Kumquat Champagne Cocktail Food
KUMQUAT & THYME COCKTAIL
A simple and stunning cocktail made with sweet-tart kumquats, fresh thyme, ginger beer and vodka. Elegant, easy to make, and crowd-pleasing!

Steps:
- Muddle kumquats, thyme, and honey in a cocktail shaker until bruised and juices release, about 30 seconds.
- Add vodka, fill with ice and shake until thoroughly chilled. Stir in ginger beer until chilled. Strain cocktail into a champagne flute and garnish with thyme sprigs and kumquats.

Steps:
- Place kumquats in a largesaucepan. Cover with cold water.Bring to a boil. Drain immediately.Repeat twice.
- Add sugar and 2 cups water to drained kumquats in saucepan. Bring to a boil. Remove from heat immediately, and let kumquats and syrup cool completely.
- Spoon 3 kumquats and 1 tablespoon syrup into each of 12 Champagne glasses. Top off with Champagne, and garnish with tangerine wedges.

Yet another Martha Stewart Living goody. I love to get and use recipes from magazines. This one,I have not tried it just sounds so good I wanted to share it with everyone. I am diabetic and won't be able to try this one myself. I have to experiment on ya'll and, of course, family.

- 2. Add sugar and 2 C water drained kumquats in saucepan. Bring to a boil. Remove from heat immediately, and let kumquats and syrup cool completely.
- 3. Spoon 3 kumquats and 1 T syrup in each champagne glass. Top of with Champagne, and garnish with tangerine wedges.

- Place the water, sugar, kumquats and thyme in a pan and bring to the boil. Reduce the heat, simmer for approx. 5 mins., allow to cool, remove the thyme.
- Divide the kumquats and juice between the glasses just before serving, pour in the champagne. Place a sprig of thyme in each glass.
