EASY CHILI MAC RECIPE
The perfect back-to-school recipe! Our Chili Mac Recipe is full of bold chili flavors, beef, wagon wheel pasta, and plenty of ooey, gooey cheese. Best of all, it's ready in under 30 minutes and made all in one pot!

Steps:
- Add olive oil to a large pot (6 quart min) with a lid and heat over med-high heat until oil starts to shimmer. Add in ground beef and onions and cook, breaking up beef into crumbles, until beef is no longer pink and onions are softened.
- Stir in chili seasonings, tomatoes, beef broth, milk and beans.
- Heat until mixture begins to simmer, then add in the pasta and stir. Bring back to a simmer and cover pot and cook for 10 to 12 minutes, or until pasta is soft. (There will still be liquid in the pan, you don't want it to all absorb). You may need to adjust cook time to desired degree of doneness for pasta.
- Take off heat and stir in cheese until melted. Taste for salt and pepper, and add as needed. Garnish with chopped fresh parsley, if desired.

Steps:
- Lighlty beat egg; stir in beef, crumbs, sugar, 1 tsp chili powder, 1/2 tsp cumin, and garlic powder.
- Shape mix into 16 meatballs.
- Heat large skillet over med-high heat.
- Add meatballs and cook; turning until browned on all sides.
- Reduce heat to med-low and cover.
- Cook until they are no longer pink in the middle.
- Drain on paper towels.
- Cook pasta according to package.
- In pan over med-high heat, whisk sauce mix, half and half, 1/2 cup water and remaining chili powder and cumin.
- Add butter and cook stirring constantly until mixture boils.
- Reduce heat to low and stir in tomatoes.
- Simmer 3 minutes.
- Toss pasta with sauce and meatballs.

- Mix beef, onion, rice, and salts.
- Shape into 16-20 meatballs.
- Melt butter in a skillet and brown meatballs on all sides.

CRANBERRY & CHILI MEATBALLS

Steps:
- Combine first 8 ingredients in a large bowl.
- Shape mixture into about 54 (1-inch) balls.
- Cook meatballs, in batches, in a large skillet over medium-high heat until browned (about 5 minutes); remove meatballs from pan, and drain well on paper towels.
- Stir together cranberry and chili sauces and next 5 ingredients in a large Dutch oven over medium heat, and cook, whisking occasionally, 5 minutes or until smooth.
- Add meatballs; reduce heat to low, and cook, stirring occasionally, 15 to 20 minutes or until centers are no longer pink.
- Note: To make ahead, place cooked meatballs in a zip-top plastic freezer bag, and freeze up to 1 month.
- Thaw in refrigerator, and cook, stirring occasionally, until thoroughly heated.
