EXTRA-HOT YUCATáN-STYLE ROASTED-HABANERO SALSA (CHILE TAMULADO) RECIPE

Extra-Hot Yucatán-Style Roasted-Habanero Salsa (Chile Tamulado) Recipe image

An incredibly fiery salsa from the Yucatán, made with charred garlic and habanero chiles. Use it sparingly on tacos, eggs, and anywhere you want a bit of brain-melting heat.

Provided by J. Kenji López-Alt

Categories     Salsa     Sauce

Time 30m

Number Of Ingredients 6

1 whole head garlic, split into cloves, cloves left unpeeled
24 whole habanero chiles (about 6 ounces; 170g) (see note)
2 tablespoons juice from 1 grapefruit (1 ounce; 30ml) (see note)
2 tablespoons juice from 1 orange (1 ounce; 30ml) (see note)
2 tablespoons juice from 2 limes (1 ounce; 30ml) (see note)
Salt

Steps:

  • Combine peeled garlic, habaneros, and grapefruit, orange, and lime juice in a blender or molcajete. Blend or pound until a smooth but still pulpy consistency is reached. Be very careful when opening blender or pounding in molcajete to avoid getting liquid or vapors near your eyes and nose. (It will burn your eyes and make you cough/sneeze.)
  • Transfer salsa to a bowl, let rest for 15 minutes, then season to taste with salt. Salsa can be stored in a sealed container in the refrigerator for up to 2 weeks.

GRILLED SWORDFISH WITH A GRILLED MANGO SALSA

Grilled Swordfish with a Grilled Mango Salsa image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 12

1 ear corn, shucked
2 ripe mangoes, peeled and cut into large wedges
2 limes, peeled, segmented and diced plus juice of 1/2 lime
1/4 cup small diced red onion
1/2 habanero chile, minced
1/4 cup fresh cilantro, minced, plus extra leaves for garnish
1 avocado, small diced
Kosher salt
1 teaspoon ancho chile powder
1 teaspoon ground coriander
Four 6-ounce swordfish steaks
1/4 cup extra-virgin olive oil, plus more for drizzling

Steps:

  • Preheat a grill to medium-high.
  • Grill the corn, rotating occasionally, until charred, about 10 minutes. Cut the kernels from the cob. Meanwhile, grill the mangoes on each side until charred, about 2 minutes per side. Place the mangoes on a cutting board and let cool slightly, then rough chop and combine in a bowl with the corn, limes, lime juice, red onion, habanero, cilantro, avocado and salt.
  • Combine the ancho chile powder, coriander and salt in a bowl. Brush the fish on both sides with the olive oil. Sprinkle the swordfish with the spice rub. Grill the swordfish until the outside is nicely charred and the interior is cooked through, about 4 minutes a side, depending on the thickness.
  • Place the swordfish on plates, then season with salt and pepper and divide the salsa among them. Garnish with a drizzle of olive oil and some additional cilantro.

CHARRED SALSA TWO WAYS

Charred Salsa Two Ways image

Provided by Trisha Yearwood

Categories     condiment

Time 35m

Yield 6 servings

Number Of Ingredients 13

3 tomatillos (about 8 ounces), husked
1 Vidalia onion, cut into thick rounds
1 jalapeño pepper
1 poblano pepper
1/4 cup vegetable oil
Kosher salt
1 clove garlic
1 lime, juiced (about 2 tablespoons)
1/4 cup extra-virgin olive oil
1/2 cup packed fresh cilantro leaves
1 tablespoon granulated sugar
One 14.5-ounce can diced fire-roasted tomatoes
Multi-color tortilla chips, for serving

Steps:

  • Place a grill pan over medium-high heat and heat for 5 minutes.
  • Meanwhile, put the tomatillos, onion, jalapeño and poblano in a large mixing bowl. Drizzle with 3 tablespoons of the vegetable oil, sprinkle generously with salt and toss to evenly coat the vegetables. Brush the hot grill with the remaining tablespoon vegetable oil.
  • Grill the vegetables, turning occasionally, until charred and softened, 12 to 15 minutes. Transfer the tomatillos and onions to the bowl of a food processor. Transfer the peppers to a cutting board to cool briefly. Trim the stems off the peppers and remove the seeds if you don't want it too spicy. Add the peppers to the food processor.
  • Add the garlic and lime juice to the food processor and pulse until the vegetables form a thick paste, about 2 minutes. With the processor on, slowly drizzle in the olive oil. Turn off the machine, add the cilantro, sugar and 1 teaspoon salt and pulse until smooth. Remove all but 1 cup of the salsa from the food processor. Set this green salsa aside.
  • To the remaining 1 cup salsa in the food processor, add the can of tomatoes. Pulse for 1 minute more until a smooth red salsa is formed. Serve both salsas with tortilla chips.
