Time 10m

Number Of Ingredients 5

24 large strawberries
8 oz cream cheese softened
1 cup powdered sugar
1/4 cup sour cream
1 tsp vanilla extract

Steps:

  • Wash and dry strawberries. Cut the leaf side of strawberries flat so they sit properly on a plate. Cut each strawberry into 6 points but cutting about ¾ of the way through the strawberries - do NOT cut strawberries all the way down.
  • In a mixing bowl on high speed, beat cream cheese until smooth.
  • Mix in powdered sugar, sour cream, and vanilla. Beat until smooth.
  • Using an icing bag with a star tip, fill each strawberry with the cream cheese mixture. Serve immediately. The longer these sit, the more the filling will absorb the moisture from the strawberry and the filling will start running out.

Categories     Dessert

Time 20m

Yield 24 strawberries

Number Of Ingredients 5

24 fresh strawberries (1 1/2 to 2 lbs, depending on how much you fill them)
1 (8 ounce) package cream cheese, room temperature
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup fresh blueberries

Steps:

  • Cut the stems from the strawberries, so the strawberries can sit cut-side down.
  • Cut a deep "X" from the tip down, being careful not to cut all the way through.
  • Beat the cream cheese, powdered sugar, and vanilla in a bowl with a hand mixer until nice and fluffy.
  • Gently open up each strawberry and pipe the filling inside using a pastry bag or zip-top bag with a star piping tip. Don't have a pastry bag or piping tip? Just cut off the corner of a zip-top bag and squeeze the cheesecake filling inside the strawberries that way.
  • Top each filled strawberry with a blueberry. These are best served after the strawberries have been chilled for at least an hour. Store in an airtight container in the refrigerator up to 3 days depending on how firm/soft the strawberries are.

  • In a large mixing bowl, beat the cream cheese until smooth. Add the powdered sugar, sour cream, and vanilla extract; beat well.
  • Cut the top off the strawberries to remove the green stem and leaves and to make a flat surface so the strawberries can sit upright. Use a sharp knife to cut the strawberries in half vertically from the point of the strawberry down close to the base, but do not cut all the way through. Cut each half into 3 wedges (again, do not cut all the way through the base of the strawberry) to form a total of 6 petals. Place your finger down inside of the strawberry to make room for the filling to be piped inside.
  • Pipe the cheesecake filling into the center of the strawberry, filling enough that the petals flare out and the filling is visible between the petals and on top of the strawberry. Repeat with all of the strawberries.
