Jennifer Owens doesn't know where her mother, Frances, first found the recipe for these ham buns, but they have been a part of her life since childhood in Easley, S.C. It may have come from relatives in Tennessee, as a similar recipe appears as "Hallelujah Ham Loaves" in "Dinner on the Diner," a 1983 cookbook from the Junior League of Chattanooga. The warm appetizer has won fans wherever Ms. Owens goes. Her mother's original formula called for raw onions, but Ms. Owens now sautés them. Use good smoked ham, either holiday leftovers or from the deli counter. As the buns bake, the butter pools at the bottom, toasting up the base of these irresistible bite-size sandwiches.

1 cup unsalted butter (2 sticks), at room temperature, plus 1 tablespoon
1 jumbo sweet onion, such as Vidalia, finely chopped (3 cups)
4 flats of party rolls (see Tip)
3 tablespoons yellow mustard
3 tablespoons poppy seeds
1 teaspoon Worcestershire sauce
6 ounces Swiss cheese, grated (2 cups)
1 pound smoked ham, finely chopped (3 cups)

Steps:

  • Position racks in top and bottom thirds of the oven and heat oven to 400 degrees.
  • Melt 1 tablespoon butter in a large skillet over medium heat and cook onion, stirring occasionally, until translucent, 8 to 10 minutes.
  • As the onion cooks, split each flat of rolls in half, running a bread knife parallel to the counter as you slice the still-connected rolls. Once the onion has finished cooking, remove from heat and set aside. Place two sheet pans in the oven, one on each rack, to heat while assembling the rolls.
  • In a large mixing bowl, combine mustard, poppy seeds and Worcestershire sauce. Add the remaining cup of butter and warm onion. Stir in cheese and ham until evenly combined.
  • On a sheet of aluminum foil large enough to completely encase a flat of rolls, place one flat, and open like a book. Spread about a quarter of the ham mixture in an even layer over the bottom half of the rolls to the edges. Close the book, so to speak, laying the still-connected roll top over the ham-covered base. Wrap the rolls tightly with the foil, crimping the edges of the foil to enclose them. Repeat with the three other flats of party rolls.
  • Divide the four packets between the two heated sheet pans. Bake until the cheese melts and rolls get toasty, 10 to 12 minutes. Unwrap and serve the flats on platters, encouraging diners to pull a bun from its brethren.

1/2 cup whole milk
2 1/4 teaspoons active dry yeast (one 1/4-ounce package)
2 tablespoons sugar
4 tablespoons unsalted butter, melted, plus more for the bowl and plastic wrap
1 large egg yolk
2 3/4 cups all-purpose flour, plus more for the work surface (see Cook's Note)
1 teaspoon kosher salt
4 tablespoons unsalted butter, plus 2 tablespoons, at room temperature, for the pan
1 medium leek, white and light greens chopped (about 1 cup)
2 tablespoons all-purpose flour
1/2 cup dry white wine
1/2 cup shredded Gruyere cheese
Kosher salt and freshly ground black pepper
1/4 pound sliced ham (about 4 slices), cut into 1/4-inch pieces

Steps:

