BREADLESS HAM AND CHEESE SANDWICHES
At first glance, these look like conventional ham and cheese, but that's crunchy jicama, not bread, holding together the fiber-packed sandwiches. And you won't miss the carbs: each bite is a winning combination of salty-creaminess, sharp horseradish, and peppery arugula.

- Stir together the sour cream, chives, mustard, horseradish and a few grinds of black pepper in a small bowl.
- Lay four slices of jicama out on a work surface. Spread each with some of the mustard-horseradish sauce, top each with 1/4 of the ham, a slice of cheese, and about 1/2 cup of arugula. Sandwich with the remaining jicama slices, cut in half and serve with a pickle spear if using.
"GROWN UP" GRILLED CHEESE SANDWICH

- Cut loaf of bread in half lengthwise. Top the bottom bread slice with the Teleme cheese, then the smoked ham, distributing it evenly. Place top of bread on sandwich and brush with butter.
- Heat a sandwich grill until hot. Set sandwich, butter side down in grill. Butter top side of bread. Place a heavy pan on top of entire sandwich to evenly distribute weight and cook until nicely browned and the cheese is melted, turning once, 3 to 4 minutes on each side.
- Transfer the sandwich to a work surface and remove the top slice of bread. Spread the underside of the bread with mustard, and add roasted peppers, if desired.
- Replace the top slice of bread, cut the sandwiches into slices, and serve immediately.
PASTRAMI FOOTBALL FINGER SANDWICHES
It's true that good things come in small packages. In this case, mini sandwiches come packed to the max with pickled pepper studded cheese and smoky pastrami. Tie them up with laces made of cheese, and you've got yourself a winner for your game day party.

- Preheat the oven to 375 degrees F. Mix the shredded cheese, peppers, mayonnaise, mustard and pepper in a medium bowl.
- Stack 4 slices of the bread on a cutting board. Using a knife or 2 1/2-inch round cutter, trim the bread into football shapes, save the trimmings for another use. Continue with the remaining bread.
- Lay the bread slices on a rimmed baking sheet and brush with the melted butter. Place in oven and toast until crisp, about 5 minutes.
- Spread about 1 tablespoon of the pepper cheese mixture on the bread. Top with some pastrami, a pickle and another slice of bread.
- To make the laces, cut the cheese into 16 long strips. Cut each strip into 1 long and 3 short pieces. Lay the long strip lengthwise on the sandwich, and then the 3 short strips crosswise to make the laces. Repeat with all the strips. Put the sandwiches back into the oven for 2 minutes to set the cheese laces. Secure the sandwiches with a toothpick and serve.
GROWN-UP FARMHOUSE GRILLED CHEESE
Steps:
- Preheat the oven to 425 degrees F. Set a rack on a rimmed baking sheet.
- Lay the pancetta slices on the rack on the baking sheet and bake until crisp, 15 to 18 minutes.
- Meanwhile, set your toaster to a low setting and toast the brioche slices, (they should be slightly dry but not brown).
- Lay 4 slices lightly toasted brioche on a work surface and cover the slices with half the cheese, followed by a slice of tomato. Season each sandwich with a pinch of salt and a healthy grind of black pepper. Top each with 2 pancetta rounds and the remaining cheese. Lay the remaining brioche slices on top and press down lightly. Butter the top of each sandwich with 1/2 tablespoon butter.
- Heat a large griddle pan over medium heat.
- Melt the remaining tablespoon butter on the griddle pan and add the sandwiches, buttered side up. Cook until the bread is golden brown and the cheese is beginning to melt. Flip the sandwiches, press lightly, and continue cooking until golden and toasty. Transfer to a cutting board and slice the sandwiches with a serrated knife, on the diagonal. Arrange on a serving platter and serve immediately.
GRILLED HAM, CHEESE AND MUSHROOM SANDWICHES

- Heat a large nonstick skillet over medium-high heat. When very hot, add 1/2 tablespoon butter and half of the mushrooms; cook, stirring, until tender, about 5 minutes. Transfer to a bowl and repeat with 1/2 tablespoon more butter and the remaining mushrooms; transfer to the bowl. Add the herbs to the bowl and toss; season with salt and pepper. Wipe out the skillet.
- Build the sandwiches: Spread each slice of bread with mustard and sandwich with the cheddar, ham, mushroom mixture and muenster.
- Melt 1 tablespoon butter in the skillet over low heat. Add the sandwiches and cook, turning once and adding more butter if needed, until the bread is golden and the cheese melts, about 12 minutes.

- Place 3 slices of bread on your worktop. Spread each with a thin layer of the cream cheese mixture (you should use about ½ of it).
- Now, take 2 slices of cheddar and place these on top of one slice. Add 1 or 2 slices of ham (see note 4) and top this with lettuce. Cover with second slice of bread and top this again with cheese (I only use 1 slice here), ham, lettuce and last slice of bread (spread side facing down). Press down slightly. Repeat the same with other 3 slices.
- Cut each sandwich in half. Stick 6 toothpicks into each half and cut around them. You will get 6 mini sandwiches out of 1 half = 12 mini sandwiches out of 1 sandwich (check the process pictures for better understanding). Sticking the toothpicks in before cutting keeps the fillings from moving and makes it easier to cut the tiny sandwiches.
