FRESH HERBS QUICHE
Perfect for brunch-or any meal, reallly-this easy recipe makes enough for one quiche baked in a nine-inch springform pan, or two quiches baked in eight- or nine-inch pie plates.

Steps:
- Crust: Pulse flour and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal. Whisk together egg and yolk with ice water. Add to flour mixture and pulse until moist crumbs start to form (no longer). Transfer mixture to a piece of plastic wrap and, using wrap and your hands, form into a disk (or 2 disks, if making 2 quiches in pie plates). Refrigerate at least 30 minutes and up to 4 hours.
- Let sit at room temperature until pliable, then roll out dough on a lightly floured surface to a 14-inch round. Fit into a 9-inch springform pan, folding and pressing sides to an even thickness. (Or roll out 2 disks to 11-inch rounds and fit into 8- or 9-inch pie plates.)
- Trim edge of dough flush with top of springform pan. (If using pie plates, fold edges of dough under; crimp as desired.) Wrap in plastic; freeze at least 30 minutes and up to 3 days. Preheat oven to 400 degrees.
- Line crust with parchment; fill with dried beans or pie weights. Bake, with a baking sheet on rack below, 20 minutes; remove paper and beans. Bake until golden, 12 to 15 minutes (8 to 10 minutes, for pie plates). Let cool.
- Reduce oven to 375 degrees. Whisk eggs until smooth, then whisk in remaining ingredients until well combined.
- Pour custard mixture into cooled crust, stopping just short of top (if making in 2 pie plates, divide evenly between crusts). You may not need to use all of custard; be careful not to overfill.
- Arrange herb sprigs on top. Bake 10 minutes at 375 degrees, then about 55 minutes at 325 degrees. Let cool about 1 hour before serving.

- Make pie crust: In a food processor, pulse together flour and salt. Add butter and pulse until mixture resembles fine crumbs. Add 1/4 cup ice water and pulse until dough comes together into a ball. Divide dough in half, shape each into 1/2-inch-thick rectangle, wrap in plastic, and refrigerate at least 30 minutes.
- Working 1 at a time, on a lightly floured surface, roll dough piece into 16 x 7-inch rectangles, then place into two 13 x 4-inch rectangular tart pans with removable bottoms; cut away excess. Refrigerate at least 20 minutes.
- Heat oven to 375°F. Place tart pans on a large baking sheet. Place a large sheet of nonstick foil inside each and fill with pie weights. Bake 15 minutes, then carefully remove foil and weights and bake until bottoms feel dry and sandy and are starting to turn golden brown, 5 to 10 minutes. Transfer to a wire rack to cool. Reduce oven temperature to 325°F.
- Make filling: Meanwhile, in a large skillet, heat oil on medium and cook onion and pinch each salt and pepper, covered, stirring occasionally, until tender, 8 to 10 minutes. Uncover and cook until starting to caramelize, 5 to 10 minutes more. Let cool slightly.
- In a large bowl, whisk together eggs, crème fraîche, milk, and 1/4 teaspoon each salt and pepper. Stir in Cheddar, chives, parsley, and onion. Fill tart shells with egg mixture and bake until just set in center, 40 to 45 minutes. Let rest at least 10 minutes before serving.

- Preheat the oven to 400 degrees.
- On a lightly floured surface, roll out the pie crust dough to 1/8-inch thickness to fit an 8-inchfluted tart pan. Fill the pan with the dough, easing the dough into the bottom and lightly pressing it against the sides. Trim off the excess dough.
- Line the pastry shell with parchment paper, and fill it with ceramic pie weights or dried beans. Place the tart pan on a baking sheet, and bake for 9 minutes. Remove the baking sheet from the oven and set the tart pan on a wire rack to cool. Remove the parchment paper and the weights.
- Reduce the oven temperature to 375 degrees.
- In a medium bowl, whisk together the cream cheese, blue cheese, and butter. Whisk in the eggs until well blended. Stir in the cream, milk, salt, pepper, and herbs. Pour the filling into the partially baked pie shell. Return the tart pan to the baking sheet and bake, rotating the quiche halfway through, until it is puffed and golden brown, 25 minutes. The quiche is done when a knife inserted in the center comes out clean.
- Remove the tart pan from the baking sheet and set it on a wire rack to cool for at least 5 minutes before slicing. Serve hot, warm, or at room temperature.
SAUSAGE AND SAVORY HERB QUICHE

