1 cup milk
4 eggs
1 cup all-purpose flour
1 tablespoon powdered sugar
Butter, for cooking the crepes
2 1/2 pounds ricotta
3/4 pound brick cream cheese, at room temperature
2 eggs
1 cup powdered sugar
1 tablespoon vanilla extract
Butter, for cooking rolled crepes
Serving suggestions: sour cream and fruit preserves

Steps:

  • For the crepe: Beat milk, eggs and 1 cup water in a bowl. Add flour and powdered sugar to make a thin batter.
  • Pour 1/4 cup batter on a well-buttered medium hot 10-inch fry pan, spreading it as thin as possible. Fry until light brown, then flip and brown other side until light brown. Turn out on wax paper. Repeat with remaining batter.
  • For the cheese filling: Mix ricotta, cream cheese, eggs, powdered sugar and vanilla in a bowl. Spread evenly over the surface of a crepe. Tuck in ends and roll up. Cook in butter in a fry pan until brown on both sides. Repeat with remaining crepes and filling.
  • Serve with sour cream and fruit preserves.

3/4 cup water
3 large eggs
1 1/2 teaspoons vanilla extract
1/4 teaspoon plus 1/8 teaspoon salt
1/2 cup plus 2 tablespoons all purpose flour
1 1/2 7.5-ounce packages hoop cheese (about 1 1/2 cups) or 1 pound large-curd cottage cheese
1/4 cup sugar
1/4 teaspoon ground cinnamon
3 tablespoons butter, melted
2 tablespoons vegetable oil
Caramelized Apples

Steps:

  • Place 3/4 cup water, 2 eggs, vanilla extract and 1/4 teaspoon salt in blender. Add flour and blend thoroughly until smooth. Let batter stand 1 hour.
  • Place hoop cheese in processor. If using cottage cheese, place in center of kitchen towel and squeeze to remove excess moisture until cheese is very dry and measures 1 1/2 cups packed; transfer to processor. Add 1 egg, 1/4 cup sugar, 1/4 teaspoon cinnamon and 1/8 teaspoon salt. Using on/off turns, blend until mixture is almost smooth. Transfer filling to bowl. Cover and refrigerate.
  • Heat heavy small skillet with 6-inch-diameter bottom over medium-high heat. Brush lightly with some melted butter. Pour 2 1/2 tablespoons batter into skillet, tilting to spread evenly. Cook until crepe is lightly browned on bottom, about 30 seconds. Turn crepe out onto paper towel and cover with another paper towel. Repeat with remaining batter, brushing skillet with more melted butter as needed.
  • Place 1 crepe on work surface. Place 3 tablespoons filling just below center of cooked side of crepe. Fold bottom over filling, then fold sides in; roll to enclose filling. Transfer to foil-lined plate. Repeat with remaining filling and 7 more crepes (reserve remaining crepes for another use).
  • Heat 2 tablespoons oil and any re-maining melted butter in heavy large skillet over medium-low heat until hot. Place blintzes, seam side down, in skillet. Cook until bottoms are brown and crisp, shaking pan occasionally, about 6 minutes. Turn blintzes over; cook until bottoms are brown and crisp, about 5 minutes. Transfer 2 blintzes to each of 4 plates. Top with Caramelized Apples and serve.

APPLE & BLUEBERRY BLINTZES

Blintz is the Russian name for a thin pancake often wrapped around a filling

1x classic pancake recipe (see 'Goes well with')
250g tub mascarpone
1 tsp vanilla extract
3 tbsp caster sugar , plus a little extra for sprinkling
1 egg yolk
50g unsalted butter
6 small eating apples , peeled, cored and cut into 8
200g blueberries
½ tsp ground cinnamon
200g blueberries
3 tbsp caster sugar
squeeze fresh lemon juice

Steps:

  • Prepare pancakes following the classic recipe (see 'Goes well with').
  • Beat together the mascarpone, vanilla extract, 1 tbsp of the sugar and the egg yolk until smooth and thoroughly combined, set aside. Melt half the butter in a large frying pan and add half the apples and half the remaining sugar. Cook until the apples are tender and starting to caramelise. Remove from the pan and cook remaining apples in the same way. Set aside. Add the blueberries to the pan, cook for 1-2 mins until they start to soften, remove from the pan and add half to the apples.
  • Place all the ingredients for the sauce in a saucepan with 75ml of water and cook over a low heat until the blueberries start to break down. Push the mixture through a fine nylon sieve, taste and add sugar or lemon juice if needed. Add the reserved softened blueberries and pour into a jug for serving.
  • Heat the oven to 180C/160C fan/gas 4. Lay the pancakes out on a work surface and divide the mascarpone mixture into the middle of each pancake in a neat dollop. Top the mascarpone with the apple and blueberry mixture and fold over the sides of the pancakes to completely encase the filling in a neat square parcel. Arrange the blintzes in an ovenproof dish seam side down and scatter with a little caster sugar plus a pinch of ground cinnamon.
  • Bake on the middle shelf for about 10-15 mins or until warmed through. Serve 2 blintzes per person with the blueberry sauce alongside in a jug.

