SKILLET PIZZA
This Skillet Pizza is made supreme style, topped with a colorful mix of pepperoni, bell peppers, onions, mushrooms, and olives.

Steps:
- If using store-bought pizza dough, allow to sit at room temperature for 30 to 45 minutes.
- Place oven rack in the center position and preheat oven to 475ºF (246ºC).
- Place a 12-inch cast-iron skillet in the oven to heat.
- Lightly flour a work surface, the dough, and rolling pin. Roll the dough out into a 12-inch circle.
- Carefully remove the skillet from the oven and place on a heat-safe surface.
- Add olive oil to the skillet and use a paper towel to evenly spread into the pan.
- Carefully add the pizza dough to the skillet, spreading the edges into the corners of the pan.
- Lightly brush olive oil on the edges of the crust.
- Bake the pizza dough for 3 minutes to par-bake the crust.
- Remove the pizza dough from the oven and evenly spread the pizza sauce over dough.
- Sprinkle the cheese over the sauce.
- Add the pepperoni, bell pepper, red onions, mushrooms, and olives on top.
- Sprinkle the Italian seasonings and black pepper on top.
- Bake the pizza until the bottom is golden brown and crispy, 10 to 12 minutes.
- Slice the pizza and enjoy hot.

WILD MUSHROOM SKILLET PIZZA

- Preheat oven to 500 degrees with rack in lowest position. Melt butter in a large skillet over medium-high heat. Add shallots; cook until softened, about 2 minutes. Add mushrooms, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; cook until mushrooms are golden brown, 5 to 7 minutes. Add wine, bring to a boil, and cook until absorbed, about 1 minute. Add cream and stir to combine. Transfer to a plate, and let cool.
- Working with one piece of dough at a time, gently stretch into a 9-inch circle and place in an 8-inch cast-iron skillet. Brush dough all over with olive oil, and sprinkle with 1-ounce cheese, and one-quarter of the mushrooms. Top with another ounce of cheese. Drizzle with oil, and season with salt and pepper.
- Place skillet in the oven and bake until crust is golden brown, 15 to 16 minutes. Sprinkle with tarragon and cut into wedges. Serve immediately. Repeat process with remaining ingredients.

- Preheat broiler. In a small bowl, whisk flour, baking powder, oregano and salt. Stir in water and 2 tablespoons oil to form a soft dough. Turn onto a floured surface; knead 6-8 times. Roll into a 12-in. circle., Brush bottom of a 12-in. ovenproof skillet with remaining oil; place over medium-high heat. Transfer crust to pan; cook 2-3 minutes on each side or until golden brown. Remove from heat. Spread with pizza sauce; top with pepperoni, mushrooms, olives and cheese., Broil 3-4 in. from heat 3-5 minutes or until cheese is melted.

Fontina cheese adds a lot of flavor, but if you can't find it, use whole-milk mozzarella.

- Preheat oven to 500 degrees. Melt butter in a medium skillet; saute leek over medium-high heat, stirring occasionally, until tender and starting to color, 3 to 4 minutes. Add mushrooms; saute until tender, about 2 minutes. Season with 1/4 teaspoon salt and a pinch of pepper.
- Brush a 12-inch cast-iron pan with 1 teaspoon oil. Press dough flat in skillet, spreading to edge (if it retracts, let rest 5 minutes before continuing). Brush a 1-inch border around edge with another teaspoon oil. Sprinkle 1 cup fontina over dough. Top with leek mixture and remaining cup cheese.
- Cook over medium-high heat until bottom of crust is golden brown, 4 to 5 minutes. Transfer to oven, and bake until edge of crust is golden brown and dough is cooked through, about 10 minutes. Drape prosciutto over pizza.

- Preheat oven to 400 degrees F (200 degrees C). Spray a skillet with cooking spray.
- Cook and stir beef sirloin in the prepared skillet over medium heat until browned on the outside and slightly pink in the middle, 3 to 4 minutes. Transfer sirloin to a plate.
- Spray the skillet with butter-flavored cooking spray. Add mushrooms, onion, and green bell pepper; cook and stir until just turning tender, about 5 minutes.
- Roll pizza dough onto a baking sheet and top with American cheese. Spoon mushroom mixture and sirloin over American cheese layer and top with Mexican cheese blend.
