TOMATO SANDWICHES WITH BLUE CHEESE MOUSSE

Steps:
- Preheat the oven to 500 degrees F.
- Drizzle the cut-side of the bread with olive oil, then put on a sheet tray and place in the oven to toast, 3 to 5 minutes. Evenly spread the butter between the 2 pieces.
- In a non-reactive bowl, combine the blue cheese, cream cheese, Worcestershire and vinegar until well mixed. Add the heavy cream slowly and whip with a rubber spatula or whisk until smooth and mousselike. Reserve until ready to use.
- Slice each tomato into four thick slices, then sprinkle with salt and pepper.
- Spread a thick layer of the blue cheese mousse on the bottom half of the prepared loaf. Add the sliced tomatoes and liberally spread the shaved onion. Top with the top piece of bread and slice into servings.
- Serve with plenty of napkins.
MY AWESOME COTTAGE CHEESE TOMATO SANDWICH
Very filling, a low calorie comfort food that you can eat at any time of day. Recipe is easily doubled, trippled, etc. I like to make this in my toaster oven but it can easily be made in a toaster and a broiler or on a grill.

- Set toaster oven on "toast" and place a slice of bread and a slice of tomato inside. After the bread is browned as much as you like it (I like mine VERY dark as you can see in the picture) flip it over. Leave the tomato.
- After the second side is done, take the tomato and bread out of the oven and set it to "broil.".
- At this step i also like to remove the skin from the tomato slice but that it optional. Place tomato on bread and spread cottage cheese on top. Sprinkle with chili powder.
- Place under the broiler and broil until cottage cheese starts to melt.

- Split and toast English muffins to desired color.
- Place 1/4 of the cottage cheese on each muffin half.
- Place 1/2 a Canadian bacon slice on each half of each muffin.
- Place 1 tomato slice on each muffin half.
- Salt and pepper tomato slice to taste and serve.
- Optionally, you may quickly brown the Canadian bacon in a hot pan before placing it on the English muffin.

COTTAGE CHEESE PASTA WITH TOMATOES, SCALLIONS AND CURRANTS
Satisfying the same creamy urge as mac and cheese, noodles with cottage cheese is a comforting Eastern European staple that's sometimes topped with golden fried onions and a dusting of black pepper and cinnamon. This version trades caramelized onions for slivers of sharp raw scallion to contrast with the richness of the cottage cheese, which melts into a sauce upon contact with the hot pasta. The currants lean into the cinnamon's sweetness, while halved cherry tomatoes and mint make the dish juicy and fresh. It's an unusual take on the original dish that's easy to riff on - feel free to add or leave out ingredients to make it your own.

- Bring a large pot of water to a boil. Put currants in a small bowl and ladle a little of the boiling water over them to cover. Let soak for 10 minutes, then drain.
- Meanwhile, salt the remaining water in the pot. When it returns to a boil, add pasta. Cook according to package instructions until al dente, usually 1 minute less than the package directs. Drain pasta, reserving 1/2 cup pasta cooking water.
- In a large serving bowl, combine scallions, tomatoes, lemon juice and 1/4 teaspoon salt.
- When the currants are soaked, add them to the bowl with the tomatoes and toss to combine. Stir in 2 tablespoons olive oil.
- Add pasta to the serving bowl, along with cottage cheese, pepper and a few splashes of reserved pasta water (about 1/4 cup), and toss until evenly coated. If pasta looks dry, add a little more pasta cooking water, a tablespoon at a time. Stir in herbs. Taste, and add more salt and lemon, if needed.
- To serve, top with a dusting of ground cinnamon (if you like), flaky salt, a lot of black pepper, and more olive oil and herbs. Serve hot, warm or at room temperature.
