2 teaspoons vegetable oil
4 slices deli ham, chopped into small pieces
2 eggs
2 teaspoons chopped fresh chives, divided
¼ teaspoon salt
freshly ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
  • Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

2 eggs
50 ml milk
1 slice ham
1/2 stalk green onion
5 ml margarine
50 ml cheddar cheese
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Wash and chop green onion.
  • Wash and slice ham.
  • In a mixing bowl, combine eggs, ham, milk, onion, salt and pepper. Beat well.
  • Heat skillet on medium and melt margarine.
  • Pour egg mixture into skillet. As the omelette begins to set, lift up edges with egg flipper so uncooked portion of egg can flow under the cooked portion.
  • When eggs are set but the top is still moist, sprinkle ¾ of the cheese over it.
  • Fold one edge of the omelette over the cheese, then sprinkle the remaining cheese over the top.
  • Slide omelette onto the plate and cut into portions.

Steps:

  • Whisk eggs with milk and salt and pepper. Set aside.
  • Heat large nonstick frying pan with nonstick cooking spray over medium high heat.
  • Add egg mixture and cook without stirring until only a tiny bit of egg is still wet. Place 2 cheese slices on half of the omelet. Sprinkle ham over the cheese and top with other 2 slices cheese.
  • Carefully fold over one side of omelet on top of other. Slide out of pan onto plate.

3 free-range eggs
10g/½oz unsalted butter
30g/1oz cheddar, preferably Montgomery cheddar
1 thick slice ham, finely chopped
salt and freshly ground black pepper

Steps:

  • Gently beat the eggs together in a mixing bowl and season, to taste, with salt and pepper.
  • Heat the butter in a frying pan until foaming. Pour in the eggs and cook for a few seconds, until the bottom of the omelette is lightly set. Push the set parts of the omelette into the uncooked centre of the omelette. Cook again, until the omelette has set further, then push those set parts into the centre of the omelette again. Repeat the process until the eggs have just set but the omelette is still soft in the centre.
  • Put the cheese and three-quarters of the ham in the centre of the omelette and cook until the cheese has melted.
  • Increase the heat to high and cook the omelette for a further 30 seconds, or until it browns on the bottom.
  • Fold the omelette in half, then remove the pan from the heat and tilt it slightly to move the omelette to the edge of the pan. Slide the omelette onto a serving plate, then shape it into a neat roll. Sprinkle over the remaining ham.

1/2 cup ham pieces
3 medium fresh free-range eggs
Kosher salt and black pepper
3/4 cup cheddar cheese

Steps:

  • Gather the ingredients.
  • Heat butter in an 8-inch skillet or omelet pan over medium heat. Add ham pieces and cook gently to warm through for 3 to 4 minutes.
  • Break eggs into a small bowl. Gently mix with a fork. As mentioned above, do not whisk.
  • Tip gently stirred eggs over ham in skillet over medium heat. Using a fork, gently move egg around pan, pushing cooked egg from the pan's bottom and allowing uncooked, liquid egg to run into its place. Gradually, all the eggs will start to set.
  • Immediately once egg starts to set, sprinkle cheese and stop stirring. Let omelet sit for about one minute for heat to start to reach cheese. Sprinkle over a tiny pinch of salt and black pepper.