Most people are familiar with blintzes, the marvelous Jewish dish of crepes filled with sweetened cheese and usually served with sour cream and preserves. here's a not-so-sweet rendition to begin a meal, or to become it's centerpiece, set off by a salad.

1 cup finely crumbled bleu de bresse blue cheese or 1 cup other creamy blue cheese (about 1/4 pound)
1/2 cup crumbled farmer cheese or 1/2 cup cottage cheese
1 egg yolk, well beaten
3 crisp tart green apples or 3 ripe but firm pears
1/4 lb butter, about
ground cinnamon or freshly grated nutmeg (optional)
1 cup sifted all-purpose flour
1/4 teaspoon salt
1 cup water or 1 cup milk
2 eggs, well beaten
creme fraiche

Steps:

  • to make filling, combine the cheeses and egg yolk in a small bowl.
  • Mix with a fork or wire whisk until light and fluffy.
  • Reserve.
  • Peel, core and thinly slice the apples or pears.
  • Melt 3 TBS butter in a small pan or skillet over medium heat and add apples or pears.
  • Sprinkle with cinnamon or nutmeg to taste and saute fruit until it is soft but still holds it shape.
  • Remove from heat and set aside in the pan.
  • To make the crepes, sift the flour and salt together in a small mixing bowl.
  • Whisk together the water or milk and eggs in a seperate bowl and then stir the mixture into the flour to make a thin batter.
  • Grease a 7 inch skillet or griddle with butter and heat over medium high heat until it sizzles.
  • Ladle or pour in about 2 TBS batter and tilt the pan to coat the bottom evenly with a thin coating of batter.
  • Cook the crepe, on one side only, until it begins to curl away from the sides of the pan, about 1 to 2 minutes.
  • Slide the crepe onto a plate and repeat until all the batter is used up, adding butter to the pan as needed and stacking crepes as they are cooked.
  • You should have 12 crepes in all.
  • Place about 2 to 2-1/2 TBS of the cheese filling on the center of the uncooked side of each crepe.
  • Fold in sides to form small square packages.
  • Melt 2 to 3 tablespoons butter in a skillet over medium high heat, place 3 to 4 blintzes in pan, seam side down, and saute, turning once, until golden brown on each side, about 2 to 3 minutes in all.
  • While browning blintzes, quickly reheat sauteed fruit.
  • Serve blintzes at once, topped with warm apple or pear slices and a dollop of creme fraiche.

Steps:

  • Add cottage cheese to a blender or food processor and process till smooth.
  • Add cream cheese, sugar and vanilla - combine until smooth.
  • Pour into a bowl and add chopped strawberries.

Steps:

  • To prepare batter:.
  • Combine flour, sugar and salt.
  • In large mixing bowl, beat eggs.
  • Alternately add dry ingredients with water, till batter is smooth.
  • Using an 8-inch frying pan (or a crepe pan), lightly grease pan and heat until the pan is hot.
  • Pour 1/4 cup batter into hot frying pan, cook until batter starts to puff up - probably not even a minute.
  • Turn pancake over and brown.
  • Turn 'pancake' out onto a cotton dish towel.
  • To prepare apple filling:.
  • Pare,core and slice apples into 1" thick slices.
  • In a medium saucepan, combine apples, water, sugar, margarine and salt; bring to boil.
  • Reduce heat and simmer until apples are transparent.
  • Set aside and keep apples and syrup warm.
  • To assemble crepes:.
  • Place 3-4 apples slices on each crepe.
  • Place single layer in lightly greased baking dish; pour over apple syrup and heat.
  • Serve with remaining sauce.

8 Basic Blintzes
2 tbs. butter
2 med. cooking apples
3 tbs. brown sugar
1/2 cup water
1/2 tsp. vanilla
1/4 tsp. cinnamon
Cheese Filling
3 tbs. butter
1 tbs. salad oil

Steps:

  • Make crepes as directed and set aside. Heat butter in medium skillet. Peel and thinly slice apples. Sauté apples in butter 4 to 5 minutes until they are well glazed. Add sugar, water, vanilla and cinnamon. Cook uncovered for about 10 minutes until water has evaporated and mixture is soft. Place 2 tablespoons cheese filling in center of each blintz crepe. Top wit an equal amount of apple filling. Heat butter and oil in large skillet. Fry the filled blintzes 2 to 3 minutes on each side until they are golden brown. Drain on paper toweling and serve hot. Makes 8 blintzes.
