1 package (6 ounces) fresh baby spinach
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup half-and-half cream
1 cup 2% milk
1 can (4 ounces) chopped green chiles, drained
3 green onions, chopped
1/3 cup minced fresh cilantro
1 large garlic clove, minced
1-3/4 teaspoons ground cumin
1-1/2 teaspoons ground coriander
1/4 teaspoon crushed red pepper flakes
1/2 cup reduced-fat sour cream
ENCHILADAS:
2-1/2 cups shredded cheddar cheese
1-1/2 cups shredded Monterey Jack cheese
1/2 cup finely chopped onion
1 tablespoon minced fresh cilantro
12 corn tortillas (6 inches), warmed

Steps:

  • In a large nonstick skillet, saute spinach until wilted. Drain and remove. In same pan, melt butter. Stir in flour until smooth; gradually add cream and milk. Bring to a boil; cook and stir until slightly thickened, about 2 minutes. , Stir in chiles, green onions, cilantro, garlic, spices and spinach. Remove from heat; cool slightly. Transfer to a food processor; cover and process until pureed. Stir in sour cream; set aside. , Preheat oven to 375°. In a large bowl, combine cheeses; set aside 1 cup for topping. Add onion and cilantro to remaining cheese mixture; toss to combine. Place about 1/4 cup cheese-onion mixture down the center of each tortilla. Roll up and place seam side down in a greased 13x9-in. baking dish., Pour sauce over top. Sprinkle with reserved cheese mixture. Bake, uncovered, until heated through, 25-30 minutes.

1 cup whipping cream
1 cup milk
6 tablespoons fresh cilantro, chopped
3 green onions, minced

1 3/4 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/4 teaspoon dried red pepper, crushed
1/2 cup vegetable oil
12 (6 inch) corn tortillas
3 cups mild cheddar cheese, grated
1 1/2 cups monterey jack cheese, grated
1/2 cup onion, finely chopped
1 tablespoon fresh cilantro, chopped
1/2 cup sour cream

Steps:

  • For sauce: Cook spinach according to package instructions.
  • Drain well.
  • Set aside. Melt butter in heavy medium skillet over medium heat. Add flour and stir mixture 2 minutes; do not brown.

Mouthwatering Cheesy Chicken Enchiladas...what they are suppose to be! Please feel free to change any ingredient. Sometimes I use 8 oz of cream cheese too in addition to the sour cream..just for a little more creamy goodness! If I have leftover filling I use it for quesadillas.

9 boneless skinless chicken thighs, cooked and shredded
2 cups cheddar cheese, shredded
2 cups monterey jack pepper cheese, shredded
7 ounces diced green chilies
2 1/2 cups sour cream
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon onion powder
1 (28 ounce) can green enchilada sauce
20 flour tortillas
salt & pepper

Steps:

  • Preheat oven to 350°F
  • Lightly coat with oil or cooking spray a large 9x13 baking dish.
  • In a large bowl combine, chicken, 1 1/2 cup of cheddar cheese, 1/1/2 cup of pepper jack cheese, diced green chillies, 2 cups of sour cream, garlic powder, chili powder and onion powder.
  • Mix until well combined.
  • To assemble, have a large bowl ready with the green enchilada sauce in it and a plate to roll the enchiladas on.
  • Take a flour tortilla and dip it into the bowl containing the sauce until it's all covered.
  • Then place on the plate and almost on the edge of one side of the tortilla add 1/4- 1/2 cup of the chicken filling depending on how full you want them to be.
  • Take the tortilla with the filling on it and roll it into a tube and lay in greased baking dish.
  • Repeat until you have either no room left in your pan or your out of filling.
  • With the remaining sauce pour over enchiladas and smooth out on top until there is a thin layer of sauce.
  • With the remaining 1/2 cup of sour cream spread evenly over the top of enchiladas.
  • Take remaining 1/2 cup of cheddar and 1/2 cup of pepper jack cheese and sprinkle evenly over top of enchiladas.
  • Cover with foil for the first 25 minutes of cooking.
  • Remove foil and bake for another 15-20 minutes until bubbly and cheese is melted on top.

