COLD SOUTHWESTERN BOW TIE PASTA
An easy pasta salad bursting with flavor. It is fantastic for your next potluck. But bring a lot, it goes fast!

- Bring a large pot of lightly salted water to a boil. Cook the bow tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain.
- Whisk olive oil, lime juice, cilantro, garlic powder, cumin, ground chile pepper, cayenne pepper, salt, and black pepper together in a large bowl. Stir corn, black beans, diced tomatoes and green chiles, and green onions into the dressing to coat. Gently mix avocados into bean mixture; fold bow tie pasta into the salad. Cover salad with plastic wrap and refrigerate 30 minutes before serving.

BROCCOLI AND BOW TIES
Steps:
- Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
- In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
- Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with the pignolis and cheese, if using, and serve.
- To toast pignolis, place them in a dry saute pan over medium-low heat and cook, tossing often, for about 5 minutes, until light brown.

- Rinse and sort beans; soak according to package directions. Drain and rinse beans; discard liquid and set beans aside., In a Dutch oven, saute onions, carrots and fennel in oil until tender. Add garlic, pepper flakes and bay leaves; cook 1 minute. Add broth and beans., Bring to a boil. Reduce heat; cover and simmer until beans are almost tender, about 1 hour. Stir in pasta, tomatoes, parsley and salt. Bring to a boil. Reduce heat; cover and simmer 15 minutes or until beans and pasta are tender. Discard bay leaves. Serve with cheese if desired.

- In large skillet, heat oil.
- Add garlic and tomatoes.
- Cook & stir until tomatoes are slightly soft, about 2 minutes.
- Add beans, broth & spinach & cook until spinach just wilts, stirring constantly.
- Season with salt and pepper.
- Meanwhile, cook pasta according to package directions.
- Drain pasta and add to skillet.
- Add in cheeses, toss lightly & serve immediately.

- Cook pasta according to package directions reserving 1 cup of the starchy cooking liquid before draining. *For al dente, cook for 1 minute less than instructed. I also suggest cooking the pasta in salty water- your only opportunity to season the pasta.
- In a deep pan, heat olive oil over medium-high heat. Remove sausage from casings and add to the pan. Use a wooden spoon to break up the sausage meat as it browns, 7-9 minutes.
- When sausage is almost completely browned, add garlic, oregano, fennel and chili flakes. Stir and cook for 30 seconds to release flavors.
- Deglaze the pan by adding the reserved starchy cooking water and scraping up all of the brown bits with the wooden spoon.
