Steps:

  • Preheat oven to 375 degrees. Spray a 9x13 baking dish with non-stick cooking spray. Place chicken in baking dish.
  • Mix together salt, pepper, garlic, and Italian seasoning. Sprinkle a small amount over chicken breasts. Top with sliced provolone cheese.
  • In a medium bowl, blend together the remaining seasonings with mayonnaise, sour cream, and parmesan. Spread over provolone.
  • Bake for 45 minutes to 1 hour, or until chicken reaches an internal temperature of 165 degrees.

Cheesy chicken breasts have two kinds of cheese and a crunchy breadcrumb exterior and are baked in the oven for an easy weeknight family dinner!

4 (6-7 oz.) boneless, skinless chicken breasts
1 cup plain dry breadcrumbs
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/3 cup unsalted butter, melted
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Salt and black pepper

Steps:

  • Preheat the oven to 350. Spray a 9x12 casserole dish (or similar 3-quart casserole dish) with cooking spray and set aside.
  • In a low, shallow dish, combine the breadcrumbs and both cheeses.
  • In a small pan, melt the butter over medium-low heat. (Or microwave it in a small microwave-safe bowl for 1 minute, until melted.) Add the onion powder and garlic powder and mix well. Transfer to a second low, shallow dish.
  • Season the chicken breasts with salt and black pepper on both sides. Dip each chicken breast in the butter mixture to coat all sides then press into the cheesy breadcrumb mixture. Place the chicken breasts in the prepared pan.
  • Sprinkle some of the extra breadcrumbs over the chicken and press down to help it adhere. Drizzle some of the extra butter mixture over top of the chicken.
  • Bake at 350 for 35-45 minutes, until the chicken is cooked through. (It will depend on the size of your chicken breasts. I recommend using a digital thermometer.)
  • Serve hot and enjoy!

  • Pre-heat oven to 375 degrees and spray a 9x11 baking dish with non-stick cooking spray, set aside.
  • Place chicken breasts between 2 sheets of plastic wrap and pound with a meat mallet or rolling
  • pin until they are an even thickness.
  • Sprinkle both sides with salt and pepper.
  • Mix together your ranch dressing and breadcrumbs.
  • Add each of your flour, butter and breadcrumbs to their own shallow dishes.
  • Dip each chicken breast in the flour, then the melted butter and then the breadcrumbs

2 egg yolks
2 tablespoons water
1 sleeve Ritz crackers, (about 30 crackers)
1/3 cup all-purpose flour
1/2 teaspoon paprika
2 tablespoons grated Parmesan cheese
2 tablespoons butter
2 tablespoons butter

1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees and lightly grease a baking dish.

  • In a shallow bowl, whisk together egg yolks and water.
  • Pulse crackers in food processor until fairly fine crumbs are formed.

Steps:

  • Preheat the oven to 400 F.
  • Grease the bottom of the casserole dish with olive oil. I used the the oval casserole dish measured 13 inches x 9 inches x 4 inches deep.
  • Add chicken breasts to the casserole dish. Note about chicken: use 4 thin chicken breasts, or use 2 large thick chicken breasts, sliced in half horizontally each to make 4 thin chicken breasts.

1 garlic clove, minced
1/2 cup breadcrumbs

2 tablespoons of english whole grain mustard (I use whatever brown mustard I have on hand)
