the bowl of your stand mixer fitted with a hook attachment, combine the yeast and warm water. Stir it around and let sit for 5 minutes of until the yeast is foamy and dissolved. This is called “proofing” the yeast. If the yeast doesn’t dissolve, your yeast is dead. - Shape the dough into a ball and place in a large mixing bowl that has been coated lightly with olive oil. Turn it over to coat all sides. Cover tightly with plastic wrap and allow to rise in a warm environment (about 75F-80F). I simply placed my bowl on top of the oven as the garlic roasted, which warmed the oven’s surface. Depending on your type of yeast, your dough will have doubled in size in about 1 – 2 hours. I use Red Star Platinum and my dough took 1 hour, 20 minutes.
