"I've loved it since I was a kid, and now it's one of my husband's favorites, too." TIP: "For added convenience, use frozen diced green pepper and onions," advised Becky.

1 pound ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 cup cooked long grain rice
1 can (8 ounces) tomato sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese
8 pita pocket halves

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Add the rice, tomato sauce, Worcestershire sauce, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes. , Stir in cheese; cover and cook 2-3 minutes longer or until cheese is melted. Spoon mixture into pita pockets.

I found this in quick and easy style cookbook a long time ago. It literally takes only 15 minutes from start to finish to make! I made changes that my family likes and this is what I ended up with. My family really likes to make these as well and eat them. The kids have tons of fun making their own.

1/2 teaspoon dried basil (optional)
pizza toppings, of your choice
1 cup shredded mozzarella cheese
4 tablespoons parmesan cheese
1 dash red pepper flakes (as desired)

Steps:

  • Lay out pita bread on a cookie sheet.
  • Spread 3 Tbsp sauce onto each pita.
  • Sprinkle 1/8 tsp of oregano and basil onto each pita.
  • Top with desired toppings
  • Top with 1/4 cup of shredded mozzarella cheese and 1 Tbsp of parmesan cheese on each pita.
  • Add red pepper flakes if desired.
  • Broil in oven on second shelf position for about 4-5 minutes.

  • Heat oven to 450 degrees F. Heat a large skillet over medium heat. Add the beef and cook, breaking it up with a spoon, until no longer pink, 3 to 4 minutes. Remove from heat and stir in the ketchup, Worcestershire, mustard, and 1/4 teaspoon pepper.
  • Place the pita breads on 2 baking sheets. Spread the pizza sauce over the pitas, leaving a 1/2-inch border. Top with the onion, then the beef, tomatoes, and cheese. Bake until crusts are golden brown and crisp, 10 to 12 minutes. Top with the arugula.

1 tablespoon yellow mustard, plus more for serving
Kosher salt and freshly ground black pepper
All-purpose flour, for dusting
1 pound refrigerated pizza dough
1 tablespoon vegetable oil
2 teaspoons sesame seeds
2 cups shredded American cheese (about 8 ounces)1/4 whole dill pickle, sliced into thin rounds
1/4 small red onion, finely diced, then rinsed and drained
Ketchup, for serving
Shredded lettuce, for serving, optional

Steps:

  • Place a baking stone or inverted large baking sheet on the lowest rack of the oven and preheat to 450 degrees F.
  • Cook the beef in a medium skillet over medium heat just until no longer pink, about 4 minutes. Using a slotted spoon, transfer the beef to paper towels to drain and let cool 5 minutes. Put the cooled beef in a bowl, stir in the mustard to coat and sprinkle with some salt and pepper.
  • Dust a sheet of parchment paper set on a pizza peel or inverted baking sheet with some flour. Stretch the pizza dough into a round (12 inches for thick or 14 inches for thinner) on the parchment and brush the edge of the round with the oil, then sprinkle it with the sesame seeds. Sprinkle 1 1/2 cups cheese evenly over the dough, leaving a 1/2-inch border. Top with the beef, then sprinkle the remaining 1/2 cup cheese over the beef.
  • Slide the pizza off the parchment onto the hot stone or baking sheet and bake until the crust is golden and the cheese is bubbling, about 15 minutes. Transfer to a cutting board, arrange the pickle slices evenly over the pizza then sprinkle with the onions. Drizzle mustard and ketchup over the pizza and serve while hot with shredded lettuce on the side.

