I got this recipe from Good Housekeeping Magazine. It was a "Celeb Dish" recipe attributed to Alec Baldwin. I have not tried it yet, but it sounds good!

1 lb dried kidney beans
3 tablespoons vegetable oil
4 garlic cloves
3/4 cup sun-dried tomato, chopped
1 small onion, chopped (4 to 6 ounces)
1/2 teaspoon sweet paprika
1/8 teaspoon ground red pepper (cayenne)
1 1/2 cups white rice
1 1/2 teaspoons salt
1/2 teaspoon pepper

Steps:

  • In large bowl, place beans and enough water to cover by 2 inches.
  • Cover and socak for 8 hours.
  • Drain beans; transfer to 7-quart sacuepot.
  • Add enough water to cover by 2 inches.
  • Heat to boiling on high.
  • Reduce heat to medium-low; simmer 1 1/2 to 2 hours or until beans are tender.
  • Set sieve over large bowl.
  • Into sieve, drain beans; reserve liquid.
  • In same saucepot, heat oil on medijm-high.
  • Add 2 cloves garlic and cook 3 minutes; finely chop remaining garlic and reserve.
  • To saucepot, add sun-dried tomatoes, onion, paprika, ground red pepper, and beans.
  • Cook 3 minutes, stirring gently.
  • Add 4 cups reserved liquid and chopped garlic; heat to boiling.
  • Stir rice into bean mixture.
  • Cover and cook on low 25 to 30 minutes or until rice is cooked through, stirring occasionally.
  • Season with 1 1/2 teaspoons salt and 1/2 teaspoon freshly ground black pepper.

1 pound dried red kidney beans
8 cups vegetable or chicken stock, plus more as needed
2 tablespoons vegetable oil
1 large onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 1/2 pounds seasoning meats, such as tasso, ham ends, ham bone or pickled pork, chopped
1 clove garlic, chopped
1/4 cup liquid smoke
1/4 cup Worcestershire Sauce
2 tablespoons granulated garlic
1 tablespoon granulated onion
1 tablespoon freshly ground black pepper
1 tablespoon brown sugar, optional
2 to 3 dried bay leaves
Kosher salt
8 ounces pecan- or hickory-smoked andouille sausage, sliced on the bias
1 1/2 cups long-grain white rice
1/2 cup chopped green onions
1/2 cup roughly chopped fresh parsley
Louisiana-style hot sauce, for serving
Yellow or Creole mustard, for serving

Steps:

  • Put the beans in a large bowl and add enough stock to cover by about 1 inch. Cover and refrigerate for 24 hours. (Water is not recommended for soaking the beans as it adds nothing to the flavor and does not soften the beans quite as well as stock does.)
  • Add 1 tablespoon of the vegetable oil to a large saute pan over medium heat. Add the onions and cook until translucent, 2 to 3 minutes. Then add the celery and bell peppers, and cook until softened, slightly brown and giving off a pleasant aroma, about 3 minutes. Then add the seasoning meats and chopped garlic, and cook until browned, 4 to 5 minutes. Divide in half and reserve.
  • Remove the beans from the refrigerator (they will have expanded nicely and their skins should be bursting by now). Add the beans and soaking liquid to a large stockpot, and add additional stock to cover the beans by several inches.
  • Set the stockpot on the stove, bring it to a slight boil and reduce to a heavy simmer. Stirring vigorously, add the liquid smoke, Worcestershire sauce, granulated garlic, granulated onion, black pepper, brown sugar if using, bay leaves and half of the seasoning meat mixture. Simmer for 2 1/2 to 3 hours. (To get "New Orleans cream-style" beans, which are preferable, you can continue to simmer until the beans break down, about 1 hour more.) Season with salt, remove from the heat and let cool in the stockpot to room temperature. Refrigerate overnight. (The beans can be eaten after seasoning with salt, but refrigerating them overnight improves the flavor of the dish.)
  • Remove the stockpot from the refrigerator and gently reheat on the stove, stirring in 1/2 cup stock to loosen up the coagulated bean mixture. When the beans reach a boil, reduce to a heavy simmer, stirring frequently as to not let the beans at the bottom of the pot burn. Taste and adjust the seasoning as desired.
  • Heat the remaining 1 tablespoon vegetable oil in a small saute pan over medium heat. Add the andouille sausage and cook until brown on both sides, about 1 minute per side.
  • Bring 3 cups water to a boil in a small stockpot. Add the rice, bring it back to a boil and cook for 3 minutes. Cover the stockpot, remove from the heat and let steam for 15 minutes. Remove the lid and transfer the rice to a small baking sheet to cool slightly.
  • Reheat the remaining seasoning meat mixture. Divide the seasoning meat mixture, beans and andouille sausage among bowls, top with a scoop of rice, and sprinkle with the green onions and parsley. Serve with hot sauce and mustard.

Here's an incredibly easy one-pot vegan dish you can put together on a weeknight. For extra oomph, add more jalapeños and garlic, and don't forget to season with salt and pepper as you go. Black, or "forbidden", rice was used in the photo, but you can also use brown.

2 tablespoons extra virgin olive oil
1 medium onion, finely chopped
1 bell pepper, preferably red or yellow, stemmed, seeded and finely chopped
1 fresh or dried chile, like jalapeño or serrano, stemmed, seeded and minced
1 tablespoon minced garlic
1 1/2 cups cooked kidney or other red beans
1 1/2 to 2 cups parboiled black rice or long-grain brown or black (shown) rice (see recipe)
1 can coconut milk, about 1 1/2 cups
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
Salt and freshly ground black pepper
1/2 cup chopped parsley or fresh cilantro leaves.

Steps:

  • Preheat oven to 350 degrees. Put oil in a large ovenproof pot over medium heat. A minute later, add onion, bell pepper, chile and garlic. Cook, stirring occasionally, until onion is soft, about 5 minutes. Add beans and enough water to barely cover. Bring to a boil, then turn off heat. Use an immersion blender or a potato masher to semipurée beans in pot (leave at least half unpuréed).
  • Stir in rice, coconut milk, 1/2 cup water, thyme and a good amount of salt and pepper. (If you don't want a crust to develop, cover pot.) Bake until liquid is absorbed and rice is tender, 20 to 30 minutes. Taste and adjust seasoning, then sprinkle with parsley or cilantro and serve.

Steps:

  • Heat olive oil in heavy large Dutch oven over medium heat. Add sausage, onion and garlic and sauté until onion is brown, about 15 minutes. Mix in kidney beans with their juices, broth and Creole seasoning. Reduce heat to medium-low; cover and simmer until flavors are blended and mixture is very thick, stirring occasionally, about 45 minutes.
  • Divide cooked rice among large shallow soup bowls. Spoon bean mixture over rice and serve.

1 pound dry kidney beans
¼ cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic

6 cups water
2 bay leaves

¼ teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Steps:

  • Rinse beans, and then soak in a large pot of water overnight.
  • In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
  • Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.