1/2 onion, diced
1 tablespoon butter
One 15-ounce can green enchilada sauce
Two 4-ounce cans chopped green chilies
2 cups freshly grated Cheddar-Jack cheese
12 yellow corn tortillas
Store-bought salsa, for serving
Sour cream, for serving
Fresh cilantro leaves, for serving

Steps:

  • In a small skillet, saute the onions with the butter over medium-low heat until the onions are nice and golden brown.
  • In a small saucepan, combine the green enchilada sauce with the green chilies and heat until very warm.
  • In the microwave or in the oven (on a baking sheet), melt some cheese all over the top of each tortilla so that it covers most of the surface area.
  • To serve, stack three cheesy tortillas on top of one another. Spoon green sauce over the top and add store-bought salsa, sour cream and cilantro as needed. Delish and so, so easy!

2 (8-ounce) jars store-bought tomatillo salsa, or 1 (16-ounce) jar
1 1/2 pounds store-bought rotisserie chicken, skin removed, meat shredded (about 2 cups meat)
Salt and pepper
3 (8-inch) flour tortillas
2 ounces low-fat pepper Jack, shredded
1/4 cup sliced green onions, for garnish, optional
1/4 cup fresh cilantro leaves
1/4 cup light sour cream, for garnish, optional.

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium skillet, heat the olive oil over medium heat. Add the garlic, onion, and cumin and cook until the vegetables are slightly softened, about 2 minutes. Add the drained spinach and half of the salsa and cook until warmed through. Remove from the heat and stir in the chicken. Season with salt and pepper, to taste.
  • Spread 1/2 of the remaining salsa in the bottom of a 10-inch square baking dish or oven-proof skillet. Lay 1 tortilla on the salsa and spread 1/2 the filling over it. Top with another tortilla and spread the remaining filling over it, and top with the last tortilla. Spread the remaining salsa over the tortilla and scatter the cheese over the top.
  • Bake for 20 minutes, or until heated through and cheese has melted. Remove from heat and let stand for 5 minutes. Top with green onions, if desired, and cilantro. Top each serving with no more than 1 tablespoon light sour cream, if desired, and serve.

Meatless and full of cheese. Can't remember where I first stumbled across this recipe, but I've never found a cheese enchilada recipe that I liked better. You have to try this one to appreciate it. It really tastes MUCH better than it reads!

1/3 cup butter
1/3 cup flour
2 1/2 cups half-and-half
2 (4 ounce) cans diced green chilies
1/2 cup minced onion
1/4 teaspoon cayenne pepper
8 cups colby-monterey jack cheese
1 medium onion, minced
oil (for frying)
12 corn tortillas

Steps:

  • Preheat oven to 350.
  • Melt butter in a medium sauce pan, and sprinkle in flour. Stirring constantly, allow flour to brown, about 2-3 minutes. Slowly stir in half-and -half. Simmer, stirring frequently about 5 minutes, or until thickened. Add chiles,1/2 cup onion and cayenne, and simmer for 10 minutes on low heat.
  • Mix cheese and medium minced onion. Heat oil in a skillet,(you only need maybe half an inch) then dip the tortillas in hot oil, one at a time, for about 5 seconds each. Stack them on top of each other on a plate, covered with paper towels as you go.
  • Scoop cheese mixture (about half a cup or so per tortilla) onto tortillas, and roll up, placing seam side down in a 13 x 9 inches baking pan. When all tortillas are rolled, pour the green chile sauce over all, and top with the remaining cheese. Bake uncovered in preheated oven, for 20 minutes, or until cheese is melted and bubbly. Great when garnished generously with sour cream.

1 1/4 cups water
2 tablespoons minced seeded jalapeno chiles
12 cloves garlic
2 1/2 cups chopped green onions

3 cups packed grated monterey jack cheese (about 12 ounces)

Steps:

  • Bring first 4 ingredients to boil in large skillet.
  • Reduce heat to medium-low, cover, and simmer until tomatillos are soft, about 15 minutes.
  • Transfer mixture to blender; add 2 cups onions, green chilies, and spinach; puree.
  • Season sauce with salt and pepper.
  • Return sauce to skillet.
  • Preheat oven to 450 degrees F.
  • Lightly oil 13x9x2-inch glass baking dish.
  • Heat about 1/4 inch deep vegetable oil in a second skillet and fry 1 tortilla briefly, remove to a paper towel to drain and then coat with sauce.
  • Place coated tortilla on plate.