David came up with this recipe yesterday for our oldest son's return from Band Camp. Our son said the camp food was something akin to packing materials and was nothing but sheer torture! In honor of our son the family burger fiend and since David was making pita pizzas anyway, he decided to combine the two into this recipe. Needless to say, our son absolutely devoured the cheeseburger pita and asked for more the next day. We hope you all enjoy it as much as he did! (But do try to eat it a little more slowly, okay? ;D)

6 whole wheat pita bread (not split)
1 lb lean ground beef or 1 lb extra lean ground turkey
2 teaspoons onion powder
2 teaspoons granulated garlic (or to taste)
1/2 teaspoon black pepper
3 tablespoons catsup
3 tablespoons barbecue sauce (we like KC Masterpiece)
6 ounces cheddar cheese, shredded (or to taste)
1 small onion, chopped
12 dill pickle slices (optional)
vegetable oil

Steps:

  • Preheat oven to 400 degrees.
  • Saute ground meat with onion powder, granulated garlic, and black pepper until brown.
  • Assemble as follows:.
  • Lightly cover one pita with 1 tbsp catsup and 1 tbsp barbeque sauce.
  • Layer 1 oz shredded cheese over sauce.
  • Layer 1/3 meat on top of cheese.
  • Layer 1/3 onion on top of meat.
  • Layer 1 oz shredded cheese on top of onion.
  • Add sliced pickles, if desired.
  • Top with a second pita brushed with vegetable oil.
  • Place assembled sandwiches on ungreased baking sheet. Bake 10 minutes or until top pita is golden brown.
  • Remove from baking sheet and place on cooling racks. Let rest 5 minutes.
  • Cut sandwiches in half and serve warm.

8 ounces ground beef
3/4 cup finely chopped red onion
1/2 teaspoon Montreal steak seasoning
3 tablespoons mayonnaise
3 tablespoons ketchup
3 pitas*
2 ounces (about 1/2 cup) shredded mozzarella cheese, shredded
2 ounces (about 1/2 cup) cheddar cheese, shredded
Optional toppings: 6 grape tomatoes, thinly sliced; 6 dill pickle chips, quartered; shredded lettuce (a few tablespoons per pita)

Steps:

  • Place a pizza stone or heavy baking sheet in the oven. Preheat the oven to 400 degrees F. While the oven preheats, heat a nonstick skillet over medium heat. Add the beef and onion, and sauté until the beef is browned and the onion is tender. Crumble the meat and sprinkle with the steak seasoning as the mixture cooks. Remove the pan from heat. For the sauce: combine the mayonnaise and ketchup in a small bowl, stirring to fully blend. Spread the mixture evenly over the pita rounds, leaving a small border. Distribute the beef mixture evenly over the sauce on each pita, and then evenly sprinkle the cheeses over the beef. If using, top with the tomato slices and pickles. Carefully transfer to the baking sheet or stone and bake for 8 minutes, give or take a minute or two, or until the pizzas are hot throughout and the cheese is completely melted. Remove from the oven, and sprinkle with lettuce, if using. Cut the pizzas into 4 wedges each and enjoy.

1 tablespoon extra-virgin olive oil, plus more for brushing and drizzling
Kosher salt and freshly ground pepper
3 cups baby arugula
1/2 cup pitted kalamata olives, roughly chopped
1 tablespoon fresh rosemary, roughly chopped
1 large red onion, cut into 1-inch-thick rounds
4 6-to-8-inch pocketless pitas
1/2 cup ricotta cheese
1/4 pound part-skim mozzarella cheese, diced
Pinch of red pepper flakes

Steps:

  • Core the tomatoes and halve them crosswise, then squeeze the juices and seeds into a large bowl. Whisk in 1 tablespoon olive oil and season with salt and pepper. Add the arugula but don't toss; set aside. Dice the tomatoes and toss in a separate bowl with the olives and rosemary.
  • Preheat a grill to medium high. Brush the onion rounds with olive oil and season with salt. Grill until soft, 3 to 4 minutes per side. Transfer to a plate and separate the rings. Reduce the grill heat to medium.
  • Brush both sides of the pitas with olive oil and grill until marked, 2 to 3 minutes per side. Top with some of the tomato-olive mixture, ricotta, mozzarella and onion. Cover and grill until the cheese melts, 2 to 3 minutes.
  • Toss the arugula with the dressing and pile on top of the pitas. Season with salt and the red pepper flakes and drizzle with olive oil.

1 small finely chopped red bell pepper

1/4 cup grated sharp low-fat cheddar cheese
