This frosting is packed with nutrient and antioxidant rich pumpkin and couldn't be easier with only two ingredients.

One 15-ounce can pumpkin puree
1 cup semisweet chocolate chips

Steps:

  • Bring the pumpkin puree to a simmer in a small saucepot over medium heat. Stir constantly until heated through, about 6 minutes. Place the chocolate chips into a medium bowl. Pour the pumpkin puree over the chips. Stir with a rubber spatula until the chips are melted and the frosting is smooth. Cool completely before using.

  • Combine butter and cocoa powder, stirring to combine well. Add vanilla and salt; mix well. Stir in confectioners' sugar, alternating with splashes of milk. Stir until creamy. If frosting is too thin, add 1 or 2 tablespoons confectioners' sugar.

Steps:

  • Beat the icing sugar , butter and cocoa power together in a free standing electric mixer with a paddle attachment (or use a hald held electric whisk)on medium-slow speed until the mixture comes together and is well mixed .
  • Turn the mixerdown to slow speed. Add the milk to the butter mixture a couple of teaspoons at a time . Once all the milk has been incorporated , turn the mixer up to high speed. Continue beating until the frosting is light and fluffy , about 5 minutes . The longer the frosting is beaten, the fluffier and the lighter it becomes.

1/4 cup (1/2 stick) butter or margarine, softened
1 pkg. (16 oz.) powdered sugar (about 4 cups), divided
1 tsp. vanilla
1/2 cup milk

Steps:

  • Melt chocolate in saucepan on very low heat, stirring constantly; set aside.
  • Beat butter in large bowl with electric mixer on medium speed until creamy. Gradually add about half of the sugar, beating on low speed after each addition until well blended. Add chocolate and vanilla; mix well.
  • Add remaining sugar alternately with the milk, beating until well blended after each addition. Use to frost your favorite cake or cupcake recipe.
