I came up with this tonight at 1am, had just wound up my first assignment, was in the mood for a midnight snack, but ended up making a delicious pudding:) I think it'll be a real nice one for X'Mas and New Year or any other occasion as well.

Number Of Ingredients 5

1 can Nestle sweetened condensed milk
2 cans Nestle cream
1 tablespoon cocoa powder
10 -15 Marie biscuits
chocolate chips (for garnishing) or bourbon biscuits (for garnishing)

Steps:

  • Mix milk and cream together in a large bowl.
  • Beat extremely well for 3 minutes on medium-high speed.
  • Add cocoa powder and whisk it really well.
  • Now, very carefully, pour the milk-cocoa-cream mixture on a flat tray, spreading it gently and neatly in the tray.
  • Add the biscuits over the mixture just spread, in a neat manner.
  • Pour the remaining milk-cocoa-cream mixture over the biscuits.
  • Garnish with the cherries/biscuits/chocolate chips/ grated dark chocolate.
  • (I put one glaze cherry chopped into 2 halves i. e. just 1 half over each biscuit).
  • Cover the tray with another bigger sized tray.
  • Chill for minimum 2-4 hours and serve!
  • Be sure to lick the mixture bowl clean.
  • If you want to add some creativity into it, you can cut the biscuits into different shapes, like circles, triangles, squares, diamonds, half moons,etc.
  • If you have kids at home or are planning to invite them o'er, tell them Santa has hidden some secret"goodluck" in the tray.
  • That way it'll be an extra dash of excitement watch them try to hunt for the biscuits and finish up the pudding sooner than you could imagine.

These cinnamon flavoured Christmas biscuits are great for getting the kids involved in cooking, and they will look great on the tree too

Number Of Ingredients 10

175g dark muscovado sugar
85g golden syrup
100g butter
3 tsp ground ginger
1 tsp ground cinnamon
350g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
1 egg, lightly beaten
100g white chocolate
edible silver balls

Steps:

  • Heat the sugar, golden syrup and butter until melted. Mix the spices and flour in a large bowl. Dissolve the bicarbonate of soda in 1 tsp cold water. Make a well in the centre of the dry ingredients, add the melted sugar mix, egg and bicarbonate of soda. Mix well. At this stage the mix will be soft but will firm up on cooling.
  • Cover the surface of the biscuit mix with wrapping and leave to cool, then put in the fridge for at least 1 hr to become firm enough to roll out.
  • Heat oven to 190C/170C fan/gas 5. Turn the dough out onto a lightly floured surface and knead briefly. (At this stage the dough can be put into a food bag and kept in the fridge for up to a week.) Cut the dough in half. Thinly roll out one half on a lightly floured surface. Cut into shapes with cutters, such as gifts, trees and hearts, then transfer to baking sheets, leaving a little room for them to spread. If you plan to hang the biscuits up, make a small hole in the top of each one using a skewer. Repeat with remaining dough.
  • Bake for 12-15 mins until they darken slightly. If the holes you have made have closed up, remake them while the biscuits are warm and soft using a skewer. Cool for a few mins on the baking sheets, then transfer to a wire rack to cool and harden up completely.
  • Break up the chocolate and melt in the microwave on Medium for 1-2 mins, or in a small heatproof bowl over simmering water. Drizzle the chocolate over the biscuits, or pipe on shapes or names, then stick a few silver balls into the chocolate. If hung up on the tree, the biscuits will be edible for about a week, but will last a lot longer as decorations.

200g unsalted butter, softened
200g golden caster sugar
1 large egg
½ tsp vanilla extract
400g plain flour, plus extra for dusting

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking sheet with baking parchment. Put the butter in a bowl and beat it with electric beaters until soft and creamy. Beat in the sugar, then the egg and vanilla, and finally the flour to make a dough. If the dough feels a bit sticky, add a little bit more flour and knead it in.
  • Pull pieces off the dough and roll them out to about the thickness of two £1 coins on a floured surface. The easiest way to do this with small children is to roll the mixture out on a baking mat. Cut out shapes using a 9cm biscuit cutter, or a use the rim of a small glass and peel away the leftover dough around the edges. Press some clean toys gently into the biscuits, making sure you make enough of a mark without going all the way through. Re-roll off-cuts and repeat.
  • Transfer the whole mat or the individual biscuits to the baking sheet and bake for 8-10 mins or until the edges are just brown. Leave to cool for 5 mins, then serve. Will keep for three days in a biscuit tin.

This is a simple yet delicious biscuit recipe, which I use a lot. This recipe especially goes well with eggs. I've developed it over a year and have made them very simple.

Number Of Ingredients 6

2/3 cup milk (3.5% fat)
1/3 cup sunflower oil
1 2/3 cups wheat flour
1/2 tablespoon salt
1 tablespoon baking powder
2 tablespoons yoghurt (makes them nice and soft) (optional)

Steps:

  • Take the rack out of the oven and preheat oven to 475° fahrenheit.
  • Cover rack with tin foil and fold over edges, don't grease!
  • Use a large bowl, and stir in flour, baking powder, and salt.
  • In a smaller bowl whisk together the milk, and oil.
  • When completely whisked add the milk and oil mixture to the flour.
  • Stir them into each other until most of the dough is stirred of the edges of the bowl.
  • Shape 2.5 inch to 3 inch sized spheres and drop the on the tin foil sheet spacing them 1.5 inches from one another.
  • Position in the middle of the oven and bake for 8 minute.

5 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 teaspoon baking soda
1/2 cup butter
1 package dry yeast
1/4 cup water
1 3/4 cups buttermilk

Steps:

  • Combine all the dry ingredients in a bowl and mix well.
  • Stir in butter and mix until crumbly.
  • Now dissolve yeast in water and stir into the dry mixture alongwith buttermilk.
  • Roll out dough onto a floured surface and cut out biscuits.
  • Place on a lightly greased baking pan and bake at 400 degrees for 12 minutes or until golden brown.
  • Serve with tea or coffee.