  • For the dough: Warm the milk and 1/2 cup water in a medium saucepan over low heat until it is about 100 degrees F (but no more than 110 degrees). Remove the saucepan from the heat, and sprinkle the yeast over the liquid. Sprinkle a pinch of the sugar over the top, and set aside without stirring until foamy, about 5 minutes. Then whisk in the butter and egg yolk.
  • Whisk together the flour, remaining sugar and salt in a large bowl. Make a well in the center, and stir in the yeast mixture with a wooden spoon until you've made a thick, slightly sticky dough. Turn the dough onto a floured work surface, and knead until soft and elastic, about 6 minutes. Shape the dough into a ball.
  • Brush the inside of a large bowl with butter. Put the dough ball in the buttered bowl, turning to coat lightly. Cover the bowl with plastic wrap, trace a circle the size of the dough ball on the plastic and note the time. Let the dough rise in a warm place until doubled in size, about 1 hour 30 minutes.
  • Turn the dough out of the bowl, and knead briefly to release excess air; re-form the dough into a ball, and return it to the bowl. Lightly butter a large piece of plastic wrap, and lay it on the dough. Cover the entire bowl tightly with the rest of the plastic, and refrigerate for 4 hours or overnight to let the dough proof.
  • For the filling: Melt the butter in a medium skillet over medium heat. Add the leeks, and cook, stirring frequently, until softened and just beginning to caramelize, about 5 minutes. Sprinkle the leeks with the flour, and cook, stirring constantly, until lightly browned and toasted, about 1 minute. Whisk in the wine and 1/4 cup water, and let the mixture thicken, whisking constantly, about 1 minute. Remove the skillet from the heat, and stir in the Gruyere, 1/2 teaspoon salt and a few grinds of pepper. Transfer the filling to a medium bowl, and let cool completely. (The filling will firm up a bit, but if it's too warm, it will be difficult to form the rolls.)
  • For the rolls: Butter a 9-by-13-inch baking pan with the 2 tablespoons softened butter. Turn the dough onto a floured work surface, and press it flat. Roll it into a 10-by-18-inch rectangle, with 1 long edge facing you. Spread the cooled filling evenly over the dough, leaving about a 1-inch border on the side opposite you. Sprinkle the ham over the filling. Starting from the side facing you, roll the dough up into a tight roll. Lightly brush the 1-inch border with water, and continue rolling to seal the roll. Fold the ends in just a bit, and if any spots look thicker than others, even out the roll with your hands.
  • Cut the roll every 1 1/2 inches with a serrated knife, to make 12 pinwheel slices. Place the slices flat in the prepared pan (put the end pieces cut-side up), spacing them 1 inch apart. Cover the pan loosely with plastic wrap. Set in a warm place to rise until the slices double in size with no gaps in between, 1 hour 30 minutes to 2 hours.
  • Position the rack in the center of the oven and preheat to 350 degrees F. Bake the buns until they're golden brown and the tops spring back when pressed lightly, 25 to 30 minutes. Let cool in the pan for 10 minutes.

2/3 cup heavy cream ((160 ml, at room temperature))
1 cup milk ((plus 1 tablespoon, at room temperature; total 250 ml))
1 large egg ((at room temperature))
1/3 cup sugar ((75g))
1/2 cup cake flour ((70g))
3 1/2 cups bread flour ((500g))
1 tablespoon active dry yeast ((11g))
1 1/2 teaspoons salt ((7g))
12 slices ham
12 slices cheese
(Egg wash: whisk together 1 egg with 1 teaspoon water)
2 teaspoons sugar ((8g, dissolved in 2 teaspoons hot water to make simple syrup))

Steps:

  • In the bowl of a mixer, add the heavy cream, milk, egg, sugar, cake flour, bread flour, yeast, and salt. Use the dough hook attachment, and turn on the mixer to "stir." Let it go for 15 minutes, occasionally stopping the mixer to push the dough together. If you're in a humid climate and the dough is too sticky, feel free to add a little more flour 1/4 cup at a time until it comes together. If you don't have a mixer and would like to knead by hand, extend the kneading time by 5-10 minutes.
  • After 15 minutes of mixing, the dough is ready for proofing. Cover the bowl with a damp towel and place in a warm spot for 1 hour. I proofed the dough in my oven (I had the oven on rapid proof for 5 minutes, turned the oven off, and then closed the oven door). The dough will grow to 1.5X its original size.
  • After the hour of proofing, put the dough back in the mixer and stir for another 5 minutes to get rid of air bubbles. Dump the dough onto a lightly floured surface, and cut it into 12 equal pieces. Roll out each piece into a rough oval/rectangle shape, and lay the ham and cheese on top. Roll everything together into a log, and cut three slits into the top of each bun (about 1/2 inch deep). Continue assembling until all the buns are made. Cover with a clean, damp towel and allow to rise for another hour.
  • Preheat the oven to 350 degrees F. Brush the risen buns with egg wash and bake for 20-24 minutes until golden. Remove from the oven and brush the buns with sugar water to give them a really great shine, sweetness, and color.

2 tablespoons poppy seeds
½ cup margarine, melted
24 dinner rolls
½ pound chopped ham

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a small mixing bowl, combine onion flakes, mustard, poppy seeds and margarine.

