BAKED MUSHROOM CHICKEN

Steps:
- Preheat your oven to 375 degrees f.
- Spray or brush a 9 x 13 baking dish with avocado oil.
- If your chicken breasts are thick, then slice them in half right down the center to create nice thin breasts so they cook evenly.
- Season the chicken with sea salt and pepper on both sides and add the flour to a shallow dish.
- Lightly coat your chicken on all sides with flour.
- Melt 1 Tablespoon of your ghee/butter in a large skillet over medium heat. Add in the chicken in 2 separate batches and cook for 2 minutes until golden brown then flip and cook for 2 minutes on the other side. Add the remaining 1 Tablespoon of butter for your second batch.
- Transfer your golden brown chicken to your prepared baking dish.
- In the same preheated skillet add in your mushrooms and sauté for 3-4 minutes.
- Add in the minced garlic and cook for 1 minute more.
- In a small bowl whisk the stock/broth together with 1 Tablespoon of flour until there are no visible lumps.
- Pour this stock mixture into your skillet and bring to a simmer, stirring to remove any brown bits from the bottom of the pan.
- Pour this mushroom sauce over the chicken in the baking dish then sprinklewith cheese.
- Bake for 15-17 minutes, or just until chicken is cooked through and cheese is melted.
- Sprinkle with freshly chopped parsley and serve hot.

- Flatten each chicken breast half to 1/4-in. thickness. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess. , In a large skillet, brown chicken in 2 tablespoons butter on both sides. Transfer to a greased 11x7-in. baking dish. In the same skillet, saute mushrooms in the remaining butter until tender. Add the broth, salt and pepper. Bring to a boil; cook until liquid is reduced to 1/2 cup, about 5 minutes. Spoon over chicken., Bake, uncovered, at 375° until chicken is no longer pink, about 15 minutes. Sprinkle with cheeses and green onions. Bake until cheese is melted, about 5 minutes longer.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish lightly.
- Sprinkle salt and pepper on chicken. Heat butter in a pan over medium-high heat. Add chicken and brown on all sides, 5 to 7 minutes. Remove chicken and place in the prepared baking dish.
- Stir mushrooms, onion, garlic, and flour into the remaining butter in the saucepan and saute over medium-high heat until softened, about 5 minutes. Add chicken broth and bring to a boil while scraping the "good stuff" off of the bottom of the saucepan, letting it add to the flavor. Cook until thickened to your liking; drizzle over chicken.
- Bake in the preheated oven for 30 minutes. Sprinkle with Parmesan cheese, mozzarella cheese, and scallions. Continue to bake until chicken is no longer pink in the center and cheese is melted, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

EASY BAKED CHEESY MUSHROOM CHICKEN

- Preheat oven to 375 degrees. Salt and pepper chicken breasts and evenly season with Italian seasoning. In a large skillet over medium high heat add the butter. Brown each side of the chicken and place in 9x13 inch baking dish.
- Add the mushrooms, and chicken broth and simmer until tender. Add to baking dish. Bake for 15 mins uncovered. Top with cheese and bake an additional 5 until cheese is melted and chicken is cooked throughout. Garnish with fresh chopped parsley.

- Preheat oven to 375F.
- Lightly grease a 9x13 baking dish with cooking spray and set aside.
- In a large skillet over medium-high heat, melt 1/2 tablespoon butter and add 1/2 tablespoon olive oil.
- Add sliced mushrooms and sliced onions to the skillet; season with salt and pepper, and cook for 5 minutes.
- Stir in the garlic and cook for 30 more seconds, or until fragrant.
- Transfer half of the mushrooms mixture to the prepared baking dish; set the rest aside for later.
- Return skillet to heat and add the rest of the butter and olive oil.
- Season the chicken breasts with salt, pepper, garlic powder, paprika, and Italian Seasoning.
- Add chicken breasts to the hot oil - you may have to do this in batches if skillet isn't big enough - and cook chicken breasts for 2 minutes per side, or until lightly browned.
- Remove chicken breasts from skillet and arrange over mushrooms in the baking dish.
- Return skillet to the stove; add chicken broth and scrape up the browned bits. Bring mixture to a boil and cook for 4 to 5 minutes, or until liquid is reduced.
- Top chicken breasts with the rest of the mushrooms mixture, add cheese over the chicken breasts, and pour in the prepared chicken broth.
- Bake uncovered for 15 minutes, or until chicken is cooked through.
- Remove from oven.
- Garnish with fresh parsley.
- Serve.

- Slice chicken breasts into strips.
- Dunk in buttermilk, then cover in breadcrumbs.
- Brown in skillet with olive oil.
- Cover and set aside.
- Sweat onions in skillet.
- Add mushrooms and sautee with white wine.
- Add garlic and reduce for 10 minutes.
- Add chicken stock and reduce for 5 minutes.
- Place browned chicken strips on top of mushrooms/onions and bake in 350 degree oven for 30-35 minutes.
- During last 5 minutes, cover with three cheeses.

This is a nice side dish, for almost any meal. Similar to a stuffing. Flavors are best when it is refrigerated several hours or even overnight before baking. Mushroom lovers can experiment with different mushrooms. More can be added of desired.

Steps:
- In large skillet, melt butter.
- Stir in celery, onion and mushrooms.
- Saute over low heat, stirring occasionally, until onions become translucent and mushrooms give up their liquid, about 10 minutes.
- In bottom of 2 quart buttered casserole, spread half of bread cubes.
- Top with half of mushroom mixture.
- Sprinkle with half of cheese.
- Repeat with remaining bread, mushrooms and cheese.
- In bowl, beat together eggs, milk, mustard, salt and pepper, Pour over layers in casserole.
- Refrigerate at least 3 hours or overnight before baking.
- Bake at 325 degrees, about 50 minutes, until custard is firm.

BAKED MUSHROOM CHICKEN I I
My friend Windy gave me this recipe the other day. It was easy to make and was a nice change to those recipes that call for a can of 'cream of this or that soup'. Friday's Pal has this recipe posted but she has a couple of extra ingredients in her's. I made extra when I fixed this so we are having it again tonight.

Steps:
- Flatten chicken if needed, as you want it to fry quickly.
- Put flour in a zip lock bag and coat the chicken lightly.
- Melt butter in a skillet and brown chicken about 2 minutes per side and place in a greased baking pan.
- I used my Pamper Chef's stone cake pan and did not have to grease it since my stone is nicely seasoned.
- Sauté mushrooms in the same skillet until tender.
- Add broth, salt and pepper to mushrooms and bring to a boil for 5 minutes. You want to reduce the liquid by about half of the original volume.
- Spoon over chicken and bake uncover in a 375-degree oven for 15 minutes.
- Sprinkle with cheeses and top with the green onions returning to the oven to bake for 5 more minutes.
