RECIPE: VEGETABLE SUPREME EGG BAKE



Recipe: Vegetable Supreme Egg Bake image

This breakfast casserole is a delicious way to add more veggies to your day. Spinach, peppers, potatoes, and mushrooms all make an appearance!

Number Of Ingredients 11

1 tablespoon olive oil, plus more for the baking dish
8 ounces sliced white or brown mushrooms
2 cups shredded carrots
5 ounces baby spinach (about 5 packed cups)
2 cups frozen diced potatoes (do not thaw)
1 cup roasted red pepper strips
2 cups shredded sharp cheddar cheese
12 large eggs
2 cups half-and-half
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Arrange a rack in the middle of the oven and heat to 375°F. Coat a 9x13-inch baking dish with olive oil; set aside.
  • Heat the 1 tablespoon of oil in a large frying pan over medium-high heat until shimmering. Add the mushrooms and carrots and cook, stirring occasionally, until tender, about 5 minutes. Add the spinach and toss until wilted and almost all of the liquid is evaporated, about 5 minutes. Remove from the heat and stir in the potatoes and red peppers.
  • Transfer to the baking dish and spread into an even layer. Sprinkle evenly with the cheese. Whisk the eggs, milk, salt, and pepper together in a large bowl. Pour over the vegetables.
  • Bake until the top is slightly golden-brown and a knife inserted in the middle comes out clean, 50 to 55 minutes. Let cool for 5 minutes before slicing and serving.

Baked Eggs With Beans and Greens image

Consider this a heartier version of the classic Italian dish "eggs in purgatory," which works well for breakfast, lunch or dinner. It's also very forgiving. If you'd rather keep this a vegetarian meal, skip the sausage. No chickpeas? No problem. Any white bean will work well in its place. Same with the greens. Use what you have (anything that wilts works). Sprinkling the dish with grated cheese before serving is not required, but it sure does taste good. Serve with thick slices of toasted sesame bread slathered with plenty of softened butter.

2 tablespoons olive oil
1/2 pound sweet or spicy Italian sausage, casings removed (optional)
1 medium yellow onion, thinly sliced
1 (15-ounce) can chickpeas or white beans, drained and rinsed
2 garlic cloves, finely chopped
Kosher salt
1 (28-ounce) can whole tomatoes, gently crushed by hand
4 cups stemmed and packed roughly chopped greens such as spinach, kale or Swiss chard
6 large eggs
Black pepper
2 tablespoons mixed herbs, such as Italian parsley and basil, for garnish
Grated cheese, such as pecorino or Parmesan, for serving (optional)

Steps:

  • Heat the oven to 375 degrees. Heat the olive oil in a 12-inch ovenproof skillet over medium heat. If using the sausage, add to the pan and cook, breaking it into 1/2-inch pieces, by pressing with the back of spatula or wooden spoon until crisp and cooked through, about 8 minutes. Remove with a slotted spoon and set aside.
  • Add the onion to the skillet and cook until softened, about 3 to 5 minutes. Add the chickpeas and the garlic and cook until the garlic is fragrant, about 1 minute. Season with salt. Add the sausage back to the pan along with the tomatoes and stir to combine. Bring to a simmer and gradually add in the chopped greens by the handful, tossing together until wilted. Season with salt.
  • Using a spoon, create hollows in the sauce and gently crack the eggs into each, and season the eggs with salt and pepper. Transfer to the oven and cook until the eggs are set, about 7 to 9 minutes. Scatter the herbs on top along with a tablespoon or two of grated cheese, if using.

10 large eggs
1 cup whole milk
1 1/2 teaspoons salt
1/2 teaspoon black pepper
5 oz Swiss cheese, coarsely grated (1 1/2 cups)
10 oz cremini mushrooms, trimmed and coarsely chopped (1/4-inch pieces)
1 large sweet potato (8 to 10 oz), peeled and coarsely chopped (1/4-inch pieces)
1 large shallot, halved and thinly sliced
3 tablespoons olive oil

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 450°F. Butter a 2-quart shallow baking dish (about 2 inches deep).
  • Whisk together eggs, milk, 3/4 teaspoon salt, and 1/4 teaspoon pepper until smooth, then whisk in cheese. Pour into baking dish. Bake in upper third of oven until puffed, golden, and set, about 20 minutes.
  • Meanwhile, toss together mushrooms, sweet potato, shallot, oil, and remaining 3/4 teaspoon salt and 1/4 teaspoon pepper in a 17- by 13- by 1-inch baking pan. Spread vegetables in an even layer, then roast in lower third of oven while eggs are baking, stirring twice after 10 minutes, until tender and golden brown, about 18 minutes.
  • Serve eggs with roasted vegetables spooned on top.

  • In a small bowl, combine the eggs and milk. Add green pepper, onions, salt and pepper. Pour into a lightly greased skillet. Cook and stir over medium heat until eggs are nearly set, 2-3 minutes. Add tomato; cook and stir until eggs are completely set.
