CHOCOLATE RICE KRISPIE CAKES

Chocolate Rice Krispie cakes image

Make a kids' classic with these chocolate Rice Krispie cakes and decorate with sweets, nuts or dried fruit for the ultimate hometime treat

Provided by Lulu Grimes

Categories     Afternoon tea, Dessert, Treat

Time 20m

Yield Makes 9

Number Of Ingredients 7

100g milk chocolate, broken up
50g dark chocolate, broken up
100g butter
4 tbsp golden syrup
100g rice pops (we used Rice Krispies)
50g milk chocolate, melted
sprinkles, mini marshmallows, nuts, Smarties, dried fruit or white chocolate buttons

Steps:

  • Put the chocolate in a heatproof bowl with the butter and golden syrup and gently melt in 10-second bursts in the microwave, or melt it over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, then take off the heat and stir in the rice pops, coating them gently with the chocolate until they are all completely covered.
  • Divide the mixture between nine cupcake or 12 fairy cake paper cases - it's easier if you slide these into a muffin tin as it will help them hold their shape. Leave to set. If you want them to set faster, put in the fridge for 1 hr.
  • Drizzle with a little melted chocolate and decorate with sweets, dried fruit or nuts while they are still wet enough to stick them on. Will keep in an airtight container for five days.

CRISPY CHOCOLATE COCONUT NESTS

Crispy Chocolate Coconut Nests image

Ever have those crunchy chocolate coconut candies from Godiva? These are WONDERFUL and sweet! Lovely addition to Christmas cookie trays and fun to make with children. Takes maybe 10 minutes from start to finish.

Provided by NitaCook

Categories     Drop Cookies

Time 10m

Yield 20 quarter sized candies

Number Of Ingredients 2

1 (16 ounce) bag dark chocolate chips or 1 (16 ounce) bag good quality sweetened chocolate
1 (16 ounce) bag shredded coconut

Steps:

  • I've estimated the bag size but you want to have approximately equal amounts of each ingredient.
  • Spread the shredded coconut in a baking pan and toast in the oven at 400° until a shade darker than golden brown (maybe 5 minutes or so I think- I never time it, just go by the color really.) Melt chocolate chips in microwave, stirring occasionally until melted.
  • (Don't over cook these or the chocolate will burn and become permanently solid) Stir coconut and chocolate together until all coconut is covered.
  • Drop by small spoonfuls onto wax paper and refrigerate until solid.
  • --I don't like semisweet chocolate in this recipe.
  • Milk or dark chocolate tastes better in my opinion, but use whatever you like.

  • Grease 1 - 2 muffin tins (depending on how full you plan to make each Rice Krispie Nest) and set to the side.
  • In a large nonstick skillet or pot, melt the butter over medium heat. Once the butter has melted add in the marshmallows and use a silicone spatula to stir until it’s combined. When you’re mixing the marshmallows into the butter, be sure to stop when only about half of the marshmallows look melted - that’s how you end up with soft and fluffy Rice Krispie Treats. The rest will melt as you mix the crispy rice cereal in. If you keep mixing until the marshmallows look totally melted, you’ll lose a lot of the air in the marshmallows, which leaves you with hard and dense Rice Krispies.
  • Add in the vanilla and salt and stir to combine. Pour in the crispy rice cereal and mix to evenly coat the cereal with the marshmallow coating.
  • Divide the cereal and marshmallow mixture evenly amongst the muffin pans. Use a greased piece of parchment paper to press the center of each “nest” down to create the indented shape.
