I was trying to think of a way to use my overabundance of Bing cherries last summer. I have an obsession with muffins, so I started brainstorming, and thus was born these wonderful, chocolaty muffins.

2 ⅓ cups all-purpose flour
1 ¼ cups white sugar
⅓ cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup sour cream
½ cup milk
⅓ cup vegetable oil
2 eggs, beaten
1 teaspoon almond extract
1 ½ cups fresh dark sweet cherries, pitted and chopped
1 cup miniature semisweet chocolate chips

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 jumbo (3 1/2-inch) muffin cups or line with paper baking cups.
  • Stir together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a separate large bowl, and make a well in the center; set aside. Whisk together the sour cream, milk, vegetable oil, eggs, and almond extract in a bowl until evenly blended. Pour the sour cream mixture into the well, then stir in the flour mixture until just combined. Fold in the cherries and chocolate chips. Spoon into prepared muffin cups, filling half full.
  • Bake until a toothpick inserted into centers comes out clean, about 20 to 25 minutes. Cool in pan on wire rack 5 minutes. Remove from pan and cool completely on wire rack. Store tightly covered at room temperature.

1 cup flour
3 tablespoons light brown sugar
2 tablespoons granulated sugar
1 teaspoon baking powder
1 pinch salt
6 tablespoons butter, melted
1 3/4 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 large eggs
1/2 cup canola oil
3/4 cup whole milk
1 teaspoon vanilla
1 1/2 cups pitted sweet cherries

Steps:

  • 1. Preheat oven to 375. Line muffin tins with liners or spray with cooking spray.
  • 2. Make the crumb topping: In medium bowl, combine all dry ingredients. Stir in butter then pinch mixture until it forms pea size chunks.
  • 3. Make the muffins: In a small bowl whisk the flour, baking powder and salt. In a large bowl, combine the sugar, eggs and oil and beat with a hand mixer until well combined. Beat in the milk and vanilla. Add the flour mix and beat on low speed until the batter is smooth. Stir in the cherries.
  • 4. Spoon the batter into muffin tins filling about 3/4 full. Sprinkle crumb topping on each muffin and bake for about 30 minutes until a toothpick inserted in center comes out with a few moist crumbs attached.
  • 5. Let cool for 10 minutes before removing from pan.

250g self-raising flour
1 tsp bicarbonate of soda
140g dried sour cherry
100g bar white chocolate , cut into chunks
100g bar dark chocolate , cut into chunks
100g golden caster sugar
2 eggs , beaten
150ml pot natural yogurt
100g butter , melted

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and line a 12-hole muffin tin with some paper cases. Sift the flour, and bicarbonate of soda into a large bowl, then stir in the cherries, chocolate and sugar. Add the beaten eggs, yogurt and then the butter and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.
  • Fill the paper cases and bake for 20-25 mins until risen and golden brown. Transfer to a rack to cool. They are especially delicious eaten slightly warm.

We were very lucky to have once had a home with a cherry tree that produced an abundance of fresh baking cherries. I used to make these muffins a lot when I had fresh cherries on hand, and I kept bags of them in the freezer pre-measured for this recipe. These are not sweet eating cherries - these are baking cherries. The original recipe came from a flyer from the Cherry Marketing Institute.

2 1/2 cups frozen unsweetened tart red cherries, pitted,divided
1/2 cup sweet unsalted butter
1 cup sugar
2 eggs
1 teaspoon almond extract
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup half-and-half cream, whole milk or 1/2 cup light cream

Steps:

  • While cherries are still frozen, cut them into halves, then set aside to thaw and drain in a mesh colander over a bowl.
  • Cream butter and sugar using an electric mixer.
  • Add eggs, almond extract, and vanilla and beat well.
  • Crush 1/2 cup of the thawed cherries with a fork; add the mashed cherries to the batter.
  • Mix flour, baking powder, and salt in a separate bowl.
  • Fold half of the flour mixture into the butter mixture using a spatula; do not overmix.
  • Add half of the cream or milk, mixing just enough to combine.
  • Add remaining flour, then remaining milk; again avoid overmixing.
  • Fold in the remaining cherry halves.

