- Preheat the oven to 375 degrees F. Heat the olive oil in a medium skillet over medium heat. Add the onion and cook, stirring, until golden brown, about 6 minutes. - Preheat the oven to 350º F. Butterfly the chicken breasts by carefully cutting them open with a very sharp long thin knife. Don't cut all the way through. Leave a pocket for the fillings.
- Season the inside of the chicken with the salt and pepper.
- Cut the cheese slices in half so you can lay them inside chicken and not overhang.
- Cut the pepper into long strips that lay flat.
- Lay the pepper slices and top with cheese on the pocket in the chicken, then fold the chicken back up.
- Carefully wrap chicken with bacon. I did not need to use toothpicks. My bacon gripped the chicken very well.
- Bake in the preheated oven for 30 minutes until the chicken is done and no longer pink inside. A Meat thermometer will help.
- When chicken is cooked thoroughly, place the oven pan under the broiler and crisp the bacon for about 2 minutes.

- 1. Preheat oven to 350 degrees. Line a large jellyroll pan (or large cookie sheet with rim) with foil so it's hanging over a little. Line up bacon side by side in jellroll pan (may overlap a bit) and bake for 12 minutes. You want to partially cook it and still have it limp. Do not drain off bacon grease from jellyroll pan, you will need this later in the pan. Increase oven temp to 400 degrees.
- 2. Trim your chicken breasts of excess fat, if any, and slice chicken breasts in half lengthwise so you have two large tenders from each whole breast. Take 4 of your pieces of bacon and cut in half. Wrap 1 whole and 1 half piece of bacon around each chicken breast tender making sure ends of bacon are tucked under bottom of chicken piece.
- 3. Place all of your bacon wrapped chicken in same jellyroll pan you cooked the bacon in with reserved bacon grease. Baste chicken pieces with BBQ sauce, using about 1/2 cup of sauce. Bake in oven for 20 minutes, check for doneness. Remove from oven and baste chicken with remaining BBQ sauce. Turn oven to broil and broil chicken for 3~4 minutes to crisp up the bacon and carmalize the BBQ sauce slightly. Keep an eye on it so it doesn't burn.
- 4. Remove from oven and place chicken on serving platter. Sprinkle the cheddar cheese over all of the chicken and let melt. Enjoy!!

- Add water to a baking dish (I just use a cookie sheet).
- Place onions in water.
- Wrap each chicken breast with a slice of bacon. Make sure ends of bacon are faced downwards when placed on cookie sheet.

- Preheat oven to 400ºF. Line a baking sheet with foil and lay 8 slices of bacon on foil. Bake bacon 7-9 minutes, depending on how crispy you prefer your bacon to be in the end. Remove partially cooked bacon from oven.
- Turn down oven to 375ºF. Butterfly chicken breasts by starting at the thicker end and cutting through the middle, being careful to not cut all the way through. - Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4" thick.
- Mix together softened cream cheese, chopped green onion, and pepper jack cheese. Put 1/4 of this mixture into the middle of each piece of chicken.

- Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.

- For the chicken, use a sharp knife to cut a pocket lengthways into the chicken breast. Mix the cheese and rosemary together in a bowl, then stuff the mixture into the pocket of the chicken breast.
- Heat the butter in an ovenproof frying pan over a high heat. Add the chicken and fry for 1-2 minutes on each side, until the bacon is golden.
- Place the frying pan into the oven and roast for 15 minutes or until the chicken is completely cooked through.
- Meanwhile, for the leeks, heat the butter and the oil in a frying pan over a medium heat. Add the garlic, onion and leek, and sauté for 2-3 minutes, until soft.
- Add the double cream to the frying pan and season, to taste, with salt and freshly ground black pepper.
