GRILLED PORTERHOUSE STEAK

Grilled Porterhouse Steak image

Grilled Porterhouse Steak with an optional gremolata-style marinade made with lemon, parsley, and garlic.

Provided by Philip and Kelly Anthony

Categories     Dinner     Main Course

Time 1h19m

Number Of Ingredients 11

3/4 cup freshly squeezed lemon juice (about 6-8 lemons)
2 cups roughly chopped Italian parsley (leaves and stems (about 1 bunch))
1/2 white onion (roughly chopped)
5 large cloves of garlic (roughly chopped)
1 tablespoon Kosher salt
1 tablespoon black pepper
1/2 cup canola or avocado oil
2 (1 1/2" thick) Porterhouse steaks
2 tablespoons canola or avocado oil
2 teaspoons Kosher salt
1 teaspoon black pepper

Steps:

  • Add the lemon juice, parsley, white onion, garlic, salt, and pepper as well as a 1/4 cup of water to a mixing bowl and stir to combine. Slowly drizzle in a 1/2 cup of oil, whisking with the tines of a fork to combine.
  • Place the steaks in a gallon-sized ziptop bag, pour over the marinade, and seal tightly. Refrigerate for at least 1-4 hours, but no more than 8 hours.
  • Set the steaks out at room temperature for 30 minutes prior to grilling. Remove from the bag and pat dry with a paper towel. Drizzle with 2 tablespoons of oil and sprinkle 2 teaspoons Kosher salt and 1 teaspoon pepper amongst the steaks. Rub all over to adhere, and set aside until ready to use.
  • Prepare a gas or charcoal grill and bring to medium-high heat. To test whether or not your grill is hot enough, (carefully) hold your hand about 6" from the grate. It should be so hot, that you have to move it by the count of 3.
  • Add the beef to the grill. For medium-rare steaks, cook for about 6 minutes on the first side, then flip, and cook for about 5 minutes more.

BEEF STEAK MARINADE

Beef Steak Marinade image

Recipe video above. This is a marinade to transform good value steaks by making them juicier, more tender and adding a hint of flavour while not overpowering the flavour of the beef. With this marinade, you won't need a sauce for the beef, though I can never resist some garlic butter!

Provided by Nagi | RecipeTin Eats

Categories     Mains

Time 12h10m

Number Of Ingredients 9

2 steaks (, economical (Note 1))
1 tsp Dijon mustard
1/2 tsp minced garlic ((1 large garlic clove))
1/2 tsp onion powder ((or sub with garlic powder))
1 tbsp soy sauce ((Note 2))
1 tbsp oil ((I use olive oil, but any oil is fine))
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
Black pepper

Steps:

  • Mix together mustard, garlic and onion powder. Then mix in remaining ingredients.
  • Place beef in a ziplock bag with Marinade and marinade overnight (12 - 24 hours).
  • Remove from the fridge 30 minutes before cooking to bring to room temperature - key for even cooking of steaks. Shake off excess marinade.
  • Brush BBQ Grills with oil, then heat on high heat until is really hot - you should see wisps of smoke. Or heat a heavy based skillet on high until very hot, then add oil - it will heat almost instantly.
  • Add steaks. For 2cm / 3/4" thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes (medium rare 52°C/125°F, chart below for other doneness temps). (Note 3)
  • Remove from skillet onto a WARM plate, cover loosely with foil and set aside for 5 minutes.
  • Serve! I couldn't resist garlic butter - see recipe in notes.

BEER AND BROWN SUGAR STEAK MARINADE

Beer and Brown Sugar Steak Marinade image

I concocted this marinade on a lark and it turned out great. The flavors complement and do not overwhelm the natural taste of beef.

Provided by Craig Jones

Categories     Meat and Poultry Recipes     Beef     Steaks     Sirloin Steak Recipes

Time 1h10m

Yield 4

Number Of Ingredients 7

2 (16 ounce) beef sirloin steaks
¼ cup dark beer
2 tablespoons teriyaki sauce
2 tablespoons brown sugar
½ teaspoon seasoned salt
½ teaspoon black pepper
½ teaspoon garlic powder

Steps:

  • Preheat grill for high heat.
  • Use a fork to poke holes all over the surface of the steaks, and place steaks in a large baking dish. In a bowl, mix together beer, teriyaki sauce, and brown sugar. Pour sauce over steaks, and let sit about 5 minutes. Sprinkle with 1/2 the seasoned salt, pepper, and garlic powder; set aside for 10 minutes. Turn steaks over, sprinkle with remaining seasoned salt, pepper, and garlic powder, and continue marinating for 10 more minutes.
  • Remove steaks from marinade. Pour marinade into a small saucepan, bring to a boil, and cook for several minutes.
  • Lightly oil the grill grate. Grill steaks for 7 minutes per side, or to desired doneness. During the last few minutes of grilling, baste steaks with boiled marinade to enhance the flavor and ensure juiciness.

CUTS OF STEAK, RANKED WORST TO BEST - MASHED.COM

From mashed.com
Estimated Reading Time 6 mins
  • Ribeye steak. And now, the best of them all: Ribeye steak. This cut of beef is taken from the rib of the cow (of course) and is easily one of the most prized and sought-after varieties of steak out there.
  • Tenderloin steak. Ah, tenderloin. Now we're in the big leagues. The tenderloin is cut from the short loin of the cow, and, because of the nature of the muscle it derives from, contains very little connective tissue.
  • Hanger steak. Hanger steak isn't the most popular cut of beef out there. You certainly won't find it up on the fancy steakhouse menus with filet mignon, ribeye or porterhouse.
  • Porterhouse steak. Okay, maybe you can do a little better. To all but the most discerning eye, the porterhouse steak is pretty much the exact same cut of steak as the T-bone steak.
  • Flat iron steak. Also known as butler's steak or boneless top chuck steak, flat iron steak is a relatively modern cut of beef as far as butchering techniques go.
  • T-bone steak. A T-bone steak is cut from the forward section of the short loin on a steer, and contains both a strip of top loin (i.e. a strip steak) and a nice big slab of tenderloin.
  • Top sirloin. Now we come to the other part of the sirloin, and by far the better choice for steak fans. The top sirloin comes from — you guessed it — the upper portion of the sirloin butt, and is usually presented in the form of a tender, boneless steak.
  • Vacio or bavette steak. One of the steaks you might not have heard of is the vacio steak, an extremely popular steak in Argentina (but it's available here too).
  • Strip steak. Otherwise known as the New York strip, the ambassador steak, the strip loin steak, the Kansas City strip, the club steak, the Omaha steak, or whatever other name you care to give it, the strip steak is a cut of meat that comes from the short loin, which is located in the top-center of the cow's body, just in front of the sirloin.
  • Bottom sirloin. The sirloin is one of the most famous cuts of beef, but it's actually generally divided up into three smaller cuts: the top sirloin, the bottom sirloin, and the rear part of the tenderloin.
