CHEDDAR-CRUSTED CHICKEN WITH BUTTERY MASHED SWEET POTATOES AND ROASTED BROCCOLI
Crispy panko-coated chicken sounded pretty tough to top, but our chefs were up to the challenge. They went and made it 35x (a scientific number) more delicious by adding cheddar cheese and zesty Fry Seasoning to the crunchy coating. And while chicken in this dish is the main event, the sides are excellent accompanying acts. We're serving up silky mashed sweet potatoes and crispy-edged roasted broccoli for a sweet-and-savory sensation. The best part? Everything comes together in 30 minutes! Talk about a weeknight win.

- Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry all produce. Peel and dice sweet potatoes into ½-inch pieces.
- Place sweet potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender, about 15 minutes. Drain and return to pot. Keep covered until ready to mash.
- Meanwhile, in a small bowl, combine panko, cheese, half the Fry Seasoning, a drizzle of olive oil, salt, and pepper. Pat chicken dry with paper towels and season all over with salt, pepper, and remaining Fry Seasoning.
- Transfer chicken to a baking sheet; brush with half the sour cream (you'll use the rest later) and evenly top with panko mixture, pressing to adhere. Toss broccoli on a second baking sheet with a drizzle of olive oil, salt, and pepper. Place chicken on middle rack and broccoli on top rack. Roast until chicken is cooked through and broccoli is browned and tender, 15-20 minutes. TIP: Broccoli may finish before chicken. If so, remove from oven and continue roasting chicken.
- Meanwhile, mash sweet potatoes with 2 TBSP butter (4 TBSP butter for 4 servings), remaining sour cream, and a large pinch of salt. Keep covered until ready to serve. TIP: If you like your sweet potatoes extra sweet, add a pinch of brown sugar or a drizzle of honey while mashing.
- Divide sweet potatoes, broccoli, and chicken between plates. Serve.

CHICKEN POTPIE WITH CHEDDAR CRUST

- Make the crust: Pulse the flour, fine salt and 1/4 teaspoon pepper in a food processor. Add the cheese, butter and shortening; pulse until the butter is in pea-size bits. Add 1/2 cup ice water and pulse until the dough just starts to come together. Turn out onto a sheet of plastic wrap and pat into a disk. Wrap and refrigerate until firm, at least 1 hour and up to 2 days.
- Meanwhile, prepare the filling: Discard the chicken skin and shred the meat; set aside. Put the bones in a pot and add the chicken broth. Cover and simmer over medium-low heat, 45 minutes to 1 hour. Strain the broth and set aside.
- Preheat the oven to 400 degrees F. Melt the butter in a pot over medium-high heat. Add the onion, thyme, celery, carrots and 1/2 teaspoon kosher salt; cook, stirring, until soft, about 6 minutes. Add the mushrooms and 1/2 teaspoon kosher salt and cook until soft, about 6 more minutes. Add the flour and cook, stirring, 2 minutes. Add the wine; cook until almost evaporated, about 1 minute. Add the broth, cream and 1/2 teaspoon kosher salt. Bring to a boil, then reduce the heat to medium low and simmer until thick, about 3 minutes. Add the parsley, shredded chicken, and salt and pepper to taste. Transfer to a 3-to-4-quart baking dish.
- Roll out the dough between 2 sheets of parchment paper until slightly larger than the baking dish. Drape the dough over the filling, press it against the inside of the dish and trim. Brush with cream, then cut a few slits in the top. Put on a baking sheet; bake until golden, about 35 minutes. Let rest 10 minutes before serving.
GARLIC CHEDDAR CHICKEN

- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
- In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.
- Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9x13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.
- Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

CHEDDAR CRUSTED BAKED CHICKEN
I am trying to steer away from fried foods. One of my members asked me to test this recipe - I did. My family loved it. The sauce, using canned chicken soup is delicious when drizzled over the chicken. I serve this with vegetables or a crisp green salad

