SOPAPILLA CHEESECAKE PIE
I make this to take to pot luck dinners and get rave reviews! Easy to make, smells great while cooking and tastes wonderful!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.
- Beat the cream cheese with 1 cup of sugar and the vanilla extract in a bowl until smooth.
- Unroll the cans of crescent roll dough, and use a rolling pin to shape each piece into 9x13 inch rectangles. Press one piece into the bottom of a 9x13 inch baking dish. Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough. Stir together 3/4 cup of sugar, cinnamon, and butter. Dot the mixture over the top of the cheesecake.
- Bake in the preheated oven until the crescent dough has puffed and turned golden brown, about 30 minutes. Remove from the oven and drizzle with honey. Cool completely in the pan before cutting into 12 squares.

- Spray large pan with pam.
- Preheat oven to 375 degrees.
- Put one roll of crescent rolls in bottom of pan. Try to keep them seamed together.
- Cream sugar, cream cheese, and vanilla together.
- Spread over rolls.
- Put the other can of crescent rolls on top.
- Melt the butter and pour on top.
- Bake for 15 min or until the rolls are golden brown. (they need to be golden brown).

- 1. Preheat oven to 350. Open one can of rolls and lay on bottom of 9x13 pan. Pinch seams together. Mix cream cheese, 1 cup sugar and vanilla in mixer. Spread cream cheese over rolls. Lay next can of rolls on top of cheese mixture. Melt your stick of butter and pour on top of your second layer of rolls. Sprinkle 1/4 cup sugar on top of the butter. Bake for 30 minutes or until golden brown. You can serve warm, but they are just as good cold. Don't forget to keep them refrigerated because of the cream cheese! You can top with strawberries or blueberries!! Yum!

- 1. Preheat oven to 375 degrees.
- 2. Spray 9X13 pan with non stick spray. Unroll one can of cresent rolls and place in pan. Seal up the holes and press to fit the entire bottom. Mix sugar, cream cheese and vanilla until well blended appox. 2 minutes. Spread on dough. Cover with 2nd can of rolls. Close up holes again and stretch to cover cream cheese mixture. Pour melted butter over top. Make sure it gets smeared over the entire dough, then sprinkle cinnamon sugar mixture over top.
- 3. Bake for 25-30 minutes until the dough is lightly browned. When removed from oven drizzle with honey. Allow to cool for at least 15 minutes. ENJOY!!!
- 4. Note: If you want to make 1/2 the recipe use an 8x8 inch pan.

- Unroll crescent dough; separate into 8 triangles on a baking sheet lined with parchment paper.
- In a small mixing bowl, combine cream cheese, 2 Tbsp. sugar, and 1 teaspoons vanilla. Mix until smooth.
- Fold in blueberries.
- Fill each crescent triangle with approximately ¼ cup filling. My note: (you may want to measure out 8 servings of this mixture in a separate dish so you don't run out. If needed add extra blueberries to make 8 separate fillings for the rolls).
- Fill each crescent triangle with approximately ¼ cup filling.
- Tuck edges to seal. My note: Gently form them into rectangles.
- In a separate bowl, combine flour, 2 Tbsp. butter, and 2 Tbsp. sugar. Mix until crumbly.
- Divide evenly among crescent rolls and sprinkle on top of each roll.
- Bake at 375 degrees for 12-15 minutes or until light golden brown. Check the bottoms at 9 minutes and watch carefully.

- Preheat the oven to 350 degrees F (175 degrees C).
- Unroll one can of crescent roll dough. Place in the bottom of an ungreased 9x13-inch (3-quart) glass baking dish. Stretch to cover the bottom of the dish, firmly pressing perforations to seal.
- Beat cream cheese and 1 cup of sugar in a bowl with an electric mixer on medium speed until smooth. Beat in vanilla extract. Spread cream cheese mixture over dough in the baking dish.
- Unroll the second can of dough. Firmly press perforations to seal. Carefully place on top of the cream cheese layer. Pinch seams together and pour melted butter evenly over the top.
- Mix remaining 1/2 cup sugar with cinnamon and sprinkle evenly over the butter.
- Bake in the preheated oven until bars appear set when gently shaken, 30 to 35 minutes. Cool slightly for 30 minutes. Place in the refrigerator for 30 minutes to make cutting easier.
- Cut into 4 rows by 3 rows. Cover and store any leftover bars in the refrigerator.
