ALL AMERICAN MOLASSES BAKED BEANS
These take awhile, but they are so good and they are very easy and inexpensive to prepare. For an added treat serve them with traditional Boston Brown Bread. Soaking time is not reflected in either the prep or cook times.

Steps:
- Place beans in a large bowl and cover with water by at least 3 inches.
- Soak overnight.
- Drain.
- In a large heavy saucepan, combine beans and bay leaves.
- Add enough water to cover by 3 inches.
- Bring to a boil and continue boiling gently for about 45 minutes or until beans are tender.
- Drain beans reserving 4 cups of the cooking liquid.
- Preheat oven to 350^F.
- In a large oven proof pot with a lid, combine the onion, salt pork, ketchup, brown sugar, molasses, dry mustard and pepper.
- Stir in the beans and 3 cups of the cooking liquid.
- Cover the pot tightly with foil and then the lid.
- Bake until the beans are very tender and the liquid has been absorbed, about 2+1/2 hours.
- Add more liquid as necessary.
- Season with salt and pepper.
CHEESE AND MOLASSES BEANS
This recipe is posted in response to a request. It's from the Marlboro Country Cookbook. I haven't tried it yet. Note to World Tour participants. This is a typical ranch/chuckwagon/cowboy type recipe - common in the Southwestern region of the U.S.

Steps:
- Fry bacon in large skillet.
- Pour off fat, Return 3 tbsp fat to skillet.
- Fry onion and garlic in fat until tender.
- Add pork and beans, brown sugar to taste, molasses and steak sauce; stir to mix.
- Simmer 30- 45 minutes.
- Crumble bacon; add cheese to beans just before serving.
PORK 'N' BEANS WITH COTTAGE CHEESE
Easy, easy dish that is a meal on its own or a healthy side dish. Great quick protein hit for body builders or for after a workout at the gym. Invented (so the story goes) by me when as a baby I was served pork n beans and cottage cheese seperately, and I mashed them together. Why my mother tasted it after I mashed it up is beyond me.....

- Bring beans (in sauce) to a slow boil over medium heat on the stove, stirring occasionally to prevent burning.
- Remove beans from heat.

BACON AND FETA GREEN BEANS
How scrumptious? Pair up green beans and bacon and toss in some wonderful Feta cheese, and you get Yummy! So good and goes with just about anything.

Steps:
- Place the bacon in a large, deep skillet.
- Cook over medium-high heat until evenly browned but only slightly crisp.
- Drain grease, leaving a small amount in the skillet for later use.
- Crumble bacon, reserving 2 tablespoons for garnish, then set aside.
- Cook green beans in a large saucepan of salted water 5-6 minutes, or until they are just crisp, about 5-6 minutes. Don't over-cook. Drain and set aside.
- Reheat skillet with residual bacon grease over medium-high heat. Stir in bacon and garlic, until garlic is lightly golden.
- Add green beans and Feta cheese and season with onion powder and freshly ground black pepper.
- Cook and stir until most of the Feta cheese has melted, about 2 minutes.
- Transfer to a serving dish, and garnish with remaining Feta cheese and crumbled bacon.

BACON AND MOLASSES BEANS
I usually bake these in the oven for about 1 hour at 325 dregees, then top with cheddar cheese the last 15 minutes of baking, but that is only optional. They even taste better the next day, that is if you have any left LOL!

Steps:
- Cook the bacon in a heavy pot over medium heat until crisp (about 5 minutes) transfer to paper towels.
- Drain off some of the fat but not all of it.
- Add in onions, bell pepper and garlic; saute for about 7-8 minutes until tender.
- Add the bacon back into the pot with all the remaining ingredients; stir to combine.
- Season with salt and pepper if desired.
- Reduce heat to low and simmer uncovered for about 30-35 minutes, or place in the oven to bake.
