TOASTED BEAN AND CHEESE OPEN-FACED SANDWICHES ("MOLLETES")



Toasted Bean and Cheese Open-Faced Sandwiches (

Number Of Ingredients 13

3 cups cooked pinto beans (Frijoles De La Olla, recipe follows)
2 tablespoons olive or canola oil
1 garlic clove, minced
1/2 cup chopped onion
4 bolillos or other crusty oval-shaped roll, split in 1/2 lengthwise
1 1/2 cups shredded white cheese *see Cook's Note
Serving suggestion: Pico de Gallo salsa.
3 cups dried pinto beans
4 garlic cloves, peeled and mashed
1/4 large onion
2 bay leaves
Salt and freshly ground black pepper
Mexican crema or sour cream, chopped fresh cilantro leaves, finely chopped white onion, for serving

Steps:

  • Preheat a broiler.
  • Drain the beans in a colander set over a bowl. Save the bean liquid.
  • Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until the onion is soft, about 5 minutes. Add the drained beans. Using a potato masher, mash the beans until they become a spreadable mixture, adding extra bean liquid, if needed.
  • Put the rolls on a baking sheet and broil until lightly golden, about 3 minutes. Spread each half of the rolls with about 1/2 cup of the refried beans. Top with shredded cheese. Return to the oven and broil until the cheese is melted and starting to bubble. Transfer the rolls to a serving tray and serve.
  • Combine the beans, garlic, onion, and bay leaves in a medium pot. Add enough water to reach about 1 1/2 inches over the beans. Bring to a boil over medium-high heat. Reduce the heat, cover, and simmer until the beans are tender, about 2 hours. Add more water if the beans are absorbing too much liquid. The beans should be soupy when done, with plenty of liquid remaining. Season the beans with salt and pepper, to taste.
  • Ladle the beans and cooking liquid into soup bowls and garnish with Mexican crema, cilantro and chopped white onions. Alternatively, the beans can be drained and use as a filling for soft tacos.

2 bolillo rolls sliced in half long way (see note below for other roll options)
1 Tablespoon salted butter at room temperature
½ cup refried beans
8 ounces Oaxaca cheese (or any other melting cheese (see note below))
1 cup salsa fresca

Steps:

  • Heat oven to 400 degrees.
  • Heat a large skillet over medium-high heat.
  • Spread butter over the cut side of the bolillo roll and place buttered side on hot skillet.
  • Toast roll for a couple of minutes or until it's nice and brown.
  • Remove from skillet and place rolls on a baking sheet.
  • Spread a layer of refried beans, then a layer of shredded cheese.
  • Bake bolillo rolls for about 15 minutes or until cheese is melted and it turns golden brown.
  • Remove from over and top with salsa fresca. Serve warm.

1 avocado, ripe and sliced
1 onion, sliced thinly
4 ounces green chilies (chopped or sliced)

Steps:

  • Spread bread with mayo. Cover each bread with avocado, onion, chiles, tomato, and 2 slices each of bacon. Top with cheddar. Broil until cheese is melted.

16 ounces French or Italian loaf of bread
1 lb good quality deli turkey breast or leftover turkey breast
salt and pepper, to taste
cooking spray (I prefer to use avocado oil cooking spray )
1/2 diced yellow onion
3 tbsp light butter
3 tbsp flour
2½ cups water
2 tsp chicken or vegetable stock concentrate (such as better than bouillon *see notes)

Steps:

  • Prepare the gravy by adding light butter and diced onions to a hot skillet. Cook over medium heat together until the onions are softened (about 3-4 minutes). Stir flour in and continue cooking for about 1 minutes or until the flour is golden. Slowly whisk in water followed by stock concentrate. Bring to boil and cook until thickened (about 2-3 minutes).
  • Preheat oven to 375 degrees. Slice the loaf of bread in half lengthwise and then into 3 even sections. Open it and lay it on a sheet pan for 6 "open faced faced sandwiches". Then, spray with a little cooking spray and sprinkle it with salt and pepper. Then add about 2.5 ounces of turkey to each slice of bread. Place into oven and cook for about 6-8 minutes or until turkey is warm and bread is lightly toasted.*You can also toss the turkey into the gravy before adding to the bread and then top with remaining gravy after its out of the oven. Both ways are tasty!
  • Top with gravy and serve warm. Enjoy!

2 cloves garlic

1⁄2 Tbsp olive oil
1 medium onion

1 lb sirloin
sliced into thin pieces

1⁄4 cup A.1. steak sauce
1 large tomato
cut into 4 thick slices 4 slices
low-fat Swiss or provolone cheese

Steps:

  • Preheat the oven to 450°F. Place the bread on a baking sheet and bake on an upper rack for about 5 minutes, until lightly toasted. Rub with the garlic cloves. Heat the oil in a large sauté pan over medium heat. Add the onion and cook for about 3 minutes, until translucent. Add the sirloin pieces and cook for about 7 minutes, until both the beef and onions are browned and the meat is cooked through. Season with salt and pepper, then stir in the A.1. Remove from the heat. Place a slice of tomato on top of each ciabatta half. Top with the beef mixture and then the cheese. Bake for 5 to 7 minutes, until the cheese is fully melted.

  • Halve the loaf of Italian bread horizontally from end to end like you're going to make a giant submarine sandwich. Open the bread and lay, cut side up, on a baking sheet or a piece of foil.
