CHEESE & SPINACH STUFFED MEATLOAF

Cheese & Spinach Stuffed Meatloaf image

This is one of the best meatloaf I have ever had and it is simple to make! A little note - You can use any mixture you like for the meatloaf itself.

Provided by Little Italian Prin

Categories     Cheese

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 lb ground beef (or any meatloaf mix you like!)
2 eggs
1/2 cup breadcrumbs
2 tablespoons italian seasoning
1/4 cup chili sauce
2 teaspoons salt
2 teaspoons pepper
2 teaspoons garlic (powder or salt)
1/4 cup chopped onion
8 -12 ounces cooper sharp cheese (I like the sharp cheeses, alter depending on your own taste)
1 frozen chopped spinach
1 (8 ounce) can tomato paste

Steps:

  • Preheat Oven to 350 degrees.
  • Mix meatloaf ingredients in a large bowl.
  • Flatten meatloaf mix on a piece of wax paper, mix should be in a rectangle shape about 1/2 thick in wax paper.
  • Cut cheese in thin slices and place on top of meatloaf mix (being sure to leave about a 1/2 inch without cheese around perimeter).
  • Microwave frozen spinach according to package information, then drain.
  • Place spinach on top of cheese making sure to leave perimeter empty.
  • Take on side of wax paper and roll meatloaf carefully, being sure not to let meatloaf crack while rolling.
  • After you have rolled the meatloaf pinch the edges to ensure that the cheese/spinach does not leak out while cooking.
  • Cover entire meatloaf with the can of tomato paste. (You may want to add some italian seasoning to the tomato paste as it is slightly bland).
  • Bake covered for about 35 - 45 minutes or until desired temperature.

Categories     Main Dish Recipes

Time 1h15m

Number Of Ingredients 13

2 lb ground beef, 80/20 ground chuck
1/4 cup almond flour, nutritional yeast, or breadcrumbs
1/2 tsp onion powder
1 tablespoon Italian seasoning
2 garlic cloves
2 tsp salt
1/2 tsp pepper
2 eggs
1 Tbsp tomato paste
1/3 cup ketchup (use sugar-free if following keto or low sugar diet)
6 oz mozzarella, grated
3 oz salami, thinly sliced
8 oz frozen spinach, thawed and squeeze dried

Steps:

  • Preheat oven to 350° F. Spray a standard size bread loaf pan with nonstick spray.

  • Using your hands or a spoon, mix ingredients until they are well incorporated.
  • On a long piece of parchment (approx. 18" to 20"). Press the meatloaf into a rectangle that is as wide as your pan (around 8" to 9" is standard), and at least 10" to 13" long. Take care to make sure the meatloaf mixture is pressed together really well.

  • Preheat the oven to 400°. In a saucepan of boiling salted water, cook the carrots until tender, 7 minutes. Using a slotted spoon, transfer to a plate. Add the spinach to the boiling water and cook just until wilted; drain well and add to the carrots.
  • In a large bowl, combine the beef with the pork, 2 cups of the bread crumbs, the pecorino, eggs, 1 teaspoon of salt and 1/2 teaspoon of pepper; mix well with your hands.
  • Line a work surface with a 15-inch-long sheet of plastic wrap. In a bowl, mix the flour with the remaining 1/2 cup of bread crumbs. Sprinkle half of the crumb mixture all over the plastic wrap. Transfer half of the meat loaf mixture to the plastic and press it into a 12-by-10-inch rectangle, about 1/2 inch thick. Lay half of the spinach leaves over the meat, leaving a 1-inch border on the short sides. Arrange half of the carrots over the spinach, and top with half the prosciutto and sliced cheese. Starting from the long end of the plastic wrap closest to you, tightly roll up the meat loaf, tucking in the filling and using the plastic wrap to guide you; discard the plastic. Repeat with another 15-inch sheet of plastic and the remaining bread crumbs, meat mixture, spinach, carrots, prosciutto and cheese. Drizzle each meat loaf with 2 tablespoons of oil.
  • Put the rosemary sprigs in the bottom of a broiler pan and pour in the red wine. Cover with the broiler pan grate. Set the meat loaves about 2 inches apart on the grate. Bake in the center of the oven for 40 minutes. Turn the broiler pan around and pour the water through the grate. Continue baking for about 35 minutes longer, or until an instant-read thermometer inserted in the center of each meat loaf registers 165°.

  • Position rack in middle of oven. Preheat oven to 350°F/180°C. Have a large rimmed half-sheet baking pan ready to use.
  • Place spinach in a large pot and sprinkle with a little water. Cover and heat over low heat until spinach wilts and is tender, about 5 minutes. Drain in colander and press the spinach very firmly with the back of a sturdy spoon. Scrape into a clean tea towel and wring dry over the sink - there will be a lot of liquid exuded and you want the spinach as dry as possible. Set aside.
  • In a large bowl place the beef, breadcrumbs, Fody Marinara Pasta Sauce, scallions, parsley, eggs, oil, basil, oregano and red pepper flakes. Season with salt and pepper then use hands to bring the mixture together until very well mixed.
  • Lay a large piece of parchment on your work surface. Pat the meatloaf mixture out to approximately a 15-inch wide by 10-inch (38 cm by 25 cm) tall rectangle. Lay the slices of Provolone in a single layer all over the meat. Make a horizontal ribbon of spinach in the center of the rectangle. Scatter the chopped red pepper on either side of the spinach. Use your hands to pick up the near, long edge of parchment and use it to begin rolling up the meatloaf, jellyroll style - take care not to role the paper up with the meatloaf! Use the paper to help transfer the meatloaf onto your large rimmed baking sheet pan, on the diagonal to fit, and seam side down. Use hands to gently firm it if necessary.

  • Here's a thought for meatloaf-lovers: mix some minced beef and pork sausage meat, roll it around a filling of spinach and mozzarella, bake until crusty, then serve with home-made tomato sauce. Serve with a pile of steamed green beans, or roast halved brussels sprouts and chunks of potato alongside the meatloaf until golden.
  • Heat oven to 200C. Soak bread in milk for 10 minutes, then lightly squeeze dry. Cook spinach in very little water until wilted, then drain, squeeze dry and roughly chop. Mix spinach with diced mozzarella, parmesan, salt and pepper.
  • In a large bowl, combine bread with minced beef, sausage meat, tomato paste, oregano, cayenne, nutmeg, parsley, salt and pepper. Add egg and knead until well mixed. Shape mixture into flat rectangle (22 x 28-centimetres) on large sheet of baking paper. Scatter spinach and cheese on top and use baking paper to form tight roll. Flip roll over so join is underneath and pat ends to seal.
  • Transfer, with baking paper, to a baking tray, add wine or water to the pan and bake for one hour until lightly browned. Cut into slices and serve with home-made tomato sauce and parsley.