- Preheat the oven to 400 degrees F.
- Line the pie crust with parchment paper, fill with baking beans or pie weights and bake for 15 minutes. Carefully remove the baking beans and parchment and continue to bake until golden brown, 10 to 13 minutes more. Allow to cool to room temperature before filling.
- Lower the oven temperature to 350 degrees F.
- Meanwhile, in a mortar and pestle or food processor, grind the spinach, parsley, sage, mint and marjoram with 1 teaspoon salt until a very coarse paste forms. If it doesn't form into a paste, add 1 tablespoon water.
- In a large bowl, whisk together the eggs, melted butter and herb paste until combined. Stir in 1 cup of the cheese.
- Line the pie crust with the sausage, pour in the egg mixture and top with the remaining 1/2 cup cheese. Bake until the center is set and the top is dark golden, 45 to 55 minutes. Cool at room temperature for 1 hour before serving.
QUICHE WITH HERBS AND GOAT CHEESE
This green quiche laden with herbs and with thin slices of fresh goat cheese baked on top has a Gallic rusticity. A proper quiche (also known as a tarte salée, or savory open pie) should have really good pastry and contain a soft, tender eggy custard. It should be light enough to serve as a first course, or in larger portions for a simple main course. It should be something to sing about.

- Bake prepared dough at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
- Make the custard: in mixing bowl, beat eggs. Whisk in half-and-half, salt, pepper, lemon zest, thyme, scallions and parsley. Set aside.

- Spray a 9-inch glass pie dish with non-stick spray and sprinkle the breadcrumbs over the bottom and sides of the dish. Shake the dish around to distribute evenly.
- Slice the white and light green parts of the leek 1/2 inch thick. Boil 4 cups of salted water and add leeks. Boil 3 minutes. Remove from heat and add spinach and kale. Set aside for 30 minutes for greens to wilt and soften. Drain, rinse with cold water, squeeze out the water, and set aside.
- Preheat oven to 425 degrees. Whisk egg whites until frothy and then whisk in the whole eggs. Whisk in milk, salt, pepper, nutmeg, tarragon, and basil.
- Scatter the greens mixture in the bottom of the pie plate over the breadcrumbs. Sprinkle on the goat cheese. Pour egg mixture over the greens and bake 25 minutes. Cool 5 minutes before serving.
QUICHE WITH CARAMELIZED ONIONS, CREAM CHEESE AND HERBS
A recipe I found on About.com under the Moroccan food section(under eggs). This recipe is untried by me as of yet, but definitely will be making this in the near future, sounds delicious!! Here is what is stated about the recipe: "Quiche is most likely to show up on Moroccan tables during the month of Ramadan, when a variety of foods are offered to break the daily fast. This one features a savory filling with caramelized onions, cream cheese and herbs. Sometimes I throw in a small handful of chopped merquez sausage, smoked turkey, kefta or other leftover cooked meat. If you're making your own pastry shell, allow additional time for chilling the dough and pre-baking the shell as described below. The quiche can also be made in individual sized puff pastry shells."

- Make the Pastry Shell.
- Combine the flour and salt in a medium bowl. Add the pieces of butter and toss to coat with flour. With a fork or pastry cutter, blend the butter into the flour until the mixture looks like coarse meal. Sprinkle 3 tablespoons cold water over the mixture and quickly stir with a fork just until a dough forms. Use the last tablespoon of water only if necessary. Gather up the dough with your hands and shape it into a disc. Cover the dough with plastic and chill for one to two hours.
- Preheat an oven to 475° F (240° C). On a floured pastry cloth, roll out the dough into a large circle and fit into a pie or tart pan. Trim and shape the edges of the pastry as desired. Prick the pastry all over with a fork and bake in the hot oven for about 7 to 8 minutes, just until the dough starts to set. Remove the shell from the oven and set aside.
- Prepare the Filling.
- Heat the olive oil in a skillet and add the onions. Add a pinch each of salt, pepper and sugar. Saute the onions over medium-low heat until tender and caramelized, about 20 to 30 minutes. Stir in the parsley and chives and transfer the onions to a pre-baked pie shell. Break the cream cheese into small bits and scatter it over the onion mixture. (Also add any chopped meat, if using.).
- Bake the Quiche.
- Preheat the oven to ° F (190° C). In a medium bowl, beat the eggs with a fork, then beat in the milk, cream and seasoning. Pour the egg mixture into the pie shell and place in the oven. Bake for 30 to 40 minutes, or until set and nicely colored. Serve warm.

- Heat the oven to 375°F Line an 8 inch flan tin with the pastry. Prick the base with a fork and line with greaseproof paper, fill with baking beans and bake for 10 minutes. After this time, remove the paper and beans and return to the oven for a further 5 minutes or until lightly golden.

- Combine cooked rice, 1 egg, 1/4 cup cheese, and 1/4 teaspoon salt in a small bowl, stir well.