1 17.5 oz package (2 sheets) store-bought puff pastry(thawed but still cool)
1/2 cup pizza sauce
12 slices deli ham
1-1 1/2 cup shredded cheese (mozzarella)
2 Tablespoon olive oil
1 teaspoon dried basil or oregano ( you can combine both)
2 tablespoon grated parmesan cheese

Steps:

  • Preheat oven to 400 F and line two large baking sheets with silicone baking mats or parchment paper and set aside.
  • Place a sheet of thawed puff pastry onto a baking paper dusted with flour and roll out into approximately 8×12 inch rectangle (dimension may vary depending on brand of pastry you use) It should be rolled out thin but don't thin it out too much or it won't be able to hold the filling.
  • Spread athin layer of pizza sauce, arrange ham slices and sprinkle with shredded cheese (do not over-top or else you won't be able to roll the dough into neat log, you can add more cheese onto top of each slice before baking).
  • Tightly roll up the dough like a cinnamon bun with the baking paper already under the dough(lift the edge of baking paper and roll). Repeat the process with the second sheet of puff pastry and the other half of the filling.
  • You can place rolls onto 1 prepared baking sheet and set it in the freezer for 10 minutes , it will be easier to cut, or you can cut it immediately.
  • Cut roll into slices, approximately 1-inch wide and place onto baking sheet keeping 2 inch apart.(while you cut the roll slices will flatten and lose their shape but using your finger shape them back into circle when place them onto baking sheet).
  • Combine olive oil with basil or oregano and brush the tops and edges of each slice, then sprinkle with parmesan.
  • Bake in preheated oven about 15-20 minutes (until the edges are golden brown).
  • Let them cool 5-10 minutes onto baking sheet (if the bottoms are stick a little run a thin knife under each slice and transfer them onto a serving plate).
  • If you want make them ahead and keep in the freezer pack them into a foil. When you're ready to bake take them out the freezer for 15 minutes before cutting into slices, then let the slices sit another 15 minutes at room temperature to thaw completely before baking(brush with oil, sprinkle with parmesan and bake).

1 (15 ml) package fast rising yeast
1 teaspoon salt
2 tablespoons melted margarine
3 cups flour
1 1/8 cups hot water

Steps:

  • Put in a warm spot till double in size.
  • Bake for approximately 15-20 mins at 375 degrees F.
  • Tip pan over and let buns fall onto a plate.

These are what the French call "cakes" - they are little savoury buns or muffins - and are always requested for breakfasts in the Auberge. They are delicious split and spread with herb and garlic cheese when warm - or serve them alongside hot soups, stews, chilli or casseroles! I have also made these with grated Gruyere cheese as well as Emmenthal....the trick is to use a mature and strong tasting cheese. I have suggested using smoked ham in this recipe - it just gives a wonderful extra flavour to these delicious buns/muffins. They freeze well and are easily reheated, if you have any left! We often have these for Christmas morning breakfast or brunch with the optional chives added, and then spread with smoked salmon butter - divine!

300 g self raising flour
1/2 teaspoon savoury instant bouillon granules (such as vegetable or chicken)
1/2 teaspoon smoked paprika or 1/2 teaspoon sweet paprika
1 teaspoon dry English-style mustard
150 g chopped smoked ham
185 g grated mature farmhouse cheddar cheese
1 large egg, lightly beaten
250 ml milk
6 tablespoons light olive oil or 6 tablespoons light vegetable oil
salt and pepper
2 tablespoons chopped chives (optional)

Steps:

  • Pre-heat an oven to 200°C/400°F/Gas Mark 5.
  • Grease a 12 hole muffin or bun tray/pan.
  • Sift the dry ingredients into a large bowl and mix well. Season with salt and pepper - but be careful not to over salt as the stock powder will contain salt.
  • Stir in the ham and cheese, and chives if using, mix again.
  • Add the egg, milk and olive oil - mix well - but do NOT over mix - just enough to combine the ingredients together. Adjust the consistency if too dry by adding a little more milk - the mixture should be a soft dropping consistency.
  • Spoon mixture into the prepared muffin/bun tray/pan and bake in the preheated oven for 20 to 25 minutes, or until the muffins are well risen and golden brown.
  • Remove from the oven and allow to cool slightly on a wire rack.
  • Serve whilst warm - delicious if spread with butter or soft cheese!

25-30 slices of cheese (i used provolone in this recipe)
25 roll buns
TOPPING
1/2 c butter or margarine (butter is best though!)
2 Tbsp mustard your choice (i used regular mustard when serving children and dijon for adults)
1-2 Tbsp worcestershire sauce (1tbsp when making for children, and 2 for adults)
2 Tbsp minced onions
1/3 c grated parmesan cheese

Steps:

  • 1. Lay 20 roll buns in pan
  • 2. Top with sliced ham
  • 3. top with cheese
  • 4. top with top bun
  • 5. TOPPING: Mix all ingredients together and spread on each bun roll. Bake at 400F for about 12-15 minutes or until tops are golden and cheese has melted :)