  • If desired, you may sprinkle the muffins with some extra sugar.

1/2 cup Vegetable Oil

1 1/2 cups Frozen Tart Cherries (slightly thawed and coarsely chopped)

Steps:

  • Preheat the oven to 400 degrees.
  • Grease a 12 muffin and cupcake pan with cooking spray or add a teaspoon of cooking oil to each one. Alternately, you can line them with cupcake wrappers.
  • First, you will create the streusel mixture. In a small bowl, microwave the butter for about ten seconds until it is very soft.
  • Add the flour, sugar, and cinnamon, using a fork to combine them until the mixture is dry and crumbly and all the butter is incorporated. Set the streusel topping aside.
  • In a large bowl, mix together the flour, baking powder, salt, and baking soda. Add the cherries and toss them with the dry ingredients to coat.
  • Add the sugar and stir to combine. In a smaller bowl, beat the egg and then add in the yogurt, vegetable oil, and milk. Stir in the vanilla.
  • Using a spatula, stir the wet ingredients into the flour mixture. Stir just until the dry ingredients are moistened. Do not over mix the muffin batter or your muffins will be tough.
  • Spoon the batter evenly among the prepared muffin cups. Top each muffin with a small spoonful of the streusel topping, evenly distributing it. Bake the muffins for about 18 to 20 minutes or until the center of the muffins spring up when lightly touched.

425g can pitted Morello cherry , drained

Steps:

  • In a mixer using the blade attachment, cream together the butter and sugar. Add the eggs, one at a time, and mix for 4 mins. Add the flour, baking powder and milk, and mix for a further 4 mins on slow, then mix in the chocolate.
  • Heat oven to 200C/180C fan/gas 6. Cut 16 squares of baking parchment big enough to act as cases for the holes of your muffin tins. Using a piping bag or a spoon, fill the muffin cases with the mixture. When all the cases are filled, share the cherries equally between the muffins, pushing them into the mixture as you go. Bake for 25 mins, then serve warm or cold.

½ cup unsalted butter, melted ((1 stick butter))
2 cups + 1 Tbsp all-purpose flour, divided ((1 Tbsp for tossing with the cherries))
1 cup sugar
1 Tbsp baking powder
1 tsp salt
1 cup milk
2 eggs, lightly beaten
zest of 1 orange, finely grated
1 cup dried cherries

Steps:

  • Preheat oven to 400˚F. Grease a standard 12-cup muffin tin with butter. In a small bowl, toss the dried cherries with a bit of flour, which will help prevent them from sinking to the bottoms of the muffins.
  • In a large bowl, mix together the flour, sugar, baking powder, and salt until it's evenly combined. In another bowl or a largish measuring cup, whisk together the milk and eggs, then add in the melted butter and orange zest. Make a hole in the center of the dry ingredients, and pour in the wet, then fold everything together to make a batter. Work quickly, and don't overbeat: you don't want tough muffins. Fold in the floured cherries, leaving any excess flour behind.
  • Spoon the batter into the prepared pan, filling the muffin cups 3/4 full. If you like, you might sprinkle the tops of the muffins with some extra sugar - if you do, make it the coarse crunchy stuff - but I did not, and the result was very fine.
  • Bake at 400˚F 20-25 minutes, until the muffins are golden and a toothpick comes out clean when poked into the center muffin. Let cool in the pan undisturbed for 5-10 minutes, then tip the muffins to expose the bottoms to cool thoroughly - except, of course, for the ones you snag to eat when they're still warm.

