Cheddar-Chile Waffles image

Serve these waffles on their own as a fun breakfast or tasty snack, or pair with Sweet-and-Spicy Glazed Pork Belly for a delicious dinner.

2/3 cup plus 1 tablespoon olive oil
3 serrano chiles, thinly sliced
Coarse salt
3 cups all-purpose flour
1 1/4 cups medium cornmeal
2 tablespoons baking powder
1/4 teaspoon cayenne
3 1/2 cups milk
4 large eggs, lightly beaten
1 tablespoon pure maple syrup
18 ounces grated sharp cheddar cheese
Nonstick cooking spray
Sour cream, for serving (optional)
Chopped fresh cilantro, for serving (optional)
Unsalted butter, for serving (optional)
Maple syrup, for serving (optional)

Steps:

  • Heat 1 tablespoon olive oil in a small skillet over medium heat. Add chiles, season with salt, and cook until softened and slightly golden, about 5 minutes. Remove from heat and set aside.
  • Preheat a Belgian waffle iron.
  • In a medium bowl, whisk together flour, cornmeal, baking powder, 1 tablespoon plus 1 teaspoon salt, and cayenne pepper. Add milk, remaining 2/3 cup olive oil, and eggs, and maple syrup, whisking to combine. Do not overmix; batter may be lumpy. Fold in the cheddar cheese and reserved sauteed chiles. Let batter rest at least 30 minutes at room temperature, and up to one hour.
  • Spray waffle iron with cooking spray. Pour 3/4 cup batter into waffle iron. Cook until golden brown, about 7 minutes. Carefully remove waffle from iron and repeat process with remaining batter. Serve immediately with desired toppings.

Apple-Cheddar Waffles image

We used self raising flour, which has both leavening and salt in it, as a shortcut ingredient to make these savory and fluffy waffles. A small bit of sugar in the batter doesn't add detectable sweetness, but keeps the waffles moist and helps the exterior crisp up when cooking.

1 stick unsalted butter, melted and cooled slightly, plus more for the waffle iron
1 1/2 cups milk
2 large eggs
2 cups self-rising flour
1/4 cup confectioners' sugar
1 Gala apple, finely chopped
1 cup grated sharp cheddar cheese
1/3 cup pure maple syrup
2 teaspoons grainy mustard
1 5-ounce package mixed baby greens
1 tablespoon apple cider vinegar
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 225˚ F or 250˚ F (as low as your oven will go). Combine the melted butter, milk and eggs in a large bowl; whisk to combine. Add the flour and confectioners' sugar and stir to moisten, then add the apple and cheese and stir until well blended. Set aside.
  • Heat a waffle iron according to the manufacturer's instructions. Working in batches, lightly butter the waffle iron, then ladle in some of the batter. Close the iron and cook until the waffles are browned and crisp, 5 to 7 minutes. Remove to a baking sheet and keep warm in the oven while you cook the remaining waffles.
  • Meanwhile, mix the maple syrup and mustard together in a small bowl. Toss the greens with the vinegar, olive oil and a pinch each of salt and pepper in a large bowl. Divide the waffles among plates, along with the salad. Drizzle the maple mixture over the waffles or serve on the side for dipping.

Don't leave waffles for breakfast, think outside the box! These are great to serve with hearty soups or stews instead of your usual corn muffins. I have never made this in a skillet as normal cornbread but am sure that could easily be done. This is a large recipe (makes 20 waffles) yet the recipe easily divides for smaller batches.

3 3/4 cups flour, all-purpose
3 cups cornmeal
3 tablespoons sugar (optional)
3 tablespoons baking powder
1 1/2 tablespoons baking soda
3/4 teaspoon salt
1 cup cheddar cheese, shredded
1/4 cup plus 2 tablespoons chives, chopped
5 1/4 cups milk, low fat is fine
3/4 cup oil, vegetable, canola, etc
6 eggs, large, lightly beaten
1 teaspoon hot sauce, Franks, Tabasco
rosemary
garlic
parsley
Old Bay Seasoning

Steps:

  • Combine flour, cornmeal, sugar (if using), baking powder, baking soda, and salt in a large mixing bowl. Whisk to combine. Stir in cheese and chives. Mix in milk, eggs, and oil. Add hot sauce, rosemary, garlic, parsley, and Old Bay seasoning to your preference.
  • Pour 2 cups of batter onto large (4 square) Belgian Waffle Maker, less for smaller makers.
  • For best results, serve immediately.
  • Alternately: keep warm in a 200 degree oven. Cool to room temperature before storing in an airtight container or freezing.

I always wanted to try these, and they are good although not how I expect waffles to taste. 1 tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
2 eggs
1 1/2 cups whole milk
5 tablespoons butter, melted
1/2 cup shredded cheddar cheese
1 tablespoon minced savory herbs (rosemary, thyme, chives, scallions or your choice)
additional cheddar cheese, cooked bacon and eggs, and desired toppings for assembling sandwiches

Steps:

  • Preheat waffle iron to medium.
  • In a bowl, mix together flour, baking powder, sugar, and salt.
  • Whisk eggs, milk, and melted butter together and pour into the dry ingredients.
  • Whisk until the batter is combined. Fold in the shredded cheddar and herbs of your choice.
  • Pour a heaping cup of the batter onto the hot waffle iron and cook until the waffles are cooked through and have a golden-brown rue.
  • Repeat until all of the batter is used.
  • Assemble breakfast sandwiches using the warm waffles, additional melted cheddar, cooked bacon and eggs, and any desired toppings.
