2 tablespoons butter
2 packages (8-1/2 ounces each) cornbread/muffin mix
2 large eggs, room temperature, lightly beaten
1/2 cup 2% milk
1/2 cup plain yogurt
1 can (14-3/4 ounces) cream-style corn
1/2 cup shredded cheddar cheese
HONEY BUTTER:
1/2 cup butter, softened
2 tablespoons honey

Steps:

  • Place butter in a 10-in. cast-iron or other ovenproof skillet. Place in a 400° oven until melted, 4-6 minutes., Meanwhile, in a large bowl, combine the cornbread mixes, eggs, milk and yogurt until blended. Stir in corn and cheese. Pour into hot skillet. , Bake at 400° until a toothpick inserted in the center comes out clean, 20-25 minutes. Cut into wedges., In a small bowl, cream butter and honey. Serve with warm cornbread.

1 cup shredded cheddar cheese (4 ounces)

Steps:

1 1/4 cups stone-ground cornmeal
3/4 cup all-purpose flour
2 tablespoons sugar
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
2 large eggs
1/2 cup 1/2-inch cubes Cheddar, plus 1 cup shredded
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8-inch square baking pan and set aside.
  • Combine the cornmeal, flour, sugar, kosher salt, baking powder and baking soda in a large bowl and set aside. Whisk together the butter, buttermilk and eggs in a bowl and stir to combine. 3 bell peppers, mixed colors, seeded and finely diced

225 g (1/2 lb) Armstrong Mild Cheddar cheese, grated

Steps:

  • Preheat oven to 200°C (400°F).
  • Pour the oil into a large 25 cm (10 in) cast iron pan and set aside.
  • In a large bowl, stir together the flour, cornmeal, sugar, baking powder, baking soda and salt. Set aside.
  • In another bowl, whisk together the butter, eggs, sour cream and milk. Fold in the flour mixture until just combined. Using a rubber spatula, stir in corn, bell peppers, jalapeño and cheddar. Do not overmix.