Steps:
- 1. Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces.
- 2. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. NOTE: you can add a teaspoon of Italian seasoning if you wish
- 3. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in.
- 4. Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the parsley and thyme over the chicken.
- 5. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.
- 6. SAUCE: In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.
PEPITA CRUSTED CHEDDAR JACK SOUTHWEST CHICKEN MAC

- Fill a large pot with water and bring to a boil. Add dry elbow pasta to boiling water and cook for about 10 minutes or until al dente, drain and reserve.
- Preheat oven to 350 degrees F.
- Heat olive oil in a large nonstick skillet over medium high heat. Add onion, bell pepper and jalapeno. Saute for 4 to 5 minutes or until tender. Add chicken, cilantro, salt, cumin, pepper and tomatoes; saute for 3 to 4 more minutes, remove from heat and set aside.
- In a separate large pot over medium heat, melt butter. Remove from heat and whisk in flour, salt and pepper until smooth. Place back on medium-high heat, slowly whisk in milk and bring to a boil while continuously whisking. Reduce heat and stir in Cheddar, Monterey Jack, smoked Cheddar and cream cheese until melted and smooth.
- Stir in cooked elbow noodles and chicken mixture. Pour mac and cheese mixture into a greased 3 quart casserole dish. In a medium bowl, combine the melted butter and bread crumbs. Toss to coat and sprinkle crumbs and pepitas over top of mac and cheese. Bake for 20 to 25 minutes or until cheese is bubbly and crumbs browned. Enjoy!
RITZY CHEDDAR CHICKEN BREASTS
They're as good as they sound: cheesy chicken cutlets coated with buttery Ritz crackers. Skipping the usual flour-egg-bread crumb dredge, this recipe relies instead on a flavorful base layer of tangy sour cream, which has lactic acid that tenderizes boneless, skinless chicken breasts beautifully. When it comes to breaded white meat, thin cutlets are ideal, which you can buy from the store or achieve by slicing thick breasts in half horizontally (no pounding necessary). They cook more evenly this way, staying tender throughout as they're quickly baked in a hot oven. Serve with something fresh - a big green salad, perhaps - to balance the wonderful richness of this nostalgic number.

- Position rack in the bottom third of the oven and heat oven to 450 degrees. Place an ovenproof wire rack over a sheet pan. Dab a folded-up paper towel with olive oil and rub it over the wire rack to grease it.
- In a medium bowl, whisk together the sour cream, egg white and Dijon mustard until smooth. Season with salt. Lay the chicken flat on a cutting board and carve each breast in half horizontally so you end up with four thin cutlets. Add the chicken to the sour cream mixture, and using your hands, smear the sour cream all over the chicken.
- In a large bowl, crush the Ritz crackers into coarse pieces with your fingers. Some crackers will turn to rubble while others turn to dust. Add the cheese, garlic powder, onion powder and olive oil. Season with 1/2 teaspoon salt and toss until evenly distributed. Holding one of the chicken cutlets by its thinner end, add to the bowl with the crumbs, and using your hands, pack the crumbs onto the chicken, pressing them in to create a thick coating. Transfer the breaded chicken to the rack in the sheet pan. Repeat with the remaining three cutlets.
- Bake the cutlets until the outsides are crispy and the insides are no longer pink, 10 to 15 minutes. Let the chicken cool slightly so the coating can set, about 5 minutes, before transferring to plates and serving.
GARLIC CHICKEN BAKED WITH CHEDDAR THYME CRUST
We found this recipe on the back of a Tillamook Medium Cheddar Cheese bag, the shredded variety. We loved it. It is a simple dish. We ate it with mashed potatoes, a salad and cooked carrots. But you can pair it with whatever yoiu like to please your family's own tastes. If you don't have TIllamook cheese in your area, just use your regular brand of cheese, medium variety. We like our chicken seared before baking so I lightly browned each side of the chicken before proceeding with the baking.