  • place all your ingredients into a bowl keeping back the cherries and coconut and use an electric whisk to beat together for at least 2-3 minutes
  • add your coconut and quarter your cherries leaving 18 out to top before putting in the oven
  • place mix in cupcake cases and place whole cherries on top of the mixture

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Whisk the flour, sugar, baking powder, cinnamon, cardamom and salt in a medium bowl. Whisk the eggs, milk, 1 1/2 sticks melted butter, the almond paste and vanilla in a large bowl (it?s OK if the almond paste is still a little chunky). Add the flour mixture to the egg mixture and stir until combined. Stir in the candied citrus peel.
  • Divide the batter among the muffin cups, filling them three-quarters of the way. Top evenly with the candied cherries. Bake until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes. Let the muffins cool 5 minutes in the pan, then remove to a rack.

Steps:

  • Heat oven to 375ºF.
  • Combine flour, 3/4 cup sugar, baking powder and salt in large bowl. Beat cream cheese with whisk in medium bowl until creamy. Add milk, butter and eggs; mix well. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cherries and nuts.
  • Spoon into 12 paper-lined muffin cups; sprinkle with remaining sugar.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool in pan 5 min. Remove to wire rack; cool completely.

2 cups all-purpose flour (plus 1 tablespoon more)
½ teaspoon salt
2 teaspoons baking powder
2 large eggs
¼ cup salted butter (melted and cooled)
½ cup granulated sugar
1 teaspoon vanilla extract
¾ cup milk
21 ounce cherry pie filling (divided)
¼ cup salted butter (cold and cut into cubes)
½ cup all-purpose flour
1 teaspoon baking powder
¼ cup granulated sugar
¼ teaspoon cinnamon
1 tablespoon milk or heavy cream

Steps:

  • Preheat the oven to 375°F. Line a 12-cup muffin pan with parchment paper muffin liners or spray with non-stick cooking spray.
  • Sift together flour, salt, and baking powder in a small bowl and set aside.
  • In a large mixing bowl beat or whisk together eggs, melted butter, sugar, vanilla extract, and milk.
  • Dump the dry ingredients into the egg/milk mixture and stir gently, just until combined. Do not overmix.
  • Transfer ½ (about 1 cup) of the canned cherry pie filling to a strainer and rinse the pie filling from the cherries. Allow to drain completely.
  • Toss the rinsed cherries in the remaining tablespoon of flour. Then fold into muffin batter, stirring just until cherries are distributed.
  • Divide the batter evenly between 12 muffin cups.
  • From the remainder of the cherry pie filling can, drop 2 to 3 cherries over the top of the muffins along with a small amount of pie filling.
  • In a small bowl use your fingers or a fork to mix butter, flour, baking powder, sugar, and cinnamon until crumbles form.
  • Mix heavy cream into the butter/flour mixture. Sprinkle streusel over the top of the cherries and muffin batter.
  • Bake approximately 22 to 25 minutes or until a toothpick inserted in the center of muffins comes out with only a few crumbles.
  • Cool for 10 minutes and then remove muffins from the pan onto a cooling rack.
  • Serve warm.

1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
  • Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
  • Spoon batter into the muffin cups, filling each 2/3 of the way full. Sprinkle 1 tablespoon sugar on top.

1/3 cup vegetable oil

1/2 cup low-fat plain yogurt ((or sour cream))
1/2 cup sugar
1 teaspoon vanilla

Steps:

  • Preheat oven to 400 degrees F. Spray a muffin tin with cooking spray or grease with butter or shortening. Set aside.
  • In a large bowl, stir together flour, baking soda, baking powder, and salt. Stir cherries and chocolate chips into the flour mixture.
  • In a medium bowl, whisk together oil, eggs, yogurt, sugar, and vanilla. Stir wet ingredients into dry just until mixed. Use a spring-loaded disher or a 1/3 cup measuring cup to scoop batter evenly into muffin tin.
  • Bake in preheated oven 15-18 minutes or until tops are golden brown. Cool on a wire rack.
