CHEESEBURGER POTATO SOUP

4 sesame seed burger buns, cut into 3/4-inch pieces
1 tablespoon flavorless oil
Kosher salt and freshly ground black pepper
3 slices bacon
1 pound ground beef (93 percent lean)
Kosher salt and freshly ground black pepper
1 medium onion, finely chopped
2 large carrots, finely chopped
2 stalks celery, finely chopped
3 cloves garlic, finely chopped
2 teaspoons mustard powder
2 pounds russet potatoes, diced
6 cups low-sodium chicken stock
1/3 cup chopped fresh parsley
1/4 cup heavy cream
10 ounces shredded Swiss cheese
2 tablespoons pickle brine plus 1/2 cup chopped pickles
Ketchup, for garnish
Mayonnaise, for garnish

Steps:

  • For the toasted sesame buns: Set the oven to broil. Toss the sesame bun chunks on a sheet pan with the oil and a pinch of salt and pepper. Broil until golden brown, about 5 minutes.
  • For the cheeseburger potato soup: In a large Dutch oven, cook the bacon over medium heat until crispy, about 7 minutes. Remove to a paper towel lined plate to cool, then roughly chop. Set aside.
  • Add the beef and a pinch of salt to the Dutch oven and cook, breaking up with a spoon, until browned, 4 to 5 minutes (it will continue to cook through). Add the onion, carrot, celery and a good pinch of salt and pepper and cook until translucent, about 10 minutes. Add the garlic and mustard powder and cook for another minute. Add the potatoes, stock, parsley, 1 1/2 teaspoons salt and a bunch of turns of pepper and bring to a boil, then simmer until the potatoes are tender (pierce with a fork to check), 30 to 40 minutes.
  • Add the heavy cream and 8 ounces cheese and stir until the cheese is melted.
  • Finish the soup with the pickle brine. Taste and adjust for seasoning as desired. Ladle the soup into bowls, then top with some of the remaining shredded cheese, pickles, bacon, a drizzle of ketchup, mayo if you're freaky, and toasted sesame buns.

CHEESEBURGER MEATLOAF

Nonstick cooking spray, for the pan
6 slices Texas toast, cubed
1/2 cup milk
2 pounds ground beef
6 strips crisp cooked bacon, chopped
2 large eggs
2 red onions; 1 finely chopped and 1 thinly sliced
1 cup plus 2 tablespoons ketchup
1/4 cup plus 1 tablespoon mustard
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 ounces Cheddar, cut into small cubes, plus 1 cup grated Cheddar
1/4 cup grated yellow onion (from about 1/2 onion)
Dill pickle chips, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
  • Mix together the bread and milk in a bowl and set aside.
  • Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
  • Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
  • Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
  • Slice and serve with the sliced red onions and dill pickle chips.

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Add the vegetable oil, then add the onion, ground beef, 1/2 teaspoon salt and a few grinds of pepper. Cook, undisturbed, until the beef starts to develop a crust, 1 to 2 minutes. Flip with a spatula, breaking up the meat. Continue cooking until browned, about 30 more seconds. Stir in the pickled peppers, then arrange the cheese over the meat mixture; remove from the heat and let melt.
  • Spread the mayonnaise on both sides of the rolls. Divide the beef among the roll bottoms using a spatula. Top with lettuce, tomatoes, ketchup, hot sauce and the roll tops. Serve with potato chips.

Serve it with shredded lettuce on the side to complete the burger experience and make this a "one-crust" meal that comes to the table in an hour flat.

12 ounces ground beef
1 tablespoon yellow mustard, plus more for serving
Kosher salt and freshly ground black pepper
All-purpose flour, for dusting
1 pound refrigerated pizza dough
1 tablespoon vegetable oil
2 teaspoons sesame seeds
2 cups shredded American cheese (about 8 ounces)1/4 whole dill pickle, sliced into thin rounds
1/4 small red onion, finely diced, then rinsed and drained
Ketchup, for serving
Shredded lettuce, for serving, optional

Steps:

  • Place a baking stone or inverted large baking sheet on the lowest rack of the oven and preheat to 450 degrees F.
  • Cook the beef in a medium skillet over medium heat just until no longer pink, about 4 minutes. Using a slotted spoon, transfer the beef to paper towels to drain and let cool 5 minutes. Put the cooled beef in a bowl, stir in the mustard to coat and sprinkle with some salt and pepper.
  • Dust a sheet of parchment paper set on a pizza peel or inverted baking sheet with some flour. Stretch the pizza dough into a round (12 inches for thick or 14 inches for thinner) on the parchment and brush the edge of the round with the oil, then sprinkle it with the sesame seeds. Sprinkle 1 1/2 cups cheese evenly over the dough, leaving a 1/2-inch border. Top with the beef, then sprinkle the remaining 1/2 cup cheese over the beef.
  • Slide the pizza off the parchment onto the hot stone or baking sheet and bake until the crust is golden and the cheese is bubbling, about 15 minutes. Transfer to a cutting board, arrange the pickle slices evenly over the pizza then sprinkle with the onions. Drizzle mustard and ketchup over the pizza and serve while hot with shredded lettuce on the side.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
  • Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes.
