Recipe courtesy of "Sargento Cheese". Ever since learning how to make focaccia using "The Easiest, Bestest Focaccia Bread" recipe on Zaar, I like experimenting with new toppings for the hearty, easy, quick treat. This recipe originally called for 1 loaf of frozen white bread dough, but I'll use the recipe above for the focaccia and proceed with their toppings. YUM! I have NOT tried this recipe, so please feel free to offer suggestions...

Number Of Ingredients 7

1 loaf frozen white bread dough, thawed according to package directions (or 1 recipe of your favorite focaccia bread)
3 tablespoons olive oil
3 garlic cloves
1/2 teaspoon rosemary (optional)
2 cups shredded Italian cheese blend
3 ounces thinly sliced prosciutto, cut into thin strips
2 teaspoons dried basil

Steps:

  • Prepare and cook your favorite recipe for focaccia bread (or get store bought!). If you use the frozen bread dough listed above, roll out dough onto lightly floured surface into a rectangle. Tranfer to greased baking sheet and let rise for 25 minutes. Bake for 18 minutes. *Before baking either your favorite recipe or the frozen bread dough, brush uncooked dough with mixture of garlic, oil and rosemary.
  • Remove cooked focaccia bread from oven and top with prosciutto, dried basil and cheese.
  • Return to oven and bake 3 minutes or until cheese is melted.

1 large plum tomato
3 tablespoons black olive paste
1/4 cup chopped fresh basil leaves
1 pound fresh mozzarella
4 cups trimmed arugula
2 tablespoons extra-virgin olive oil
1 Parmesan Focaccia
1/2 pound thinly sliced prosciutto

Steps:

  • Seed tomato and chop fine. In a bowl stir together tomato, olive paste, and basil. Cut mozzarella into thin slices. Coarsely chop arugula and in a bowl toss with oil and salt and pepper to taste.
  • Halve focaccia horizontally and spread bottom half with olive mixture. Top olive mixture with mozzarella, prosciutto, arugula, and remaining focaccia half. Press focaccia gently and cut lengthwise in half and crosswise into thirds to make 6 sandwiches. Cut sandwiches diagonally in half and wrap tightly in plastic wrap. Chill sandwiches at least 1 hour and up to 1 day.

2 envelopes active dry yeast
2 cups whole milk, heated to lukewarm
1 teaspoon sugar
5 cups all-purpose flour, plus more for the work surface
1/3 cup extra-virgin olive oil, plus more for brushing
1 1/2 teaspoons kosher salt
2 tablespoons finely chopped fresh rosemary leaves
1 1/2 cups blue cheese, crumbled, for topping
2 tablespoons honey to drizzle, for topping

Steps:

  • In a large bowl or the work bowl of an electric mixer dissolve yeast in the milk. Add sugar and 1 cup of the flour. Mix well and let stand in a warm place about 15 minutes for the yeast to activate.
  • Mix another 2 1/2 cups flour into the yeast mixture with the dough hook attachment until smooth. With the machine running, add 1 cup flour and knead for 6 minutes. Turn out onto a board and lightly knead in remaining 1/2 cup flour. The dough should remain rather wet to ensure a soft and light bread. Shape the dough into a ball and put it in an oiled bowl. Cover with a damp towel and allow to rise in a warm place until doubled in bulk about 20 minutes.
  • Turn dough out onto a lightly floured work surface. Press dough with finger to gently stretch dough to fit in pan, and then use a rolling pin to lightly flatten.
  • Oil an 11 by 17-inch baking sheet with 1/3 cup olive oil. Transfer the dough to the baking sheet. Using your fingertips, nudge the dough into a rectangle.
  • Cover and let rise again until doubled, 30 to 40 minutes.
  • To bake, preheat oven to 400 degrees F.
  • Make indentations all over the dough by pressing with your fingertips being careful not to puncture all the way through the dough. Brush olive oil over the top, filling in the wells. Sprinkle the salt and rosemary over the surface. Bake until crisp on the bottom and golden brown on top, about 30 to 35 minutes.
  • Cut into wedges, top with crumbled blue cheese and honey.

  • Cut the dough into about 4 to 6 equal sized pieces, shape each into a ball. Let them rest, covered, for about 15 minutes.
  • Take one ball and knock it down with your fingers, as if you're making a pizza, but this will be much thicker. Repeat with each ball of dough.
  • Place the dough onto a silicone mat lined (or corn meal/semolina sprinkled) baking tray and drizzle with a little extra virgin olive oil. Use a pastry brush to lightly cover the dough with the oil.
  • Place the tray in the middle of the preheated oven (when using two trays, switch them half-way through baking). Bake for about 5 minutes then quickly flatten them as they puff up, and return to the oven. Bake another 5 minutes and check them again. Remove from the oven once they are golden brown on top (and underneath). TURN THE OVEN OFF. Place on cooling rack, and allow to cool until you are able to cut them in half without burning your hands.