  • Roll up tortilla.

These enchiladas are made with a fresh green salsa, just like you would find in a Mexican restaurant or better yet, in a Mexican home.

2 bone-in chicken breast halves
2 cups chicken broth
¼ white onion
1 clove garlic
2 teaspoons salt
1 pound fresh tomatillos, husks removed
5 serrano peppers
¼ white onion
1 clove garlic
1 pinch salt
12 corn tortillas
¼ cup vegetable oil
1 cup crumbled queso fresco
½ white onion, chopped
1 bunch fresh cilantro, chopped

Steps:

  • In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.
  • Place tomatillos and serrano chiles in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull, army green). Strain tomatillos and chiles, and place in a blender with another quarter piece of onion, 1 clove garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies in the blender by about an inch. Blend all ingredients until they are completely pureed. Pour salsa in a medium saucepan, and bring to a low boil.
  • Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil. Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.
  • Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.

ADDICTIVE GREEN ENCHILADAS

The cream cheese is the star in these enchiladas... I've never met a person who didn't enjoy these and they are so simple to put together. You can cook your chicken breasts for these anyway you want... I recommend putting a chili powder/garlic rub on them and baking them. You can also boil them in water and garlic salt, but the baking produces tender, flavorful chicken! Toss in some red pepper flakes to the chicken/cheese mixture for some heat!! Can't beat it! Recently I didn't have a can of the green sauce on hand, and had a crisper full of tomatillos! I made Recipe #51630 and WOW it was super. It takes of course a little more work and effort but it was really good. If you like tomatillos, give it a try when you have some extra time on hand.

  • Pour 2 tablespoons green enchilada sauce into the bottom of a 13x9 glass baking dish.
  • In large bowl, mix shredded chicken, green chilis, cream cheese, onions, 1/2 cup shredded cheese, and 2 tablespoons of the green enchilada sauce.
  • Spoon mixture evenly into corn tortillas and roll up.
  • Line up tortillas, touching each other, fitting as many tortillas as you can (but not on top of eachother.).
  • Pour remaining enchilada sauce over rolled tortillas.
  • Sprinkle remaining shredded cheese over sauce and cover the 13x9 with foil.
  • Bake in a 350 degree preheated oven for 40 minutes.
  • Remove from oven and let sit at room temp for 10 minutes before serving.

These are the best chicken enchiladas you will ever have! I created this recipe one day by accident, and it's now a family favorite. Try it, you won't be disappointed!

1 tablespoon butter
1 cup white rice
1 (14.5 ounce) can chicken broth
3 boneless chicken breast halves, boiled and cubed
1 pound Monterey Jack cheese
1 (11 ounce) can sweet corn, drained
1 (24 ounce) jar green enchilada sauce
24 (6 inch) corn tortillas

Steps:

  • In a large skillet, saute rice with butter or margarine. Add chicken broth and simmer over low heat for 15 to 20 minutes, or until rice is cooked and tender. Let cool.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Cube 3/4 pound of the cheese; shred the remaining 1/4 pound cheese and set aside. Combine chicken, 3/4 pound cubed cheese, corn, cooled rice and 1/4 cup sauce in a large bowl. Mix together. Warm tortillas in the microwave for 2 minutes and spread another 1/4 cup sauce in the bottom of a 9x13 inch baking dish.
  • Place a little of the chicken mixture on each tortilla and roll up. Place filled tortillas (as many as will fit) in the baking dish. Sprinkle with 1/4 pound shredded cheese and top with any remaining sauce, pouring evenly over all. (Freeze remaining tortillas for future green sauce enchiladas!)
  • Bake at 350 degrees F (175 degrees C) for 30 minutes.
