2.5 lbs small yukon gold potatoes
8 oz cream cheese
1/4 cup milk
4 oz sharp cheddar
3 cloves fresh garlic
1 can (4.5 oz green chiles)
1/4 tsp salt
1/2 tsp ground black pepper

Steps:

  • Bring a large pot of water to a boil. Once it is boiling, add the potatoes and garlic cloves, and boil for 10-15 minutes or until the potatoes are fork tender all the way through.
  • Drain the potatoes, then add the cream cheese, milk, cheddar, green chiles, salt and pepper to the potatoes and use a masher to mash the potatoes and combine the ingredients while mashing.
  • Work only until everything is combined and there are only small chunks of potatoes. If the potatoes are too thick, add additional milk until they are the desired consistency.
  • Serve warm and enjoy!

4 large Yukon Gold potatoes, peeled and cut into 2-inch pieces
Kosher salt
8 tablespoons butter, cold, cut into pats
2 tablespoons all-purpose flour
1 cup milk, scalded
3/4 to 1 cup shredded Monterey Jack cheese
1/4 cup grated Parmigiano-Reggiano
1 poblano chile, roasted, and then peeled, seeded and finely diced
Freshly ground black pepper
1/2 to 3/4 cup cream, warmed
Chopped fresh cilantro, for garnish

Steps:

  • Put the potatoes in a large pot with 2 tablespoons of salt and cover by a few inches of cold water. Bring to a boil, cover and cook until a paring knife inserted in the center meets no resistance.
  • Meanwhile, heat 2 tablespoons of the butter in a medium saucepan over medium heat. Whisk in the flour and cook 1 minute. Whisk in the hot milk and increase the heat to high, cooking until the milk has thickened and the flour taste has been cooked out, about 5 minutes. Remove from the heat and whisk in the Monterey Jack cheese until smooth and melted. Stir in the Parmigiano-Reggiano and poblano chile and season with salt and pepper.
  • Drain the potatoes well, and then return to the pot over low heat to dry out. When the potatoes turn white and become dry, pass them through a ricer into a large glass bowl. Gently combine the potatoes with the remaining 6 tablespoons butter and the warm cream, using a wooden spoon. Season with salt and pepper.
  • Make a well in the middle of the potatoes and fill with the cheese sauce. Garnish with cilantro and serve.

Achieving perfect mashed potatoes requires a little extra effort but the results are sublime. You cannot use a food processor, blender or any other motorized apparatus to mash the potatoes. Processing potatoes by hand using a ricer, food mill, potato masher or even just a wooden spoon yields perfect potatoes every time. Russet and Yukon gold potatoes make the best mashed potatoes. Choose firm potatoes without a hint of green and no soft or discolored spots. Do not refrigerate your potatoes or the potato starch will gradually change into sugar, causing unpleasantly sweet potatoes that will not cook up well.

2 pounds Yukon gold potatoes, peeled, cut into even sized, large chunks
3/4 cups low-fat buttermilk
Salt and cracked black pepper
2 1/2 tablespoons sambal oelek, more or less to taste

Steps:

  • Place potatoes in a medium saucepan, cover with cold water, heat to boiling, reduce the heat and simmer until cooked through, about 12 to 16 minutes. Drain in a colander. Immediately place potatoes back in pot you cooked them in and place on same burner, which has been turned off. Stir occasionally over next 5 minutes to let potatoes dry out.
  • In a small saucepan, warm buttermilk over medium low heat. Do not boil. Pass potatoes through a ricer or food mill. Alternatively, leave potatoes in pot and mash by hand using a potato masher or wooden spoon. Stir in enough warmed buttermilk to obtain desired consistency. Add salt and cracked black pepper to taste, stir until combined. Add sambal oelek, a teaspoon at a time, tasting after each addition. Serve immediately.

1 tablespoon canola oil
2 pounds russet potatoes, peeled and quartered
1/2 cup sour cream
1/4 cup 2 percent milk
1/4 cup butter, unsalted
1 cup shredded pepper jack
1 teaspoon salt
1 teaspoon freshly cracked black pepper
1/4 cup chopped cilantro leaves, for garnish
1/4 cup cotija cheese, for garnish, optional

Steps:

  • Heat a grill or broiler to medium-low. Rub the peppers lightly with the canola oil and put on a sheet pan. Roast the peppers until blackened, then transfer them to a paper bag or thick plastic bag to steam. When cool enough to handle, peel and remove the seeds, then dice. Set aside.
  • Add the potatoes to a large pot and cover with salted water. Cook the potatoes over medium-low heat until fork tender, about 8 to 10 minutes. When tender, drain and return the potatoes to the pot. Add the sour cream, milk, butter, pepper jack, salt, pepper, and the diced peppers. 20 garlic cloves, unpeeled
3 1/2 lbs white potatoes, peeled
3 ounces cream cheese, room temp
1/2 cup sour cream
1/3 cup milk
1 (4 ounce) can diced green chilies, drained
1 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine

Steps:

  • Put the garlic cloves into a saucepan and cover with water. Bring to a boil, reduce the heat and simmer 30 minutes. Drain.
  • Cool slightly and press the garlic out of the skins into a small bowl.
  • Cut the potatoes into quarters and steam over boiling water 20 to 25 minutes, or until tender. Drain and put into a large bowl. With an electric mixer beat the hot potatoes until well mashed. Beat in the garlic, cream cheese, sour cream, milk, green chilies, salt and 2 tablespoons butter or margarine.
  • Beat until smooth and fluffy. Transfer to a greased 2-quart casserole and cool. Cover and refrigerate up to 24 hours ahead. Remove from refrigeration 1 hour before cooking.
  • Dot with 1 tablespoon butter and bake, covered, in a preheated 350 degree oven 30 minutes.
  • Uncover and continue baking 25 additional minutes.
  • Note: For those who like very spicy food, substitute a 4-ounce can of chopped jalapeno chilies for the chopped green chilies.

  • In large pot of boiling, salted water cook potatoes and garlic until tender. Drain.

2 tablespoons chopped fresh chives

Steps:

  • Put the cut potatoes into a pot filled with the cold water, bring to a boil, and cook for about 20 minutes, or until a fork or knife pierces the potato chunks easily.
  • While the potatoes are cooking, put the cream, butter, salt, pepper, and chili paste into a saucepan. Heat the cream until the butter melts, but do not allow the mixture to boil. Keep the mixture warm until you are ready to add it to the potatoes.
  • When the potatoes are fully cooked, drain in a colander for 5 minutes to remove all excess moisture. It is important to rice the potatoes while they are still hot, because cold potatoes will become rubbery and starchy. Fill the ricer no more than half full. Squeeze the hot potatoes through the ricer and into a stainless steel bowl, being careful that the potatoes do not squeeze out the top of the ricer, which would cause lumps in the mashed potatoes. When all of the potatoes have been riced, stir in the hot cream and butter mixture with a wooden spoon and fully incorporate the seasoning, cream, and butter into the potatoes. Add the chopped chives and serve promptly. If the mashed potatoes must be held a few minutes, keep warm in a double boiler or in a bowl covered with plastic wrap and placed over hot water.
