GLUTEN-FREE CHEESE STRAWS
From Roben Ryberg's "Gluten-Free Kitchen". You can omit the ground red pepper, if desired. (5" long by 1/3" wide)

Steps:
- Preheat oven to 375 degrees F.
- In a medium bowl, combine and mix well, butter, cornstarch, potato starch, ground red pepper, xanthan gum, and salt.
- Mixture will be crumbly.
- Add cream and beat until smooth.
- Add cheese and mix until dough is almost uniform in color.
- Roll out or pat the dough to 1/4" thickness (unfloured surface).
- If the dough is too sticky to work with, refrigerate it for a few minutes or so.
- Cut into thin straws and place on a greased baking sheet.
- Bake about 12 minutes.

- Preheat oven to 375°F.
- Cream cheese and butter together using an electric mixer.
- Add remaining ingredients and mix well.
- Roll dough out to a 1/4" thick rectangle on a floured cutting board.
- Cut into 3/4" wide strips.
- Twist the strips a few times and place on an ungreased cookie sheet.
- Bake 5-7 minutes; cool on a rack.

I won't forget the cheese straws that my mother made for my father. The only difference was that she did not add cayenne pepper. These make wonderful hors d'oevres.

Steps:
- Preheat oven to 400 degrees F (205 degrees C). Grease or line a baking sheet with parchment paper.
- Combine the flour, baking powder, cayenne pepper, salt, grated cheese and butter or margarine in a bowl and mix until well combined. Add water a little bit at a time to make a very stiff dough.
- On a lightly floured surface, roll pieces of the dough into just slightly thicker than pencil shaped sticks. Cut sticks into 4 to 5 inch lengths. Arrange the pieces on the baking sheet.
- Bake at 400 degrees F (205 degrees C) for 5 minutes or until browned.

- Mix all ingredients with a wooden spoon in a medium bowl. It should come together easily if the butter and cream were at room temperature. I kneaded it with my hands for a few minutes to make sure it was mixed thoroughly.
- To make cheese crisps/straws: Put the dough in a cookie press with the bumpy line attachment. (Descriptive, I know. Basically it's a one inch line opening with one flat side and one side with ridges). Press the dough through the cookie press onto a parchment lined baking sheet. If desired brush with extra melted butter and sprinkle with a tiny bit of garlic powder. Bake for 12-15 min out until golden brown.
- To make crackers: Roll out the dough between two pieces of parchment paper until it is about 1/4 inch thick. Remove the top piece. Cut with a pizza cutter into squares. If desired brush with extra melted butter and sprinkle with a tiny bit of garlic powder. Bake for 15-20 min out until golden brown.
